Characteristics and Classification of Foodservice Operations

A. Commercial Foodservice- foodservice operations that compete in a freemarket and are open to all customers.

1. Stand-Alone Restaurants- restaurants which literally “stand alone”, meaning apart from other hospitality establishments. It is the largest, most common and best known category. Stand-alone restaurants come in different sizes and price ranges, other cuisines and have different service systems and configuration.

a.) Quickservice- are also known as fast food restaurants. Timing of the service defines this category, along with instant production for the customer. Sub-segments within this category includes:

Traditional- quick service and high traffic locations characterize traditional fast food outlets. Restaurants in this segment offer a standard menu with limited and inexpensive choices that attempt to satisfy a broad audience. Example: Taco Bell was founded by Glen Bell who first opened a hot dog stand called Bell’s Drive-In in San Bernardino, California in 1946 when he was 23 years old. Six years later, he sold the stand and opened a new one two years later, this time selling tacos under the name of Taco-Tia. Over the next few years Bell owned and operated a number of restaurants in southern California including four called El Taco. Bell sold the El Tacos to his partner and built the first Taco Bell in Downey in 1962. In 1962, he sold Taco-Tia. Kermit Becky, a former Los Angeles police officer, bought the first Taco Bell franchise from Glen Bell in 1964 (with a little encouragement from another L.A. police officer Joseph Charles Zeller), and located it in Torrance. The company grew rapidly, and by 1967, the 100th restaurant opened at 400 South Brookhurst inAnaheim. In 1970, Taco Bell went public with 325 restaurants. In 1978, PepsiCo purchased Taco Bell from Glen Bell.

Quick comfort- inexpensive, nutritious, “home-cooked” family meals in a fast-service fashion.

Double-drive through- based on a limited menu and service, reduced development and operational costs, and cheaper products. This segment has no indoor setting.

Example: Baliwag -The Lechon

Manok craze swept the nation in the

1980’s. It was practically impossible for

the ordinary citizen to leave his home

and arrive at any destination without

seeing at least two competing lechon

manok kiosks in the streets. During this

time, Dwight and Dolores Salcedo were

busy trying out small new ventures

simply to “earn a little bit more income

to make ends meet.” Aside from their

regular day jobs, the couple also ventured into renting out Betamax tapes and got

involved with the bus transportation business. However, due to the political and

economic crises in the country at that time, achieving even that humble goal of making

ends meet proved to be a challenge. So in November of 1985, with two little babies just

born and willing to try any new thing out, the couple pooled P5000 from their savings

and borrowed another P5000 from their parents to put up their own lechon manok kiosk

at Project 8, Quezon City, very close to where they lived then. Without any MBAs which

are common amongst entrepreneurs today, they went about with the business in their own

unique ways.

b. ) Cafeteria- characterized by customer self-service. Patrons move along a line where a server plates a wide variety of hot and cold food which are already pre-packaged and drinks are self-service.

c.) Buffet and Smorgasbord- characterized by “all-you-can-eat” for a fixed price.

d.) Theme- characterized by a special theme that incorporates the design, menu and service of the restaurant.

Example: Marton Theme Restaurant, in Kaohsiung, Taiwan

We are a group of “muckrakers” following our dreams. It all started when one of us was reading the manga, Dr. Slump on the toilet – and the rest is history. In the beginning, we mainly sold ice cream – a big pile of chocolate ice cream sold in containers shaped like a squat toilet. This humorous spin became a great success.After much planning from all of our partners, we finally took the first step towards realizing our dreams in May 2004 with the launch of the “Marton Restaurant”. The restaurant immediately caused a stir in Taiwan with its humorous “out-there” design. At the start, many people peered in at the restaurant trying to figure out what we were selling – then had a big smile on their face when they finally worked it out. By continuing to come up with great ideas and making improvements on old ones, we have expanded over the past few years from just ice cream into a fully-fledged theme restaurant with stores all over Taiwan. Our stores have also won the support of devoted fans as well.

e.) Ethnic- reflect a specific international cuisine. Many are owned by families of a specific cultural heritage, while some are chain-operated or franchised.

