Frosted Orange Pie From Taste of Home
Prep time: 4 hours 5 minutes |Yield: 6-8 servings
3/4 cup sugar
1/2 cup all-purpose flour
1/4 teaspoon salt
1 1/4 cups water
2 egg yolks, lightly beaten
2 to 3 tablespoons grated orange peel
1/2 teaspoon grated lemon peel
1/2 cup orange juice
2 tablespoons lemon juice
1 pastry shell (9 inches), baked Frosting:
1/2 cup sugar
2 egg whites
2 tablespoons water
1/8 teaspoon cream of tartar
1/8 teaspoon salt
1/2 cup flaked coconut, toasted, optional
In a saucepan, combine sugar, flour and salt; gradually add water. Cook and stir over medium-high heat for 2-3 minutes or until thickened and bubbly. Remove from heat. Gradually stir 1/2 cup into egg yolks; return all to pan. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat; stir in orange and lemon peel. Gently stir in juices. Pour in to pastry shell. Cool on a wire rack for 1 hour. Chill at least 3 hours. In a heavy saucepan or double boiler, combine sugar, egg whites, water, cream of tartar and salt. With a portable mixer, beat on low speed for 1 minute. Continue beating on low over low heat until frosting reaches 160o, about 8-10 minute. With a stand mixer, beat on high until frosting forms stiff peaks, about 7 minutes. Spread over chilled pie. Just before serving, sprinkle with coconut. Store in the refrigerator.
Keep building… “‘I have the right to do anything,’ you say - but not everything is ben-eficial. ‘I have the right to do anything’- but not everything is con-structive. No one should seek their own good, but the good of oth-ers.” – 1 Corinthians 10:23-24 It’s hard to believe, but half the year has come and gone. Many of the plans that we made at the beginning of the year have come to fruition, are about to begin…or maybe we have just realized that we forgot about those plans and now have to get busy. No matter the status of those plans, time is running out. This year, like so many before, just keeps passing by. Another observation for this year, even more than in the past, is that our nation continues to travel the wide path of deception. Generally speaking, we are not focused on servanthood, selflessness, and love for our neighbors. No, now the focus is on serving self, selfishness, and love for self. This continued path of deception has taken the focus away from Christ and onto self. While, the freedom Christ has given us allows us to “do anything,” not everything is beneficial for the kingdom of God. Unfortunately, many of us read the first part of the above verse and think, “freedom…great…let’s go!” However, we must read the entire sentence, not to mention the second sentence, which states the same exact thing. Truly, I believe this is the same mistake that our society is making on a daily basis. We have been given a tremendous amount of freedom from our ancestors. We have taken that freedom to mean that we can do anything we want instead of doing those things that are beneficial for our country. Our freedoms have been misused for our own good instead for the good of others…serving self, demonstrating selfishness, and loving only self. Unfortunately, the words that Paul was writing to the church in Corinth are true for our country and the church today, lest we change. Just as Paul was warning the church, telling them to change their ways, we have an opportunity to change the ways of churches and those around us today. We can be the shining light in a dark world today. We can be servants, demonstrate selflessness, and love others through our daily work, outreach during our Independence Day Celebration on July 1st, and our Mission Trip to Hooks on July 25-29th. While you have the freedom to do anything you want, make sure what you do builds the kingdom of God! I have named a few, but there are many more…keep building. In His Service, Bro. Grant
