In a time when we have all become so accessible and our sights are always so far down the road, it can often be difficult to find those moments of quiet and relaxation to truly be in the present. It’s those special moments however that allow us to recharge and to reflect; helping us to approach the next day with vivacity and clarity.

In creating this catalogue, our hope is that it might help you to find one of those moments where, although focusing on work, you can take a quiet moment to read and enjoy the stories and recipes of our producers and their families. The amazing thing about good food is that it can often be an experience all unto its own. And what better way to truly revel in it than with a moment of quiet, a comfortable setting and a cup of hot tea close at hand.

Christmas in our family is always full of traditions. From the selection of the perfect tree (ours is always a ‘Charlie Brown’ one), to decorating the house and setting up the outside lights, it is a time for great conversation, lots of hustle and bustle and of course, truly indulgent and wonderful food!

In talking to many of my friends and colleagues, I find that the common thread in almost all holiday traditions is consistently food. It might not be the same recipe that we all share but it is the idea of our favourite family delights, prepared by our own resident chefs, which gets most of us truly excited and anxious for the holidays to arrive.

Every year, I so look forward to putting this catalogue together as it allows me to refelect on our own family traditions and the favourite recipes that make up one of the many reasons why this time of the year is always surrounded by so much anticipation.

FRUIT DELICE /Make this winning starter at your next holiday party. It is so easy to prepare and a delicious crowd pleaser every time. Using a sharp knife, cut a cross into the top of each fig, then gently squeeze the bottom in order to open the fruit. Next, take a piece of proscuitto and carefully line the inside of the fig. Add 1 tsp of Belberry Fig and Black Pepper Delice into the centre of the proscuitto lined fig and top with your favourite crumbly and creamy blue cheese. Bake at 375 degrees for 10-12 minutes and top as desired with crushed hazelnuts or slivered almonds and a little fresh arugula for colour.

press the majority the same day and make sure any left are all pressed within 48 hours. A freshly picked apple has a great flavour and for us

it’s all about making sure that’s what we capture.A lot of other apples used to make juice are held in cold storage

until they are needed, this can be anything from a few weeks to a few months. Fruit continues to ripen once you pick it so some apple juice

makers choose to pick their fruit early so that it ripens at a slower speed in storage. This means the fruit never gets that wonderful tree

ripened flavour that we feel is so important.To maintain the special, natural qualities of our apples, once we’ve

pressed them we gently pasteurise the juice before storing in air tight containers which keep it as fresh as the day it was pressed."

CHIOSTRO DI SARONNO /A true Italian Christmas would not be complete without the special offering of the delectable Panettone.

These traditional Italian cakes grace the tables of families all over the country, and with the legend of its delicious mix of candied orange, lemon zest, raisins and its unbelieveably light and moist texture, it is now sought after around the world.

The customary way to serve Panettone is to cut it into slices veritcally and accompany it with sweet hot beverages or a sweet wine, such as Asti or Moscato d’Asti. In some regions of Italy, it is served with crema di mascarpone or homemade zabaione!

In our family, we have a morning tradition of making the most decadent french toast from our pannetone and friends of ours use it to make a holiday inspired bread pudding!

FIREWORKS /Snowy, winter weather provides the perfect back drop to a night inside. A big cozy couch, layers of blankets, favorite movies and of course, the perfect snack…popcorn.

The good people at Fireworks Popcorn have dedicated their work to sustaining and cultivating only the best and non-genetically modified corn varietals. Their careful attention to the detail of how their corn is grown makes for the perfect pop every time. The only thing that’s missing is your own uniquely created toppings!

This winter, engage family, friends and customers on social media with your own version of "Customized Corn" and encourage people to post their favorite ways to enjoy this all time classic snack food.

One of our family favorites that I used to make as a little girl was called "Mona Lisa Pizza Popcorn". We’d use Fireworks Savannah Gold Popcorn that has a big full bloom. Pop 3-4 cups and spread it out on a baking sheet. In a separate bowl, mix together tomato paste, olive oil, oregano (add chilli pepper flakes to taste if you wish!) and dollop it over the popcorn. Top with copious amounts of freshly shredded mozarella and bake at 375 degrees for 10-15 mins or until cheese is ooey and gooey!