Example: Cabalen Restaurant is a casual

and amiable restaurant of molave wood tables

and chairs and folk songs playing in the

background, Cabalen serves up

traditional Filipino entrees heavy on

influences from the Campanga region

of Central Luzon.

Typical dishes

include bopiz (kidney), Gatang Kohol (snails

in coconut milk), Ensalata Ampalaya (a bitter

vegetable with garlic and ginger), and laing (a root vegetable in coconut milk. There’s also

choices of pork, beef, and fish stews, as well as Chinese influenced

fried Lumpia, Pinakbet (noodles), and Adobos (traditional barbeque). Finish off with some local

ice cream or one of the rice-based puddings (yam, corn, or plain milk), or the fried banana.

f.) Bars and Taverns- Bars offer light food menu and an extensive alcoholic and non-alcoholic bar lists and are open from mid-afternoon to after midnight. Bars can have a theme.

g.) Luxury or Upscale- mostly independent establishments serving expensive to very expensive gourmet food and wines with impeccable service. Each restaurant often profiles the notoriety of the owner, chef or owner/chef.

Example: Paris Croissant in South Korea

h.) Family- prevailing customer base are families. Most offer moderately priced food, table service, large seating capacity and are either chain-operated or franchised.

Example: Max’s Restaurant

In 1945, after World War II, American

troops stationed in Quezon City became

friends with Maximo Gimenez, a teacher

who had graduated from Stanford

University. Some soldiers came to his

nearby house for a drink or two, until they

insisted that they pay for their drinks.

Gimenez decided to open a café which

served chicken, steak, and drinks. He was joined by his wife Mercedes, sister-in-law Felipa

Serrano Sanvictores, his niece Ruby who managed the kitchen, and her husband Claro. Ruby's

fried chicken proved popular with G.I.s. and locals also began patronising the establishment.

Encouraged by her mother to expand the menu and serve more Filipino food, Ruby set up the

Baclaran branch along Roxas Boulevard inParañaque. They decided to name

the restaurant "Max's" after Maximo. Max's Restaurant bills itself as "The house that fried

chicken built". In 1998 it started franchising

i.) Diner- a traditionally American restaurant reflective of the 1950’s in terms of décor and menu.

Example: Rosie’s Diner- Rosie’s history can be dated back to 1946 when it started out as The Silver Dollar Diner in Little Ferry, New Jersey.  A fixture on the east coast, The Silver Dollar Diner was chosen to be featured in a series of classic Bounty television commercials featuring Nancy Walker as Rosie the waitress.  In honor of the advertisements, The Silver Dollar Diner was renamed Rosie’s Diner in the 1970’s.  Rosie’s Dinner, a 1946 Paramount Deluxe Dining Car, remained in New Jersey until 1991 when Jerry Berta purchased the diner.  Complementing Jerry’s existing 1947 Jerry O’Mahoney Dining Car, which served as an art gallery, Rosie’s Diner was moved to Michigan and opened for business on July 5th, 1991.  Within five years, Rosie’s was proud to announce that it had served over one million customers. 

j.) Specialty- menu revolves around a particular category of menu items or specialty. Can be either dependent restaurants or chain. Price range from moderate to expensive.

Example: Red Ribbon Bakeshop is a

popular fast-food chain and bakery in

the Philippines and the United States,

offering a wide range of cakes and pastries.

The chain began in the Philippines in 1979

in Quezon City along Timog Avenue and

started franchising in 1999. In 1984, they

opened their first US branch in West Covina, California. Today, there are more than 200

branches all over the Philippines, and there are now 32 stores all over California, two in  Las

Vegas, two inNew Jersey (Jersey City and Bergenfield), one in metro Phoenix,[1],one in New

York and one in Virginia Beach, Virginia.[2] Other expansion plans continue to be worked out.[3]

In 2005, Red Ribbon was acquired by Jollibee Foods Corporation, a conglomerate of popular

fast-food chains in the Philippines

k.) Delicatessen- establishments serving over the counter, made to order sandwiches and a wide selection of meats and cheeses.

