Cold Milk Skimming

» For the production of raw milk cheeses no pasteurization is per-formed, so cold milk skimming is necessary to standardize the fat content.

» For the production of high quality products – i.e. low heat milk powder - cold milk skimming is applied to avoid double heat-ing.

» A significant energy saving will be achieved if double heating is avoided.

» The main markets for cold milk skimming are Australia, New Zealand, Mexico and USA.

» Typically temperatures are bet-ween 4°C and 8°C, but in general terms anything below 20°C is regarded as cold milk separation.

In some cases milk is skimmed at low temperatures

» Milk viscosity higher at low temperatures, reduced separation velocity of fat globules

» Cream viscosity much higher at low temperatures, with risk of internal blockage of bowl

» Max. cream fat limited to 42%

» Cold milk skimming separators designed as hermetic machines, supply from below allows central cream discharge with big cross sections

» Cold milk skimming has higher demand of clarifying surface, equivalent machines handle smaller capacities than for hot milk skimming

» Skimming efficiency very dependent on temperature and capacity, with values of 0.08% to 0.4%

» Most milk fat fractions crystal-lized at low temperatures, fat globules much more fragile and sensitive to shearing stress