Before his arrest, he hid the secrets of his recipes in the walls of his old shop, so that one day, they might be brought to life again. Although not known by who, those recipes were found and centuries later, the legend of the Marquis de Chocolat still lives on.

During the holidays, there are perhaps no two more loved staples than bread and cheese. What makes them come to life is the way in which we highlight and present these delicious foods. One of my favourite restaurants in London actually serves on their menu a bowl of freshly carved Parmesan cheese morsels with aged balsamic vinegar for dipping. I think this is ingenious. At the start of the 20th century, England was famous for producing the best mint in the world — the French still call peppermint menthe Anglaise, or English mint. Over the years, pressure for higher crop yields and the cost of labour brought a decline in cultivation and saw the near extinction of Black Mitcham Mint, an intensely flavoured variety considered to be of the best quality.

Summerdown's mission to reintroduce this traditional crop began in the mid-1990s as part of a trend towards authentic food created for its quality and character.

“We were sure that once people experienced the clean, intense taste of pure English mint, they would appreciate the difference. It took more than a decade to re-establish traditional Black Mitcham mint on our farm in the foothills of the Hampshire Downs. We had to relearn lost mint farming skills from America and import and adapt the latest production techniques and technologies.But it was all worth it and now, when our mint fields are in full bloom and have been harvested, the leaves are taken to our purpose-built distillery. The result is a rare single-estate peppermint oil with an intense flavour and a scent that is highly-prized.”

Cut baguette into 12 slices, each ½ inch thick. Lightly brush both sides with Belazu Premier Choix Olive Oil. Place on a large baking sheet and put in the oven to broil for 1 to 2 minutes on each side and voila! You have crostini!

Spread one side of each crostini with Sussex Valley Beetroot Horseradish Sauce. Slice pears in half and thinly slice each half.Depending on the size of your crostini, place one to two slices of pear on top and do the same with the slices of roast beef. Finish with flat leaf parsley and cracked black pepper to taste.

DTC TERMS & CONDITIONS OF SALE FOR NON PRE-BOOK ITEMS

Opening Orders: All new accounts must complete a new account form prior to the initial order being shipped.

Terms: opening Orders are shipped C.O.D. certified cheque or credit card payment at time of shipping. After two orders, terms can be established by filling out a credit application. Please contact our office or your dovetale representative to receive the proper form. We accept both Visa and Mastercard. Terms for all customers with dishonoured cheques will revert to C.O.D. certified cheque/credit card payment for a one year period.

Minimum Order: The minimum opening order is $500.00. Minimum re-order is $150.00.

Back orders: All back orders for less than $150.00 will automatically be cancelled. Orders placed for new lines pending arrival will be held until arrival of product. Customers may request a split shipment and regular freight terms will apply.

Split cases: Goods must be ordered in full cases or displays.

Shipping: Orders are shipped by Fedex for small parcels or APEX LTL for heavy or larger pallet orders. A fixed freight/handling charge of 3% of the invoice value on orders over $1000.00 will be applied to all orders shipped to the ten provinces in Canada. Tailgate charges will be applied to those customers who require the use of a tailgate and/or inside delivery. Dove Tale Collections reserves the right to select the most economical method of shipment. Full freight charges will apply to orders under $1000.00.

Damages/Discrepancies: Any issues concerning the condition of merchandise received must be reported to head office within 10 days of receipt of goods. No claims received after 10 days will be permitted.

Inventory Control: It is the responsibility of the retailer to maintain proper inventory control and to rotate product on their shelves. Credit will not be issued for goods which have passed the best before code which were received by the customer more than 3 months previous. Goods are not supplied on a sale or return basis

Shelf Life: Shelf life on products varies from 3 months to 24 months. Goods shipped will always have a minimum of 3 months shelf life unless it is a short shelf life item as listed in the catalogue. Any exceptions will be discussed with the customer prior to shipping.
