Almond Roca

2 cups butter2 cups brown sugar8 1-oz. chocolate squares1/4 cup water2 Tbsp. light corn syrup2 cups slivered almonds

Melt butter in saucepan over low heat. Add sugar and stir constantly. Add water and corn syrup, cooking over low heat until hard crack stage. Stir frequently, remove from heat. Stir in 1 1/2 cup almonds. Chop remaining almonds. Pour into pan. Melt chocolate and cool. Pour a thin layer over base. Sprinkle half the nuts and then chocolate. Repeat ‘til done. Store in fridge.Cheese Ball

1 (8 oz.) cream cheese, softened1 cup grated cheddar cheese1 small onion, minced (or green onion)1 garlic clove, crushed1 tsp. soya sauceVegetable seasoning or seasoning saltAlmonds, whole or chopped

Mix up all ingredients and roll into a ball or a yule log. You can either roll the ball in the chopped nuts or push almonds into the ball. Place on a plate and chill until ready to serve (1-2 hours).Place on a plate and place assorted crack-ers around cheeseball. Scoop mixture onto crackers.

Garlic Mashed Potatoes

2 lbs. potatoes, peeled and diced6 Tbsp. butter3/4 cup half & half cream1 head garlic cloves, peeled and mashedSalt and pepper to taste

Boil potatoes until fork-tender. Drain and set aside. Return empty pan to stove, melt butter and set aside. In a separate pan, bring half & half to a boil and remove im-mediately. Do not allow to curdle. Mash potatoes, beating in butter, half & half, garlic, salt and pepper, until smooth and � uffy.

Curry Shrimp Puffs

Puffs:1/2 cup butter

1 cup boiling water

1/2 tsp. salt

1 cup � our

4 eggsPreheat oven to 325º.

Put boiling water in saucepan and add butter

to melt, turn to low, add � our and salt stirring

vigorously with a wooden spoon until mixture

forms a ball. Remove from heat, add eggs one

at a time, beating well after each addition. Drop

by rounded teaspoon onto cookie sheet. Bake

20-25 minutes ‘til golden brown on top (do not

overcook). Cool.

Filling:Mix together 12 ounces fresh shrimp

1/4 cup chopped white onion

1/2 cup mayonnaise

1/2 to 1 tsp. curry powder to taste

Fill puffs. Heat puffs for 7 to 10 minutes at 325º.

Easy Peanut Butter Chocolate Fudge

1 12-oz. pkg. Peanut butter chips1 14-oz. can Eagle Brand milk1/4 cup butter1/2 cup chopped peanuts (op-tional)1 6-oz. pkg. semi-sweet chocolate chips

In large saucepan, melt peanut butter chips, 1 cup sweetened condensed milk and 2 Tbsp. but-ter. Stir occasionally. Remove from heat. Stir in peanuts. Spread mixture into waxed paper lined 8” square pan. In small saucepan, melt chocolate and remaining condensed milk and butter. Spread chocolate mixture on top of pea-nut butter mixture. Chill 2 hours. Turn fudge on cutting board. Peel off paper and cut into squares. Tightly cover any leftovers.o

The Christmas Roasted chestnuts

1 pound chestnuts

1/4 cup butter

salt to taste

1 pinch ground cinnamon

Directions

Preheat oven to 375 degrees F.

Cut a 1/2 inch crisscross on the � at side of

each nut. Be sure to cut through the shell

to prevent the nut from exploding.

Place the nuts in a shallow baking pan and

bake for 25 to 30 minutes.

Allow to cool and peel off the shell.

Place nuts in a skillet with butter and

saute over high heat until the butter is

melted and the chestnuts are well coated.

Place skillet in oven and roast until they

are golden on top. Sprinkle with salt and

cinnamon.

1/2 to 1 cup shredded cheddar cheese

(aged)1 1/2 tsp. milk

1 cup � our

dash of pepper

dash of cayenne pepper

In bowl, cream together butter and

cheese mix in � our, then milk, and

shape into ball. Roll out dough to 1/8”

thick on � oured board. Cut into 1”

rounds or squares. Put onto greased

baking sheets. Prick each cookie twice.

Bake at 350ºF for 10 to 12 minutes.

Honey-Dijon Glazed Baby Carrots

1 pkg. frozen baby carrots

3 Tbsp. honey

3 Tbsp. mustard

Boil carrots, drain and set aside. Combine

honey and mustard and heat until bubbly.

Coat carrots evenly with sauce and cook for

1 minute.

Cranberry-Chip Cookies

1/2 cup (125 mL) sugar1/2 cup (125 mL) vegetable shortening2 eggs1 tsp. (5 mL) vanilla1 cup (250 mL) all-purpose � our1 cup (250 mL) uncooked quick-cooking oats1 tsp. (5 mL) baking powder1 cup (250 mL) vanilla baking chips1/2 cup (125 mL) dried cranberries1/2 cup (125 mL) � aked coconut

Heat oven to 350ºF (180ºC). In large mix-ing bowl, combine sugar, shortening, eggs and vanilla. Beat at medium speed of electric mixer until light and � uffy. Add � our, oats and baking powder. Beat at low speed until soft dough forms. Stir in chips, cranberries and coconut.

Drop dough by heaping teaspoons 2 inches (5 cm) apart onto ungreased cookie sheets. Bake for 9 to 11 minutes, or until set. Cool completely before storing.

Miniature Eggnog

Coffee Cakes

1 1/2 cups sugar

1/2 cup soft butter

2 eggs3 cups � our

1 tbsp baking powder

2 cups eggnog

1 cup chopped mixed fruit and peels

1 1/2 cups icing sugar

1/4 tsp ground nutmeg

1/4 tsp. cinnamon

cherries cut in 1/2 for garnish

In a mixing bowl cream butter and

sugar. Beat in eggs. Stir together � our

and baking powder then stir in creamed

mixture alternately with the two cups of

eggnog. Fold in fruits and peels. Place in

cupcake cups. Fill 2/3rd full. Bake in 325

degree oven for 30 minutes. Cool on wire

rack.

In mixing bowl combine icing sugar,

nutmeg and cinnamon. Stir in enough

eggnog to make a drizzle. Drizzle frost-

ing over cooled cupcakes. Top with

cherry halves.

Brunch Egg Bake

3 Cups shredded cheddar cheese3 cups shredded mozzarella cheese1 can drained sliced mushrooms1/3 cup sliced green onions1/2 medium red bell pepper chopped1/2 medium green bell pepper chopped1/4 cup melted butter1/2 pound ham sliced julienne strips1/2 cup � our1 3/4 cups milk2 tbsps chopped parsley8 beaten eggs

In a large bowl combine chees-es. Sprinkle half the cheese into ungreased 9” x 13” pan. In a skillet cook mushrooms, green onions, pep-pers in the 1/4 cub butter until onions and peppers are tender. Arrange veg-etables over cheese then arrange ham strips over vegetables. Sprinkle remain-ing cheese over ham.

Lightly spoon � our into measuring cup then into large bowl. Blend � our, milk, parsley and eggs. Pour over lay-ers in baking dish. Bake at 325 degrees for 35 to 45 minutes. Let stand 10 minutes. Cut into squares.

Makes a good Christmas Brunch.
