The food industry continually seeks innovative technologies and approaches to improve both
food production and processing methods.
Cold plasma proving to be hottest new food safety treatment. Cold Plasma Technology is a novel, non thermal food processing technology that uses energetic and reactive gases to inactivate contaminating microbes in food products ( E.g.. meat, poultry, etc.,)

WHAT IS PLASMA?
Plasma is a fourth state of matter. Man made plasma produced by plasma torches using electricity as a heating source and air as ionized gas.
WHAT IS PLASMA GASIFICATION ?
Plasma gasification is a process which converts organic matter into synthetic gas, electricity, and slag using plasma. A plasma torch powered by an electric arc, is used to ionize gas and catalyze organic matter into synthetic gas and solid waste (slag).

COLD PLASMA TECHNOLOGY
Cold plasma can be used for decontamination of products where micro-organisms are externally located. Unlike light (e.g. ultraviolet light decontamination), plasma flows around objects which means ―shadow effects do not occur ensuring all parts of a product are treated.
For products such as cut vegetables and fresh meat, there is no mild surface decontamination technology available currently; cold plasma could be used for this purpose.
Cold plasma could also be used to disinfect surfaces before packaging or included as part of the packaging process.
Energy consumption would be similar to existing UV-C systems and the treatment of foods would be highly cost-effective; the electronics and lifetime of plasma technologies are comparable to UV-C systems even with the additional need for a carrier gas
Cold plasma is attracting a lot of attention from the food industry.
Described as a “purple blow torch” by food safety scientists, cold plasma treatment can kill 99.9 percent of norovirus on blueberries without damaging the delicate fruit, giving a food safety boost to the so-called superfood.

Relies on gas discharge technology – an effective, economical, environmentally safe method for critical
cleaning.
The resulting surface is ultra-clean/sterilised. The plasma activated atoms and ions cause molecular
„sandblasting‟ and can break down organic contaminants.
Cold plasma can be used for decontamination of products where micro-organisms are externally
located.
Unlike light ( UV decontamination), plasma flows around objects, which means „Shadows Effects‟ do
not occur ensuring all parts of a product are treated.

for 30s of plasma treatment, and a third was exposed for 120 seconds.
The bacterial kill zone was progressively higher with longer
plasma exposure
MECHANISM OF MICROBIAL INACTIVATION BY COLD PLASMA
COLD PLASMA TECHNOLOGY IN FOODS
Plasma has no effect on the color, taste, appearance or materials contained in agricultural products, and only the outer shell makes these products completely free of any bacteria. With just a few seconds, the plasma can do all of these activities without the slightest negative effect, and it's like a magic

APPLICATIONS
DISINFECTION OF PACKAGING MATERIALS
Cold plasma can be used to inactivate vegetative micro-organisms and spores on packaging materials.
Especially for temperature sensitive products, this can have a clear advantage compared to heat treatments.
Plasma can also reduce the amount of water used for disinfection of packaging materials.
As cold plasma is a gas, irregularly shaped packages such as bottles can be effectively treated, contrary to technologies such as UV or pulsed light where shadowing occurs.
COLD PLASMA TECHNOLOGY
DISINFECTION OF FOOD PRODUCTS
Micro-organisms are located at the surface of a food product, cold plasmas can be used for inactivation of both vegetative cells and spores.
Treatment is done at low temperature, the effects on food quality and appearance of the product are minimal.

COLD PLASMA USED TO KILL BACTERIA ON RAW CHICKEN
Common pathogen – Unprocessed meat – 70% Salmonella Plasma Torch - Applied for 180s, Plasma eliminated or subsequently
reduced low levels of bacteria from both skinless chicken and chicken skin itself.

BACTERIA‐FREE EGGS WITH PLASMA TECHNOLOGY
Plasma is used as a method for killing Salmonella on egg shells Maximum reduction of 2.2–2.5 and 4.5 log CFU/eggshell in Salmonella
enteritidis levels following a 90 min of treatment at 35 and 65% RH respectively
Salmonella typhimurium, with an overall reduction of 3.5 log CFU/eggshell, after 90-min treatment.
“By using plasma treatment, we have succeeded in removing 99.5 per cent of all bacteria on the egg shell but because this is a gentle method, the egg yolk and white are unaffected."

Treating with plasma for 15 min can achieve 2.72, 1.76 and 0.94 log reductions of S. Typhimurium on lettuce, strawberry and potato
respectively
The efficiency of microbial inactivation depends upon the surface of treating produce, plasma device, gas composition, and mode of
exposure
Produces like potatoes, strawberries took more time for complete destruction of microbes due to grooves and uneven surfaces

Decrease in total mesophilic count was 12–85 %, yeast and mould count by
44– 95 % in cold plasma treated strawberries
RAW MILK
Treated for destruction of E. coli using low temperature plasma by Gurol et al. They observed 54 % reduction of E.coli after the treatment of 3 min.
Nuts (pea nuts, hazel nuts and pistachio)
Application of air plasma and SF6 on nuts (pea nuts, hazel nuts and
pistachio) found that 50 % reduction in total aflatoxins using air plasma and 20
% reduction using SF6
Germination rate of safflower seeds
Suitable for surface modification of seeds due to high ion energy particles causing etching of seed coat leading to increase in germination rate of seeds
by 50 % after the treatment

Cold plasma is used in decontamination of packing material externally where chance of shadow effect is negligible as plasma flows all round the surface
Low temperature gas plasma sterilization allows fast and safe sterilization of packaging materials such as plastic bottles, lids and films without adversely affecting the
properties of the material or leaving any residues. Cold plasma can be used for sterilization of heat sensitive packing materials like polythene ethylene and
polycarbonate as the temperature is low
Surfaces of polymers particularly for edible packaging films nature of surface should be more hydrophobic with lower surface energies

There is an urgent need for regulation of safety of foods by effectively sanitizing without compromising food quality.
This has led to an increased interest in cold plasma processing for meat, poultry, and dairy products.
Cold Plasma is now being investigated for application to foods as a sanitizing and/or conditioning step.
The atmospheric cold plasma, by far, is one of the newest technologies used in food industry for microbial inactivation.
CONCLUSION
Cold plasma is an emerging non-thermal technology that offers the advantage of being chemical- and water-free, in addition to being able to operate openly and continuously at atmospheric pressure
