Special Fried Rice Ingredients : 3 large eggs Salt and freshly ground pepper Vegetable oil for frying 4 boneless, skinless chicken breast halves, cut into thin strips 1 teaspoon sesame oil* 1 large onion, finely chopped 2 garlic cloves, finely minced 4 cups cold, cooked rice 6 green (spring) onions, thinly sliced 2 tablespoons soy sauce Additional sliced green onions for garnish Steps : 1. Beat eggs with salt and pepper to taste. Heat very little oil in a frying pan and make an omelette with half the beaten eggs. Turn on to a plate to cool (do not fold omelette). Repeat process with remaining beaten eggs. Place one omelette on top of the other, fold and coarsely chop. Set aside. 2. In a medium bowl, toss chicken strips with the sesame oil; salt and pepper to taste. 3. Heat 3 tablespoons vegetable oil over high heat in large frying pan or wok and stir-fry the prepared chicken strips until lightly golden, about 2 to 3 minutes. Add the onion and garlic and stir-fry for 1 to 2 minutes or until onion has softened. Add 2 tablespoons more vegetable oil and when hot, stir in the cooked rice and green onions, tossing and mixing thoroughly until very hot. Sprinkle with soy sauce and mix evenly. Remove from heat and stir in diced cooked egg. If desired, garnish with additional sliced green onions. 1 2 3

Special Fried Noodle

Ingredients :

1 pound pork tenderloin, cut into stir-fry strips1 teaspoon vegetable oil1 (16-ounce) package frozen Oriental vegetable combination2 (3 1/2-ounce) packages ramen noodles, broken into pieces*1 1/2 cups water3 tablespoons soy sauce1 1/2 teaspoons dark Oriental sesame oil1 tablespoon toasted sesame seeds, if desired

Steps :

1. Heat oil over medium-high heat in large nonstick skillet. Add pork; stir-fry about 5 minutes or until pork is lightly browned.

2. Add remaining ingredients except sesame seeds. Heat to boiling. Reduce heat. Simmer 4 to 5 minutes, stirring occasionally, until noodles are completely softened and vegetables are crisp-tender.

3. Sprinkle with sesame seeds, if desired, before serving.

Fried Tofu

Ingredients

1 (16-ounce) tub firm or extra-firm tofu2 tablespoons olive oil1 large onion, quartered and thinly sliced

Steps :

1. Cut the tofu into 1/2-inch-thick slices. Blot well between clean tea-towels or severallayers of paper towel, then cut into 1/2-inch dice.

2. Heat half of the oil in a stir-fry pan or wide skillet. Add the tofu and stir-fry over medium-high heat until golden on most sides. Remove to a plate. Serve with fried onion

Quick Fried Fish

Ingredients:

2 boneless, skinless fish filets (such as cod, trout, etc)salt to taste1/2 cup all-purpose white flour2 tablespoons vegetable oil for frying

Steps :

1. Cut fish file into 3 or 4 pieces, sprinkle with salt, if desired.2. Put flour into small bowl. Place one piece of fish into flour. Flip over to coat fish with flour all over. Carefully lift fish with your fingers or fork and shake off excess flour. Place floured piece of fish onto plate. Flour the remaining pieces of fish.3. Pour 2 tablespoons olive oil into large skillet and heat over medium heat until oil is hot but not smoky. Add fish pieces. Make sure that fish pieces don't touch each other Saute over medium heat for about 4 to 5 minutes, or until golden and crisp on bottom. Flip over with spatula.Take fish out and place onto serving plate. Serve immediately

Onion Soup

ingredients:

3 medium onions1/4 cup extra virgin olive oil3 cups canned low-salt chicken broth1 tsp salt or to taste6 slices French baguette or Ciabatta bread4 oz. Cheddar or Gruyere cheese

Steps :1. Cut both onion ends off and discard. Peel papery skin off and discard. Cut onion

in half, lengthwise. Cut each half into several rough strips, lengthwise.2. Pour olive oil into medium skillet. Add onions. Separate onions into single

chunks. Sauté over medium-low heat until onions are tender and brownish, 15-20 minutes. In a pot, bring broth to a boil. Add onions. Add salt. Cook for 10 minutes.

3. Meanwhile, preheat oven to 400 degrees F. Cut cheese into 6 thin slicesPlace bread slices onto ungreased baking tray or cookie sheet. Top bread with cheese slices, one cheese slice per one slice of bread. Bake for 5 minutes or until cheese melts. Turn heat off and keep cheese toasts in oven to keep them warm. Pour onion soup into serving bowls. Top with 1 or 2 cheese toasts and serve immediately.
