We are famous for the quality and range of our living Micro Greens. With some 46 varieties available, all are grown in 9cm pots, with some in 14cm x 34cm mega trays. Each 9cm pot variety comes individually sleeved so everyone can identify the variety.

RECIPES
Crispy Skin King Salmon with savoury whipped cream, pickled sea purslane and vegetables
MethodPrepare the King salmon, take the skin off lay flat and pat dry with paper towel. Season well with salt flakes and pepper and place between 2 sheets of baking paper, then sandwich between 2 thin baking trays. Place in a preheated oven at 180°C until super crispy and golden. Set aside.
Place the King salmon fillets on a cutting board or baking sheet. Season both sides generously with salt and pepper.In a small saucepan add all the pickling ingredients and bring to the boil over high heat, simmer for 1-2 minutes. Place the radish, carrot and shallots in a heatproof bowl and pour over some of the pickling mixture. In another bowl, add the sea purslane and pour over the remaining pickling mixture, allow both to steep for 20 minutes, longer if time allows. Drain before serving.Put the cream in a mixing bowl and beat with a whisk until just barely thickened. Add ¼ teaspoon salt, some freshly ground pepper, the mustard, the cayenne and the lemon zest. Beat again until soft peaks form, but don’t let the cream get too stiff, finally fold in the chives. Taste and adjust seasoning.Put butter in a large skillet over medium-high heat. When butter begins to foam, add the King salmon portions and reduce heat slightly. Cook gently on one side for about 3 minutes, then flip and cook 1-2 minutes more. Turn off heat and let rest for 2 minutes. Salmon should be cooked through but moist. Be careful not to overcook.
PlatingTo serve, arrange the pickled vegetables on each plate, top with the pickled sea purslane then place a portion of King salmon on top, add a dollop of savoury whipped cream on each fillet and top with the crispy skin. Garnish with toasted pine nuts and micro herbs (if desired).
Ingredients4 King Salmon portions (250g each) Murray river salt flakesBlack pepper2 tbsp Butter Savoury whipped cream½ cup heavy cream2 tsp Dijon mustardpinch of Cayenne½ tsp Lemon zest1 tbsp Chives, finely chopped
Vegetables100g Sea purslane1 carrot, thin ribbons2 golden shallots, thin wedges2 radishes, thinly slicedPickling mixture¾ cup rice wine vinegar¾ cup water1/3 cup mirin1 tsp juniper berries1 tsp pink peppercorns½ tsp fennel seeds1 tbsp salt½ tsp sugar
Garnish4 tbsp toasted pine nutsFresh micro herbs (chervil, coriander etc)

RECIPES
Steamed Barramundi Belly Roll with warrigal greens, shiitake, ginger and scallop sauce
MethodSeason belly with salt and pepper.
Add warrigal greens and shiitake mushroom strips on fish belly. Roll fish belly skin side up and secure with toothpicks.
Mix light soy sauce and Shaoxing wine, spoon mixture over fish belly.
Add ginger strands on top. Steam fish belly for 6-7 mins.
Add scallop sauce, sugar and pepper to fish stock, bring to boil and reduce.
PlatingTo serve, pour sauce onto a deep plate, remove toothpicks and place fish roll on top of sauce, garnish with extra ginger and micro herbs.
Ingredients4 Barramundi belly, strips (skin on)Pinch Salt and Pepper100g Warrigal greens, (sliced into strips)150g Shiitake Mushroom (strips)1 tbsp Light Soy Sauce1 tbsp Shaoxing Wine20g Ginger strands
For sauce
200ml Fish Stock150ml Scallop Sauce2 tsp Sugar1/2 - 1 tsp white Pepper
