As we begin our twenty-ninth year of operation, we wish to extend a sincere thank

you for your continued business and support. The Upton Tea Quarterly was first published in

1990 and introduced as "a newsletter devoted entirely to the pleasures of tea." That first issue

contained twenty-five teas. Over the years, that number has grown and we are pleased to offer

over four hundred teas now. During that time, changes have been implemented to keep up with

technology, however, we have never changed our mission of offering the finest quality loose leaf

teas in the world, at fair prices, with a staff dedicated to providing exceptional customer service.

We are always searching for new and exciting teas to offer to our customers. In this issue

of our newsletter, we are proud to present five teas from Colombia, a tea origin that is new to us.

Colombian tea is grown in rich volcanic soil, which imparts a unique flavor to the teas that we

find very interesting and enjoyable. We hope that you will share our excitement about these new

teas and try some samples. You may find additional information about them on page 24.

As you may already know, we introduced our new website last September, providing

an updated, streamlined appearance, as well as added security and functionality for you, our

valued customer. We continue to make enhancements and upgrades to the website, based on

your valued feedback. Some of the more recent changes include adding order history to online

accounts and the functionality to initiate an order directly from that history. Additional upgrades

have provided you with the ability to store your credit card information in your online account

as well as the option to purchase an electronic gift certificate. In the upcoming months, look for

these features to be added: a Loyalty Program for our long-time customers, a quick checkout

option, and an email notification when out-of-stock teas become available to purchase.

For many years, we have kept our standard shipping charge at a low flat rate, and we

will continue to do so. We have recently added Federal Express to our list of standard shipping

carriers. If you select our standard shipping method, your package will now be shipped either

Federal Express or the U.S. Postal Service. We strive to ship your order quickly so that you will

Each scale is precisely calibrated at the factory. For those who wish to periodically calibrate their scale according to the instruction manual, we offer a 200-gram calibration weight. To test calibration, place a dime on the scale platform. A dime will weigh approx. 2.25 grams (1.00 cupwt), depending on wear and condition. DIGITAL POCKET TEA SCALEPremium teas come in a wide range of leaf styles, varying from fine CTC grades to ultra bold-leaf white teas. This tremendous range of leaf style makes measuring tea by volume imprecise. Our digital tea scale solves this problem in a unique way, by introducing a special Cupweight mode. In this mode, the scale displays the precise number of cups that a portion of tea will yield, based on the industry standard of 2.25 grams per 6-ounce cup. Note that this scale will also weigh in grams, ounces and pennyweight (dwt mode).

At Upton Tea Imports, we find it easiest to use an electric kettle to heat the water to the boiling point, then place the stem of the thermometer into the kettle between the lid and rim, and monitor the temperature until it lowers to the desired level. Caution: Let the water cool a bit before removing the lid of a kettle and use extreme caution to avoid exposure to hot steam.

Note that the steeping temperature on our packets is a recommendation only. You may find that certain teas are more suited to your palate when steeped at a higher or lower temperature. Vary the steeping temperature and length of time to achieve the desired strength and flavor profile that optimizes your enjoyment. As always, there is no substitute for experimentation.

When using this thermometer for other purposes, do not expose the dial face and plastic lens to high heat. Note that calibration may be required occasionally to make sure the boiling point matches the appropriate temperature for boiling water at your altitude. The adjustment nut at the base of the thermometer dial will rotate the dial face for simple calibration adjustments. Made in China.

For Those Who Enjoy Receiving Our Newsletter

Unlike mainstream mail-order companies, we do not flood the mail with catalogs; only four issues of the Upton Tea Quarterly are mailed each year. We only send a catalog to customers who request it and who order with some regularity, which can be as little as once every two years.

New callers who do not specify that we send only one catalog will receive approximately six catalogs over an eighteen month period. Those who place at least one order during that period will continue to receive the Quarterly.

There have been a few instances where customers have been ordering regularly and suddenly stop receiving our Quarterly, even though they prefer to continue receiving it. The simple example is where a customer has moved and not notified us of their change of address. Normally, bulk mailings do not receive forwarding service from the U.S. Post Office.

A customer who establishes a new web account will be automatically added to the mailing list for ourprinted catalog. If you prefer to not be on our mailing list, please call our Customer Service department during normal business hours (Monday-Friday, 9am-5pm EST) if you have any questions on this.