Example: Olivino- is a delicatessen shop designed by Pierluigi Piu complementary to theOlivomare Restaurant, with which it shares the appealing aubergine colored shopfront.The shop is limited within 40 square meters room facing the public, were a staircase protected by a full height frame-less glazed partition leads to the storage located in the basement.The perimetrical wall, adjacent to the staircase, is entirely covered by a cladding finished with a double layer of thick opaque laminated plastic on which has been engraved a decorative patterns of variously oriented bottles and glasses.

On the opposite side a system of overhanging shelves allows to set off the pre-packed goods displayed on them, while not lasting food is shown in a custom made refrigerated counter which features a lower section, an upper glazed showcase and a working top made out of a thick solid wood board. l.) Specialty Coffee- chain operated, franchised or independent establishments offering a variety of coffee beans, an extensive menu of hot and cold drinks and a limited selection of pastries and sandwiches.

Example: The Figaro Coffee Company

was established in 1993 by a group of

seven friends who had travelled around the

world, sampling many coffee varieties.

Wanting to share the fine art of coffee

culture they had discovered in Europe, their

hobby of brewing, tasting and

experimenting with different varieties of

coffee soon grew into a business.

In November 1993, the first Figaro Coffee

Store opened in one of Makati’s premiere malls. It was only a small kiosk. Since then, the chain

has expanded to over 50 coffee shops around the country, as well as in China and the Middle

East.

m.) Ice Cream Parlor- specialty outlets offering multiple varieties of ice creams, frozen yogurt, specialty cakes, shakes, etc.

n.) Chain- owned and operated or franchised by international chains. Chain operations range from fast food and family style dining to coffee bars and pizza places and thus can be found in all of the categories above.

Example: Pancake House

Pancake House was originally established in 1970 by Milagros Basa, Leticia Zamora and Carmen Zaragosa to introduce pancakes and waffles to the Philippine

market. Back then, Pancake House had grown to 22 branches before being sold to a group of investors led by Martin Lorenzo in February 2000. Pancake House, Inc. was subsequently incorporated in March 2000 and was principally engaged in the development, operation and franchising of a casual dining chain of restaurants under the trade name "Pancake House". Since the acquisition, Pancake House expanded to 79 outlets at the end of 2009.

B. FOODSERVICE WITHIN A LODGING PROPERTY

1. Dining Rooms- can range from upscale to family dining rooms and tend to be correlated to the size and level of service that the lodging property provides.

Example: Champagne Room, Manila Hotel

2. Room Service- breakfast, lunch, dinner and snack menus that are provided in guestrooms, offered by many luxury and full-serviced hotels.

3. Lounge/Bar- where guests can enjoy light food, coffee, tea an assortment of desserts, an extensive, beverage list and sometimes, live entertainment.

4. Banquet and Catering – responsible for providing food and other amenities for functions held within or outside the hotel.

5. Minibar- a variety of beverages and snacks placed inside the guestrooms. Prices tend to be very much higher than the actual retail price of these items.

6. Carts and Convenience store- quickservice food stations located in

a lodging facility offering breakfast items, lunch items and a variety of pre-packaged foods.

7. Vending Machines- provide convenient pre-packaged food and drink items. Money is placed directly into the machine that dispenses them.

8.Stand Alone Restaurants that lease space-

areas within the hotel leased to national chains and local operations.

Example: Mrs. Fields in Manila Pavilion Hotel

9. Employee Cafeteria- free food and beverage items for hotel employees.

Example: Tagpuan, Manila Pavilion Hotel

C. Catering- involves preparing food for special event. Different catering segments are defined by their service delivery system.

1. Special Occasion- important local and foreign events fall under this category. Catering for events such as these require strategic planning, comprehensive delivery system, trained and professional staff of food managers and dietary experts, international operational ability to provide a wide range of food types and menus.

a.) On-premise- on-premise caterers own and manage their own facilities. The customer rents or leases the caterers facilities and services. Facilities include a large dining hall and/or similar function rooms and kitchen.

b. ) Off-premise- caterers own and manage kitchen facilities, but do not serve food on their premises.

c.) Airline- provides different set meals to airline passengers.

d.) Mobile- catering for constructions, movie productions and other outdoor events.

e.) Wholesale- a food preparation company that provides cooked and prepared food for catering companies and other organizations.

