Taste the difference Homemade bread from freshly ground organic wheat and rye. Step 1: Making sourdough Mix two tablespoons of rye flour with two tablespoons of water in an air sealable jar. Add a tablespoon of flour and water each day until it starts to bubble. Step 2: Mix 750g rye flour and 250g wheat flour in a large mixing bowl. Mix 1 1/2 tablespoons of salt into the sourdough and add to the flour. Add 5 cups of water to the mixture and mix until a porridge-like consistency. Cover the bowl with a lid or plate and let rise for 6-12 hours. Step 3: Remove 3-4 tablespoons of bread mixture to replenish the sourdough. Add 450g of coarse rye flour, (or a mixture of rye and seeds, eg. Sunflower, linseed, pumpkin) 1/2 cup of stout/dark ale, a tablespoon of dark brown sugar, and a cup of water. Mix thoroughly with a wooden spoon and pour contents into two non-stick loaf tins. Why bother grinding grain?

Did you know:

That the most nutritious part of grain is the germ, which is taken out of plain white flour. Flour that we buy in the supermarket therefore requires flour forticants by law, and often other artificial additives.

That most of the nutrients in wholemeal flour are lost after a week of being milled.

Why else should I bother?

Taste the difference! Freshly ground flour is not only more nutritious, it also tastes great. There’s nothing like the smell of freshly baked bread wafting through your kitchen, and setting a fresh loaf on the table.

Making bread yourself is good for our personal wellbeing. Many find its natural rhythm therapeutic.

It will save you money! While a grain mill costs about £300, the cumulative costs are lower over the longer-term than buying loaves in the supermarket. You can also strike a deal with someone you know who has a grain mill!

Step 1: Fill 600ml lukewarm water to a measuring bowel and add 2 tablespoons of olive oil, 1 tablespoon of salt, and 2 teaspoons of dry yeast. Mix together with an egg whisk. Add 300g of plain wheat flour to the bowl and mix thoroughly. Add more flour if necessary, but aim for a cake-mixture consistency. Cover the bowl with a lid or plate and let sit for 6-12 hours.

Step 2: Empty half the mixture into a mixing bowl and add 500g freshly ground wheat and work the dough by hand until thick and sticky. Empty contents into a non-stick loaf tin and let rise for 4-8 hours.

Repeat the same for the remaining mixture.

Step 3: Place in a pre-heated oven for 45 minutes at 180oC.

Why is organic better? 100% Wheat The food industry is structured more towards profit-making than our health. While Food Safety Standards exist, there is a difference between foods that will harm us and foods that are healthy. Choosing organic food is a choice for healthier food.

Non-organic farmers spray their crops with chemicals to control pests and diseases, and to enhance growth. But not only do they infect and harm biodiversity and natural ecosystems, they remain on the food we buy, and cannot entirely be rinsed away. There is significant evidence that the ingestion of chemical toxins, absorbed in non-organic food is related to illnesses like cancer , obesity, and heart disease.

The grain is not genetically modified. Many food scientists are opposed to GM foods in the light of mixed evidence regarding their safety.