Upton Tea Imports’ Organic Certification

Upton Tea Imports is certified by Baystate Organic Certifiers as a handler and repacker of organic teas. Under the guidelines of the USDA National Organic Program (NOP), we only label teas as organic if they are NOP certified.

Packaging Options Please note that we personalize the labels on our packets of tea, unless you request that we not do so. The default name on the packet label is the ship-to recipient. Any text, up to 36 characters, may be substituted for the recipient’s name. There is no limit for personalization. Our teas are offered in sample quantities as well as a range of packet sizes and optional tin. The smallest size packet is referred to as a single packet or standard packet. In most cases we pack the standard packet with 125 grams (4.4 ounces). The gram weights in our price list are indicated in the columns to the right of the tea header as indicated below. The single packet size may also be available in a plug-top British style tea tin at $2.00 above the single packet price. Tins contain the same net weight as that listed in the column immediately to the left of the “In Tin” column. We also offer extra large (-H) packet sizes and jumbo (-K) packets in some cases. Note that packets are heat-sealed to protect freshness. Single- and double-size packets are resealable with a convenient zip-lock closure.

Weights of Most Teas Large-leaf teas are packed in smaller quantities, depending on the boldness of the leaf. Thus, a standard packet may contain 100 grams or less (refer to the headers above the price). We package teas in multiples of 2, 4 and 8 times the standard packet size. The label on the front of the packet lists the actual net weight.

Weights of Bulkier Teas Our teas are hand-packed by us in a variety of sizes. Larger packet prices reflect the savings incurred by us in labor, as well as reduced margins for large quantity purchases. Savings will vary depending on the scarcity and cost of the tea. When ordering the largest size packets, we recommend dispensing a portion of the tea into a small canister which can serve for daily use. Remember to roll the top of the larger bag tightly to remove excess air before sealing to minimize air exposure and maintain freshness. We suggest ordering only the amount of tea which will be consumed in three months.

The festival of Chingming (Qingming) is a 2,500 year old tradition in which people visit the burial sites of their ancestors to pay respect. CHINA PU-ERH TEAS Sample 125g In Tin 250g 500g 1 Kg

This tea is named after the town of Pu-Erh in Yunnan province, where it originated. It is produced from the large-leaf Yunnan variety of tea and it is made in loose-leaf form and cakes of various sizes, including compressed tuo cha (small, bowl-shaped cakes). Pu-Erh tea has a unique character due to a double fermentation (oxidation) process which imparts an earthy flavor and aroma. Those unfamiliar with this tea are urged to try a sample before buying larger quantities. Pu-Erh teas are especially appropriate for multiple infusions, and yield a flavorful cup even when using less tea than that recommended for other types of tea.

China Pu-Erh Leaf: This leaf-format Pu-Erh yields dark liquor with strong earthy notes in the traditional style. A good value for this Yunnan classic.

TEAS of SRI LANKA

Ceylon - or modern-day Sri Lanka - has one of the world’s oldest tea empires. British tea planter, James Tay-lor, introduced the first tea plantation to Ceylon in 1867, where the teas thrived in the cool, humid climate. The tea-growing regions of Sri Lanka are clustered mostly among the mountains of the island’s central

region and its southern foothills. Like the great wine-growing regions of France, the tea country of Sri Lanka is divided into seven strictly defined districts, each of which is known for producing teas of a particular character. Each district presents a unique combination of climate and terrain that leaves its mark on the tea it produces. We are pleased to offer teas from all seven districts.

The Dimbula region of Sri Lanka is located to the west of the central mountains and is defined as “high-grown” as all estates exceed an altitude of 1,300 meters. Like all districts in Ceylon, drenching monsoon rains douse the growing tea bushes, and the best teas are picked at dry periods during the first months of the year. Dimbula Ceylons exhibit characteristic Ceylon body and flavor, with a fine golden-orange hue in the cup.

The Kandy district of Sri Lanka is where the tea industry began in 1867. The teas are defined as “mid-grown” as the estates do not exceed 1,300 meters. The region yields flavory teas that are influenced by the same dry winds between monsoons that blow through Uva. The prime picking season runs from December through early spring. Kandy Ceylons provide excellent taste and a clean liquor with a coppery-toned cup.

