DIRECTIONS:1. Forthecustard:Inasmallsaucepan,combine1/2cupsugar,5tablespoonsflourandapinchofsalt.Stirinmilk,alittleatatime,until
smooth.Bringtoaboilovermediumheat,stirringconstantly.Boil60seconds,thenpourasmallamountofhotliquidintothe2eggyolks,andstir.Thenreturnnowheatedeggyolkstosaucepanandstir,overheat,untilmixturestartstobubbleagain.Removefromheat,addvanilla.Coverandchillinrefrigerator.

Forthepastry:Inamediumsaucepan,combineshorteningandwaterandbringtoaboil.Sifttogether1cupflourandapinchofsaltandpourallatonceintoboilingmixture.Stirvigorouslyuntilmixtureformsaball.Removefromheat,andaddeggs,oneatatime,stirringvigorouslyaftereachaddition.Dropbyspoonfulsontobakingsheet,orpipeintodesiredshape.
4. Bake10minutesinthepreheatedoven,thenreduceheatto400degreesF(200degreesC)andbake25minutesmore,oruntilgolden.Coolcompletely,split,fillwithcustard,andreplacetops.
