We’re JAQK Cellars. We’re a wine company with a slightly different take on things. In addition to being dedicated to making great wine, we’re also passionate about some thing else: play. For us, play includes the excitement of testing our luck—and tempting fate—at games of chance. It also includes getting together with friends and enjoying each other’s company. And a bottle (or two) of great wine can be quite helpful in that regard. So, go ahead. Invite a few friends over, uncork a bottle of JAQK Cellars, and play a little. CHARMED 2015 CALIFORNIA PINOT NOIR ROSÉ VINEYARDS Planted on benchlands and sandy, well-drained sites in Monterey County, our vineyards dip in and out of the fog line during the ripening season. Farmed using traditional sustainable practices, our Charmed vineyards grow small-clustered Pinot Noir grapes on the gentle slopes of the Santa Lucia mountain range. Because we control the winemaking process from vineyard block to bottle, we are able to showcase the Monterey AVA in this bottle. VINTAGE In 2015 the yields were down, berries were small but that meant lots of wonderful color and flavor for our Charmed rose. No heat spikes, no damaging storms and a quiet frost season allowed the fruit to ripen fully and be picked at the ideal point balancing ripe fruit flavors and acidity. WINEMAKING The grapes were hand-picked at night and early morning to retain freshness and acidity. We 100% destemmed at the winery and then moved the berries into temperature-controlled stainless steel tanks overnight….because we knew we would be draining off the pink saignée juice the next day. When the color was perfect we drained the juice from the skins and then commenced a cold, slow stainless steel fermentation, preserving the delicate aromas and fresh mouthwatering flavors in the final wine. Nothing else was needed to finish off this delectable single-variety rosé of Pinot Noir. WINEMAKER’S TASTING NOTES How does a Pinot Noir grape become this rose-colored elixir of sunny guava and fresh crushed strawberry? It’s almost magical how fresh grape juice transforms itself into a juicy glassful of shimmering pink essence of Pinot Noir. Making rosé is a treat for us here at Charmed- it’s something we love to serve at home with a variety of cuisine, from appetizers to main dishes.