PREMIUM DECAFFEINATED TEAS

All decaffeination processes used for tea are problematic, and remove flavor as well as caffeine. Teas flavored after decaffeination, such as Earl Grey, will be less compromised, since the added flavoring oils constitute the dominant flavor component. Even these, however, lack some of the character that tea drinkers appreciate. There is one company that is approaching this problem in a unique way. They start with grades of tea that would ordinarily be considered too good for the flavor-robbing decaffeination process. They then sort the final product to eliminate most of the smaller leaf particles that decaffeination produces. Predictably, the result is a superior final product.

The Magic of Colombian Tea

As a long-time follower of Upton Tea Imports and the tea industry,

I am honored to contribute to this issue of the Upton Tea Quarterly. This past year, a fellow tea lover based in the United Kingdom called and asked if I’d ever heard of Bitaco Colombian tea. Intrigued, I noted that not only had I never heard of Bitaco, I did not even know that tea was grown in Colombia. My friend went on to explain that this “new-old” origin, deep in the ancient mountains of Colombia, had an exceptionally colorful history going back decades. As he explained some of the background of this South American tea region, I welcomed his offer to forward samples for my review. I must explain that my “tea friend” is something of a legend within the global tea industry. Nigel Melican travels the globe constantly helping many of the world’s premier tea growing nations improve the quality of their tea. For decades, he has been walking through the fields and hills of tea plantations all over the planet, deftly recommending tactics to optimize tea quality: advanced soil conditioning, pruning tactics and post-harvest value addition techniques.

Nigel has been instrumental in the growth of Bitaco Colombian tea for many years. His first visit there was in 1988, and more recently, he led the initiative towards crafting the tea to suit an international demand for long-leaf, specialty teas. When Nigel suggests a new tea, I listen very closely.

As I awaited my “new-old” tea origin samples, I perused the documents that my friend had sent, which covered the germinal roots of this legendary region of Bitaco, Colombia. My imagination widened with every paragraph as I found myself mesmerized to discover – virtually for now - a magical place where lush tea bushes grow abundantly: the mountains of Colombia. I previously thought of coffee – not tea – when mention of the South American country arose in almost any context. I was surprised and delighted to learn that nestled within the heart of one of the planet’s most biodiverse regions resides a thriving tea estate! How had this very special place where tea has been growing for decades escape my tea-loving eyes and ears all these years? Before I share more of this splendid discovery, let me roll back the clock a bit with some vital history.

The Early, Tumultuous Days of Colombian Tea

Tea growing in Colombia began in the 1950s, when the Colombian

Department of Agriculture imported tea plants from Ceylon (Sri Lanka) to help diversify regional crops. The first trials for tea production on the Bitaco Tea Estate (located high in the west Andes Mountains near a town called Bitaco) were done jointly by two entrepreneurs, Don Joaquin and Don Alberto Llano, using an artisanal style of agriculture that generated impressive results: brilliantly lush leaf growth that produced delicious brewed tea. These humble efforts were the first Colombian loose leaf teas ever produced. They went on to plant 123 acres of Camellia sinensis during the 1960s and 1970s.

In the 1970s, a period of chaotic political violence overtook Colombia and armed invasions deeply affected the region, and eventually the entire tea company. During this intense period, Don Alberto Llano passed away and the tea operations slid into chaos. The untended tea fields fell into disarray, and the fledgling company was liquidated by the government.

After some years, the surviving family members of the tea company, led by their matriarch,

Mrs. Marichu de Llano, devised a plan to revive and take control of the company – now called Agricola Himalaya. The task was enormous, with neglected tea plants long overgrown, unpruned, and weed-choked. The soil required months of intensive regeneration to build it back to a stable nutritive level. One of the original founder’s sons, Alberto Jr., took charge of rebuilding the company, literally from the ground up. Marichu de Llano, a powerful woman, simultaneously promoted the social development of the region through fundraising to improve local education and medical care. From the temporary failures of the regional tea enterprise, a much stronger tea business arose, advancing in all directions under the leadership of Alberto Jr. for the next ten years.