Accommodation- a small caterer who prepares and cooks food at the clients premises.

g.) Concession- contract food companies servicing stadiums, arenas, airports, racetracks, and the like.

D. Clubs- clubs that offer food to the members of the organization and their guests.

1. Country Clubs- upscale dining options for members and their family and guests. The members pays a yearly fee to join the club, as well as for the meals they eat there.

a.) City Clubs- revolve around a particular membership such as business or college association. Facilities includes guestrooms and recreational areas.

Example: UP Bahay ng Alumni

The Ang Bahay ng Alumni, a joint project of

the University of the Philippines and the UP

Alumni Association was launched on June 19,

1992. It was envisioned to be a Convention

Center with a 2,000-capacity. It is a timely

addition to the campus facilities, Quezon City

having no convention center as large as the Ang Bahay.

b.) Fraternal Club- male membership clubs having their own building, which offers on-premise dining for the members.

Example: YMCA Manila

E. Within other establishments-foodservices associated with other establishments are offered as a amenity. The primary purpose of the customers trip is for the establishment itself and not the foodservice.

1. Food courts in malls- has a main area surrounded by many fastfood and sandwich outlets. It is usually separated from the stores in the mall.

Example: SM Foodcourt

2. Department and Retail Stores- dining options within the department or retail itself.

Example: Café Via Mare in a department store

3. Travel plazas and Truck stops- a place where drivers can refuel their vehicles, rest, etc. maps and visitor assistance can also be found here.

4. Convenience store- pre-packaged snacks, cold and hot drinks, served inside the mini mart.

Example: 7 Eleven

F. Special “Entertainment” Concepts- entertainment concepts associated with restaurants.

1. Dinner Theater-combines the enjoyment of a restaurant with a play or a musical.

2. Visible Kitchen- open kitchens wherein the customers can see how the food is being prepared and where they can even talk to the chef.

1. Ergonomic Car Features Help Drivers with PainGuest Author - Marji Hajic

As we age, our reaction time to a visual stimulus, visual acuity, muscle strength and motion typically decline. Arthritis, stroke, diabetes and other processes may compound the normal aging process. With the large number of baby boomers heading for retirement, the number of Americans aged 55-74 is projected to nearly double by 2030. Smart product designers have started adding perks to their merchandise that allow the elderly to live independently for longer periods of time.  The Automobile Club of Southern California (AAA.com) recently published a list of senior-friendly features that are helping the aging enjoy the independence that driving brings (Westways; Blueprint for Safety: These Automotive Features Help Oder Drivers Stay Safe and Comfortable Behind the Wheel; September 2008). However, not only the elderly can benefit from these additions. Those suffering from a disability or even pain from repetitive strain injuries such as carpal tunnel syndrome, tendinitis, or thoracic outlet syndrome should look for these features that reduce the stress of driving.

For example, those who have arthritic hands, loss of coordination, painful, or stiff fingers should look for a four-door model car since less strength is required to open and close the doors than two-door models with longer and heavier doors. It is also easier and requires less strength to use a thick steering wheel, a keyless entry and keyless ignition on the dashboard, power mirrors and seats, and larger dashboard controls with buttons. Those with limited or painful motion in the back, neck, shoulder and arm should look for a car model with tilt and telescoping steering wheels, large and wide-angle mirrors, comfortable heated seats with lumbar supports, and adjustable easy to use seat belts.

Example: The McDonald's concept was introduced in San Bernardino, California by Dick and Mac McDonald of Manchester, New Hampshire. It was modified and expanded by their business partner, Ray Kroc, of Oak Park, Illinois, who later bought out the business interests of the McDonald brothers in the concept and went on

to found McDonald's Corporation.

Brown, Jr., who had also owned Kentucky Fried Chicken from 1964 to 1971. The

menu was originally centered on wood-fired rotisserie  chicken. After closing almost all of its U.S. operations, Kenny Rogers Roasters now operates primarily in Asia. Kenny Rogers Roasters is a chicken restaurant that was founded by country musician Kenny Rogers and former Kentucky governorJohn Y. Brown, Jr., who had also owned Kentucky Fried Chicken from 1964 to 1971. The menu was originally centered on wood-fired rotisserie  chicken. After closing almost all of its U.S. operations, Kenny Rogers Roasters now operates primarily in Asia.

