GUAM BREWERY TAP HOUSE OPENS IN TUMON

Six world-class craft beer flavors unveiled by award-winning head brewer

(March 7, 2019 – Tumon, Guam) – The Guam Brewery Tap House (The Tap

House), Guam’s innovative craft beer and pub concept, officially tapped its first

keg this month in Tumon Bay.

The Tap House serves specialty brews designed by award-winning Head

Brewer, Mike Converse. The Tap House unveiled six of its proprietary recipes –

Guam Gold Cream Ale, Tumon Bay Hoppy Blond, Old Hagåtña Honey Rye,

Island IPA, Mansanita Amber Ale, and Paseo Porter – and previewed its first

freshly brewed small batch of the Paseo Porter during a soft opening this month

for friends, family and trade partners. All recipes have been awarded the Guam

Product Seal.

“The Tap House is proud to bring delicious and fresh craft beer to Guam that

infuses unique flavors that anyone can enjoy,” said Mike Converse, The Tap

House’s award-winning head brewer. “I invite craft beer drinkers and enthusiasts

to order a flight with our six specially designed recipes and discover their favorite

flavors. Every few weeks, I’ll be introducing a new recipe that will be freshly

brewed in-house and available in small batches.”

Converse in a nationally recognized and passionate head brewer, who has won

numerous awards for his craft beer recipes. Converse learned the art of brewing

from a true Brewmaster revered in the craft beer world as a master of the craft.

Converse added, “We’ve been testing recipes for more than a year to perfect the

flavors that will resonate with the tastes of local beer enthusiasts. You don’t have

to be a beer connoisseur to enjoy our craft brews. We use the best ingredients,

mostly locally sourced, that will appeal to the connoisseur, but we brew for the

masses. I look forward to meeting Guam’s craft community and talking about

flavors that they enjoy.”

The Tap House also offers an extensive menu of tapas, handcrafted burgers,

sandwiches and sides, all made with the finest ingredients and infused with beers

produced by the Guam Brewery. The dishes were designed to pair well with the

Guam Brewery’s craft beers or to be enjoyed at any time.

MEET OUR TEAM

Phillip Bamba is an accountant by day and one of the owners of The Guam

Brewery Tap House and a well-known musician at night. Of his many creative

outlets, most residents know Phillip as the guitarist of the local award-winning rock

band, Pop Rocks & Soda. His most recent project is managing Paradise Live

Guam, which focuses on fashion and lifestyle photography and promotional events,

such as the Miss Universe Guam Pageant. Phillip is one of the creative minds

behind The Guam Brewery Tap House brand. With more than 10 years of

restaurant experience, Phillip is an ideal spokesperson for the Tap House

experience.

Earvin Jose is the Regional Brand Manager for Island Beverage Distributors, the

official distributor for the Guam Brewery Beer and one of our brand ambassadors.

He started in the Beer Beverage Industry almost four years ago when he was hired

at Mid Pac as a Brand Ambassador. His success for gaining brand share through

disruptive and innovative marketing activities earned him a step up to manage a

major national brand’s portfolio in Guam, Micronesia and American Samoa.

Earv’s strength is introducing new brands to the islands and has contributed to the

recent growth of the craft beer movement in the islands. Through his role, he has

traveled to many markets and met passionate brewers who have contributed to his

passion for craft brews. He has hosted many notable executives on Guam, his

favorite being Blue Moon Brewing Co. Founder and Brew Master, Keith Villa.

Most of us know Earv as a local and college basketball standout who has held

positions on Guam’s Men’s National Basketball Team. His extensive basketball

travels have allowed his palate to enjoy distinctive brews from all over the world --

Thailand, Fiji, Hong Kong, The Philippines, China, Panama city Panama, and New

Zealand.

Mark Stotts’ family history in Guam dates back 50 years when his parents, who

were school teachers, moved their family to the island in 1969. Mark grew up in

Guam and built his career through Guam and Hawaii’s food and beverage scene for

more than three decades. In Guam, Mark managed Jeff’s Pirates Cove, ran

Barney’s Beach House for 10 years in the 80s, and managed operations for Sam

Choy’s Restaurant and Chuck’s Steakhouse. As a seasoned restauranteur, Mark is

excited to offer customers a new concept that he knows they will love – original

food and beer recipes that can’t be found anywhere else. He takes great

satisfaction in extending Guam’s Håfa Adai spirit to each of his guests. His service

philosophy is to welcome each person as if he was entertaining them into his home.

Mark and his Tap House team know they’ve created an experience that everyone

will enjoy.

Jared Preuc grew up with the flavors of Guam and Hawaii on his mind and palate.

After graduating from Father Duenas Memorial High School, Jared headed to the

Gros Bonnet Culinary Academy in Hawaii where his passion for food turned into a

lifelong passion. Jared honed his culinary skills by working his way up in well-

known kitchens in Hawaii, such as Sam Choy’s and Gordon Bierch, then in Guam

at Niu Fusion, Papa’s, Katre and Shoreline. Jared knows what islanders love to eat,

and he enjoys presenting local flavors and traditional dishes in contemporary ways

and using the best local ingredients. He will even surprise you with how he’s

perfectly infused dishes with the Guam Brewery beers! Customers will be stopping

in for Guam’s freshest craft beer and will stay for Chef Jared’s craft dishes.

IT STARTS WITH SIMPLE, FRESH, & QUALITY INGREDIENTS Grains for each style of beer are carefully selected for quality and flavor profiles. The grains are then crushed into grist and mixed with filtered water to extract the sugars from the grains. The grist is boiled in a mash tun tank to undergo mash conversion, the process that transforms the grains’ starch into sugars using the natural enzymes present in the grains. The process produces a sweet liquid called wort. THE WORT HAS YET TO COME The wort is separated from the grain particles and husks and is pumped into the brew kettle where it undergoes a controlled boil while hops are added. The wort is separated to remove any remaining grain particles, then it is pumped into fermenter tanks where yeast is added to begin the fermentation process. As the wort ferments, it turns into beer, which is allowed to mature over time to develop and achieve its full flavor profile. A SPARKLING FINISH The matured beer is carbonated to give the beverage its sparkle. The carbonated beer is stored in temperature-controlled brite tanks to continue to mature, clarify, and carbonate until it is ready to serve. All our craft beers are brewed cold, and all our small batch recipes are brewed freshly at the Guam Brewer Tap House with a new recipe introduced every few weeks.
