Concession Cleaning Rules

ALWAYS leave the concession cleaner than you found it. It is governed by the HEALTH DEPARTMENT and we are periodically reviewed. This is a privilege to have your group operate this concession. It is used by several different groups throughout the school year, so please follow all rules and regulations for its use. Violation could result in not being able to have your group operate the concession. There is a check off list which should be done at the end of each concession. This will help to see that all areas and equipment are properly cleaned. Remember - the concession must be cleaned before leaving.

Cleaning Supplies

Each group is responsible for supplying their own cleaning supplies. They will NOT be supplied by the School. Suggested supplies to purchase are:

SOS Pads

Dish Soap

Paper Towels

Dish Towels

Disinfecting Wipes for counters

Equipment CleaningRoaster: Needs thoroughly cleaned both inside and out. SOS Pads work well along with dish soap. The lid also needs to be cleaned on both sides. The handles and sides get greasy as well, so please wipe these down.

Pop Corn Machine: This machine needs to be thoroughly wiped out both inside and out with paper towel and vinegar water - Spray bottle is under the sink. The grease from the machine leaves a residue, and only the vinegar water works. Do NOT use other chemicals to clean. There is a tray underneath the machine and it needs dumped occasionally during use, then cleaned with soap and water, then with vinegar/water.

Equipment CleaningCheese Machine -Bag: This is an expensive piece of equipment which has an electrical board underneath. Be sure you know how to change and load bags of cheese before doing so - If not done properly, bag can split or lid can come off - allowing cheese to go EVERYWHERE, especially on the electrical board. This will ruin the machine. All parts needs wiped off with either clorox mixture or disinfecting wipes.

PUMP: All parts need washed thoroughly with dish soap and sos pad. There are many parts to this pump along with the tub - After washing, this needs rinsed and pump completely emptied out. Water CANNOT be left in tub or pump; it sours and can collect bacteria.

Required AttireLong Hair MUST be pulled back in a pony.

Hair net (provided) MUST be worn for those preparing or serving food.

Gloves (provided) MUST be worn for those preparing or serving food. These need changed often, anytime you touch non food apparatus or leave the concession.

Aprons (provided) MUST be worn by ALL. They need to be taken off each time the worker leaves the concession.

NO jewelry - as it can contain bacteria or other pathogens.

ALL workers MUST be wearing Clean Clothes/Shoes, and MUST wash hands regularly.

HygieneHands should be scrubbed 10 to 15 seconds. Clean under fingernails and between fingers. Always wash hands before putting on gloves.

ONLY those with gloves should prepare and serve food.

Hands should be washed several times throughout the shift.

Hands should be washed every time the worker leaves and returns to the concession and always before putting on gloves.

NO ONE should be working the concession if they are sick.

Food, Drinks or Cell PhonesThis is a place of business where FOOD is prepared and served.

No Eating inside the Concession.

Drinks should be kept in back room or refrigerator.

Chewing Gum or Candy is ALSO considered food. Saliva contains pathogens that can cause a foodborne illness.

These rules are Strictly enforced.

Workers should refrain from using their cell phones, as this is a distraction.

Pop CountIt is your responsibility to count pop before your concession begins. You ALWAYS want to start with a full count.

At the end of your shift, you need to count again then FILL to specs. Be sure the machine is filled to allow the pop to cool for the next event.

Turn in your pop count to Anita as soon as possible so that her records can be kept straight.

If there is not enough of a certain product, please fill what you can and let Anita know so that Pepsi can fill prior to the next game.

Closing procedures may take place during the 4th quarter.

Posted menu and prices must be adhered to by all groups. No outside prepared food can be brought in to sell including sandwiches or baked goods.

Any items broken or lost during your concession will be your responsibility to pay for replacement.

Do not remove any items from the concession stands at any time - including roasters, coffee pots, cheese dispensers.

Required ContractCONCESSION STAND CONTRACT

____________________________ will be selling concessions from the concession stand at Connors Stadium / CCDHS Gymnasium lobby (circle one) on ________________________(date/season). Rules to be followed during usage are:1. During usage, a ServSafe certified person must be present at all times.

2. An adult must be present to oversee the workers at all times.

3. ServSafe procedures must be used at all times. This includes the wearing of aprons, hair nets, and gloves for all persons handling food (including popcorn) that is prepared in the concession stand.

4. The Concession Stand must be left in a clean condition at the end of each shift. Refer to the checkoff list which must be signed off on and turned in to the office after each shift.

5. Connors Stadium concession workers also must clean the trash in the bleachers and the field area immediately following the game.

6. Accurate soda/Gatorade/water count must be taken. This includes taking an inventory / counting the beginning soda as well as the ending soda. This soda count must be turned in by the day following your event. If the inventory is low on any items, please inform Dominick Vergara or Anita Murnin. All receipts must be turned in directly after your event.

7. During tournaments, both windows of the gym lobby concession stand must be fully open and available to customers from the time the gates open (1 hour before the first game of the session) until near the end of the final game of the session. To start closing procedures, one window may be closed during the 4th quarter of the last game.

Required Contract - continued8. If any concession stand items are broken or lost during this time period, the group using the concession stand will be responsible for paying for the replacement of said item(s). Please note any and all maintenance issues or broken items on the cleaning checkoff list.

9. A minimum of 6 people will be on duty at all times during regular events. A minimum of 8 people will be on duty at all times during tournaments. If you are unable to have 8 group members (minimum) or their parents signed up to work Prior to the event (all shifts), other arrangements must be made to fill the spots. This might include recruiting people from other groups to help your group with an arrangement made for compensation to the group. The list of workers must be turned in to Mr. Vergara or Mrs. Murnin 2 days in advance of the event.

10. Menu and Prices have been set and are on display in the concession - these must be adhered to.

11. On completion of your time selling concessions, all personal items and inventory must be stored or removed.

12. Failure to comply with these guidelines will forfeit your usage of the stand for the following year.

Tournament ConcessionDuring Tournaments, BOTH windows must be opened to serve the public.

Concession must be open 1 hour prior to the start of the first game. Closure can start during the 4th quarter of the last game of the session.

A minimum of 8 people MUST be in the concession at all times. You may need to recruit parents/friends to fill your requirement. A worker list must be turned in to Mr. Vergara or Anita 2 days in advance of the tournament.

At the completion of the tournament, all inventory and personal items must be stored or removed.
