Easy, No-Bake Bird’s Nest Cookie Recipe Ingredients: - 1 ½ cups of chocolate chips - 1 ½ cups of butterscotch chips - 1 ½ cups of chow mein noodle crackers or stick pretzels - 36 Mini Eggs Instructions: 1. Place the milk chocolate chips and butterscotch chips in a large bowl. Microwave in 30-second increments (so as not to burn) until melted. Stir until smooth. 2. Add the chow mein noodles to the bowl and toss until coated in the chocolate mixture. 3. Spoon 2 tablespoons of the cookie mixture onto a piece of parchment and shape into a nest; top with 3 candy eggs. Repeat the process with the remaining cookie mixture and eggs. 4. Let nests set until firm, then serve. Makes 12 cookies.

Carrot Cake Roll withCream Cheese Icing

Ingredients:

FOR THE CAKE-3 eggs2/3 cup granulated sugar1 teaspoon vanilla extract1/2 teaspoon salt1 teaspoon baking powder1 teaspoon ginger1/4 teaspoon nutmeg2 teaspoons cinnamon3/4 cup flour2 cups shredded carrots about 2 medium carrotsPowdered sugar to aid in rolling

FOR THE FILLING-6 ounces cream cheese room temperature4 tablespoons butter room temperature2 cups powdered sugar1 teaspoon vanilla extractPowdered sugar for dusting

You will also need:A 10x15 jelly roll pan*, tinfoil, non-stick cooking spray and a cleankitchen towel.

1. Preheat oven to 350°F. Line a jelly roll (10x15”) pan with foiland spray with cooking spray and sprinkle lightly withflour.

2. Beat eggs at high speed for 5 minutes, until frothy anddark yellow. Beat in sugar and vanilla extract.

3. Whisk together salt, baking powder, ginger, nutmeg,cinnamon, and flour. Stir into wet ingredients just untilblended. Stir in carrots.

4. Spread in prepared pan. Batter will be in a very thin layerand you will need to use a wooden spoon or spatula tospread it to all the corners of the pan. Bake for 9-11minutes. Ovens vary greatly. It can take up to 15 minutesto get this completely done. Err on the side over overdone vs. under done for best results in rolling.

5. While the cake is baking, set a clean kitchen towel out ona large work surface. Sprinkle liberally with powderedsugar (about ¼ cup). As soon as the cake comes out of theoven, turn it over on the kitchen towel sprinkled withpowdered sugar. Remove foil carefully.

6. Working at the short end, fold the edge of the towel overthe cake. Roll tightly, rolling up the cake into the towel. Letcool completely while rolled, at least one hour.

7. While the cake is cooling, make the frosting. Beat thebutter and cream cheese together until smooth. Beat inpowdered sugar and vanilla.

8. When cake is cool, carefully unroll the towel. Spread thefilling on the cake evenly, and re-roll tightly. Chill until itfirms up a bit, at least thirty minutes to one hour. Dustwith powdered sugar,then slice and serve. Cake can bewrapped in plastic and frozen for up to one month