Example: The flagship store of Andok's was

located at Baler Street corner West

Avenue, Quezon City. To date, the business has

over 300 outlets nationwide. Two Cebu branches

were opened in 2002, one in Mabolo and another

in Mactan. Within two years, eleven outlets were

operating in the province.

In September 2004, Andok's opened its first dine-in

store in D'Mall in the island of Boracay, Aklan.

Five more stores were put up on the island. Toward the end of 2005, Andok's opened two more

dine-in stores on the island of Panay.

The first dine-in outlet in Metro Manila opened in Market! Market!, Taguig. In 2006, two

branches in Baguio City were converted into dine-in stores. The company now has more than 60

dine-in stores all over Metro Manila.

Example: Goldilocks Bakeshop is

a bakeshop industry in the Philippines which

produces and distribute Philippine cakes and pastry.

The chain was named after Goldilocks, a character

from the fairy tale Goldilocks and the Three Bears.

Goldilocks was first opened in 1966 as a family

business and started in a one-door apartmentof a two-

story structure on Pasong Tamo Street, Makati City.

It has established 192 branches throughout the

islands.

Example: ‘Nyotaimori’ in Japanese literally means ‘female body plate’, and this restaurant named after the tradition of eating sushi and sashimi off a nude woman’s body takes the concept to a whole new level. An edible body, with dough ‘skin’ and sauce ‘blood’ is wheeled into the room on a hospital gurney and placed upon a table. The hostess begins the meal by cutting into the body with a scalpel and then patrons dig in, operating on the body to reveal edible ‘organs’.

e.) Ethnic- reflect a specific international cuisine. Many are owned by families of a specific cultural heritage, while some are chain-operated or franchised.

Example: Italiannis Restaurant- Originally a concept started by Carlson Restaurants, the parent company of TGI Friday’s, Italianni’s Restaurant was envisioned as being an affordable place to enjoy great Italian food in a family friendly setting, with a focus on homemade recipes prepared from scratch. Carlson Restaurants grew this concept, opening multiple Italianni’s across the United States, as well as internationally in Mexico, Columbia, the Phillipines, and Korea. While the original location in Hurst

always did well with it’s loyal following, Carlson made the decision at the turn of the millennium to sell off the US locations, and the Russell Family purchased the original location in Hurst in 2002. f.) Bars and Taverns- Bars offer light food menu and an extensive alcoholic and non-alcoholic bar lists and are open from mid-afternoon to after midnight. Bars can have a theme.

g.) Luxury or Upscale- mostly independent establishments serving expensive to very expensive gourmet food and wines with impeccable service. Each restaurant often profiles the notoriety of the owner, chef or owner/chef.

Example: Don Henrico’s-Don Hen, as it’s more popularly known, traces its beginnings from the kitchen of its founder in Baguio almost two decades ago. He has the talent and passion for coming up with new flavors by mixing sauces, so it was a natural decision for him to open up an Italian restaurant that showcases his talents. He opened up his first branch along Session Road in Baguio in 1993, hoping to create something that would click with the university students in the city. And click it did. n.) Chain- owned and operated or franchised by international chains. Chain operations range from fast food and family style dining to coffee bars and pizza places and thus can be found in all of the categories above.

Example: Burger King- The predecessor to what is now the international fast food restaurant chain Burger King was founded in 1953 in Jacksonville, Florida, as Insta-Burger King. Inspired by the McDonald brothers' original store location in San Bernardino, California, the founders and owners, Keith J. Kramer and his wife's uncle Matthew Burns, began searching for a concept to open a new restaurant around. After purchasing the rights to two pieces of equipment called "Insta" machines, the two opened their first stores around a cooking device known as the Insta-Broiler. The Insta-Broiler oven proved so successful at cooking burgers, they required all of their franchises to carry the device. After the original company began to falter in 1959, it was purchased by its Miami, Florida, franchisees James McLamore and David R. Edgerton. The two initiated a corporate restructuring of the chain; the first step was to rename the company Burger King.