During this period, Alberto Jr. implemented new tea processing styles, installed new equipment, and commercialized flavored and herbal teas. It was at this stage that Nigel first visited to help improve tea quality. The family tea business was flourishing under Alberto Jr.’s skilled guidance when Colombia once again entered a wave of internal tumult and political violence. Alberto Jr. became one of the many victims in

the crossfire of trouble. He left a very positive and legendary impact on the business, both within the local community and his grieving family. While the company mourned his passing, it was time to carry on and rebuild his management team. His mother and six sisters took control of the company and reshaped it as a memorial to their beloved Alberto Jr. During those challenging times, the family bonded together and worked hard. Now, Colombia has a unilateral peace agreement and Agricola Himalaya can focus all of its energy on producing tea.

A Special Tea Treat Arrives

The Bitaco teas arrived a few days after my conversation

with Nigel. After immersing myself for hours in the tumultuous, written history of an exotic, unknown tea region, I was full of added anticipation and lofty expectations as I brewed a large pot of Bitaco Black Tea Leafy (TSA2, found on page 24) loose leaf tea. To my delight, it was wonderfully balanced, brisk and bold as a good black tea should be, with a smooth mouth feel. My delight was heightened as the rich front notes merged with enticing back notes, which offered a subtly sweet

astringency as well as the faintest traces of caramelized sugarcane and spice. According to Nigel’s account, this sweetness is present throughout the Bitaco production process, even scenting the air at the tea processing facilities. With each sip, I found that this new tea released more of its deeper personality, its volatile aromatic essences and complex flavor nuances.

After my first trials, my simple tea meditation and musings told me that these teas would resonate with fellow tea lovers wanting more complexity and subtle nuance from their daily tea breaks. These teas enlivened and refreshed me in a gentle and friendly way.

A New Beginning – A Lush Tea Plantation High in the Andean

Mountains

For decades, Agricola Himalaya packaged fine teas that were

largely sold in tea bags, with or without flavorings. In the last five years, the company has diversified by planting new acres of tea using unique, locally selected varietals. The strategic intent is to evolve the plantation into a balanced ecospace for cultivating and processing the finest loose leaf specialty tea. The

Bitaco Tea Estate resides alongside the Bitaco Regional Forest Reserve (Reserva Forestal Protectora Regional de Bitaco), a thriving, protected rain forest.

Bitaco Colombian tea is a “high-grown” tea, cultivated at over 6,000 feet above sea level in the mist-capped Andes Mountains in Bitaco, Colombia. The region is characterized by its high level of rainfall and exceptional biodiversity. The Bitaco tea plants thrive in rich, young volcanic soil that naturally promotes lush plant growth; new tea buds and precious top leaf growth, or “flush,” is abundant daily. Being near the Equator - just south of Ecuador - results in a year-round, bountiful harvest. Except for a few weeks annually, the Bitaco tea pluckers harvest the highly desired “two leaves and a bud” from hillsides drenched in misty rain, followed by copious bright sunshine, and enlivened in all directions by every type of wildlife imaginable.

As part of this delightful “new-old” tea origin discovery, I also found it quite interesting that Bitaco tea is harvested by skilled male and female workers, not simply women, as is commonplace in many tea regions worldwide. 32 tea pluckers - 16 women and 16 men

– work together closely in teams, creating a culture of equality and integrity.

Real-World Sustainability

The pristine and sustainable environment where Colombian

teas are grown and harvested is exceptionally rich in minerals, and the tea fields are nourished by pure mountain streams. Colombia is a tropical country with consistent weather throughout the year, allowing Bitaco teams to produce teas year-round. The almost “always sunny” estate location benefits its tea plants with maximum sunshine exposure that promotes photosynthesis and higher levels of natural antioxidants.

The Bitaco Tea Estate is certified as an organic producer, with additional acreage being planted continuously – all for organic tea. The Bitaco Tea Estate and brand has established a non-profit foundation through its parent company - the Agricola Himalaya Foundation - to ensure that local workers and their families have ready access to programs focused on education, especially for children. Infusers and Strainers Tea strainers (sieves) and infusers are unnecessary if you use an infuser teapot (e.g., a Chatsford Teapot, page 6). For other teapots, we recommend allowing the tea to steep unrestricted (without infuser) and pouring the tea through a fine-mesh strainer (e.g., AS24 on page 49) after steeping. Alternately, infusers can be used to contain the leaves and allow removal of the used tea leaves. For brewing in a mug at home or at work, we recommend the Chatsford Mug Infuser, below, and the wide range of Finum® products on pages 48-50.
