Design a restaurant project
L1: Explore and researchYou have been asked by the local town planner to suggest and present an idea for a new restaurant in your
local area, Letchworth. They want something new and fresh and don’t want a repeat of “same old” restaurant
ideas.
Your first job is to find out what restaurants are already available to the customers.
Use Google maps to locate the main restaurants in the town.
Copy and paste the map onto the next blank page and annotate at least 3 of the restaurants exploring:
● The type of food it offers
● The price range
● The theme or the formality
● The star rating
Give your opinion on who you think would use that type of restaurant and why
(I have included an example of what your work should look like on the next slide)

since 2003. It is mid
price range and has a
4.5 out of 5 rating on trip
advisor. It is very
popular with parties of
people because a lot of
the dishes are sharing
plates and little dips and
bits. Dishes include
breads, dips and olives
for starters, meat and
vegetarian options for
mains and a limited but
tasty range of desserts.
They have an open
kitchen so the customer
can see the preparation
of their meals. This adds
to the experience of the
restaurant.
L2: Planning and promotion
After your initial research you have decided that you have the answer to the gap in the Letchworth
restaurant scene.

theme and have chosen to give your restaurant the name

Jim Taylor at the local newspaper, The Leader, wants to help you advertise your new business venture
and has asked you to create a paragraph promoting your business along with a set of images to help
people envisage what the restaurant will look like when completed. He specifically requests you talk
about: the theme and style, the intended clients, the price and formality and the reasons behind why
you think it will fill the gap in the market in Letchworth town centre.

about what is essential and what is
a desired element of your space.

Using the knowledge you have
gained from the video and thinking
about the theme and size of your
space, draw out your ideal
restaurant floor plan on the next
page. Think about your spacing, the
logistics and the journey of your
customers and work force.

L4 Hiring and firingThere are so many jobs that need to be done in a restaurant environment and everyone will have their specific
roles to play.

On the next page you are being asked to write the job adverts for 4
roles in your restaurant. 2 front of house and 2 back of house
The job adverts should be detailed, information and exciting to
attract applicants and need to include the following information:
● General expectations of the role
● Typical working hours or shift patterns
● Suggested average wage
● Information about uniforms
● List of previous qualifications and/or experience required

L5 Making the menu You have promoted the restaurant locally and you have lots of interest from possible customers. All
very exciting!! But what dishes are you planning and how are you serving those to your customers?
Using the attached document about service styles consider which would be best for your restaurant and why?

On the next slide write a menu for your customers. Remember that not every bodies needs are the same
therefore ensure a varied and true to theme menu. Make sure you have something on the menu suitable for the
following individuals.
A vegetarian A vegan A dessert for a diabetic
A dessert for a lactose intolerant Something for a coeliac
Extension task - make one of the dishes on your menu - take a photo and display your work proudly
L6 Health and hygiene
As you come closer to opening night it is important that all your health regulations are up to date and being
followed. You have 5 new members of kitchen staff and 2 college apprentices who will need supervision and
training.
