Chapter 2: Introduction to the Project/Background information
2.1 Identification of Project and Project Proponent:
Microbrew Bistro Pvt. Ltd is proposing a 30 KLD malt based distillery plant in the
State of Uttarakhand. The project is coming up at Village Mahuakheraganj, tehsil
Kashipur, and district Udham Singh Nagar, state Uttarakhand. The total investment for
the project is estimated as Rs 195 Crores.
PROJECT PROPONENT
Microbrew Bistro Private Limited is a private company. Mr. Anil Kejriwal, Director of
the company brings onboard over 35 years of entrepreneurial experience that has spanned a
range of industries and countries and was recently honoured by his alma mater, IIT Kanpur, as
one of the 50 most outstanding alumnus in its history.

2.2 Nature of the Project
The project in consideration is a proposed distillery unit. The proposal involves
production of 30 KLD malt spirit. The proposed activity is listed at Item 5 (g) of
schedule of Gazette Notification dated Sep 14th, 2006 and subsequent amendments
{Distilleries (All Cane juice/non-molasses based distilleries <60 KLD)}.

2.3 Need for the Project
Due to abundant availability of raw materials used in the malt based distilleries there has
been a huge demand for malt spirit for the fast growing IMFL Industries and for
blending in Foreign Liquor outside India which has been a multifold surge in demand.
Due to substantial deficiency in supply of FMS and potentiality of the national &
international market M/s. Microbrew Bistro Pvt. Ltd proposes a distillery unit for the
production of malt spirit.
In India, the emerging middle class population in India is expected to grow from 120
million to 600 million (45% of total) by 2025. Both the affluent and the middle class
income groups are expected to account for more than 80% of national consumption by
2025. The expected growth in spirits is growing to more than 3 times their current
value.
2.4 Demand and Supply Gap
As per the increase in population demand in the market for alcohol always prevail.
There is a huge gap in our country in demand and supply as far as the malt based raw
material in the production of alcohol is concerned. There are three main uses of ethanol
in India. Of the total available ethanol, the maximum- about 45% is used to produce
potable liquor, about 40% is used in the alcohol based chemical industry (as a solvent in
synthesis of other organic chemicals) and the rest is used for blending with petrol and
other purposes. The demand for ethanol has been continually increasing on account of
the growth of user industries and use of ethanol as a fuel in the country. However, the
production and availability of ethanol has largely lagged behind. India is the fourth
largest producer of ethanol in the world after Brazil, the United States of America
(USA) and China.
2.5 Imports versus Indigenous Production
Indian producers are not able to meet present alcohol demand. Approx 5-7% of total
demand of alcohol is being imported from other countries. As far as malt spirit
production is concerned, Indian market play a vital role at both domestic &
international level. In this context, there is major requirement of indigenous grain
based alcohol production to reduce the import load and save the revenue.

2.6 Export Possibility
None
2.7 Domestic/Export Market
Marketing will be done at the local level as well as the finished goods will be supplied
to the regulated and non-regulated domestic market.
2.8 Employment Generation
Due to the proposed project employment will be increased. The unit will hire local
people to the extent possible. Approx 230 persons will be employed. The project will
also increase indirect employment opportunities to several ancillary service providers.

Manufacturing Process
Malting: Malt is made primarily from barley. The grain is cleaned, then moisture is added
in steeping tanks. This is followed by germination of the grain in a controlled environment.
When germination reaches accurate levels the grain is called green malt. Green malt is dried
in Kilning vessels, the end product is known as malt.
Milling: The objective of milling is to crush malt to produce grist. Very small particles
would be ideal for filtration, to pack together to provide a semi permeable bed so that wort

Promoter : Microbrew Bistro Pvt. Ltd.
Microbrew Bistro Pvt. Ltd.
runs off slowly and incompletely. The fineness of grinding therefore depends on the type of
wort recovery equipment being used. For this task we intend to use a simple roller mill
comprising two pairs of contra-rotating rolls.
Mashing: The traditional mashing equipment for this process is called Mash-tun. Grist is
mixed with hot water. This mixture falls into the mash-tun. Enzymes released in the mash-
tun lead to progressive solubilisation of the contents of the grist particles, converting all
starches to sugars. The mash water around the particles dissolves the extractable material
and drains through the bed and is filtered by the husks. The spent grains are removed at the
end of the process. This intern can be utilized as cattle feed.
Fermentation: The course of fermentation results in the formation of ethanol, carbon - di
-oxide and energy (including heat). Fermentation process results in formation of about
6% v/v alcohol. Parameters like pH, temperature etc. are controlled to yield more alcohol
during fermentation.
Distillation: The fermented wash from fermentation section is directly taken to Beer heater
followed by fermented wash pre-heater and then fed to top of analyzer column. The
vapours generated at the top of the column are concentrated to 62.5% v/v in rectifier
installed at the top of the analyzer column. Multiple feed points and draw points are
provided in the column to meet quality of malt spirit.

3.7 Resource Optimization / Recycling and Reuse
Spent wash generated during the process of fermentation, will be treated in multiple
effective evaporators to concentrate the solids and concentrated syrup along with wet
cake will be dried in dryer. This is known as distilleries dry grain with soluble
(DDGS). This will be sold as cattle feed/poultry feed/ Fish/ prawn farms. The
condensate generated during the process of multiple effective evaporators and drying
will be reused in the process thus decreasing the net water requirement.

Kashipur, and district Udham Singh Nagar, state Uttarakhand. The project is a vacant
land.
4.6 Soil Classification:
Soils in the region is shallow with sandy to loamy texture, poorly sorted, comprising
mainly of gravel, sand, silt, clay with pebbles etc
4.7 Climatic Data From Secondary Sources:
The climate varies from Sub-tropical and sub-humid with three distinct seasons i.e.
summer, monsoon (rainy season) and winter. The rainy season starts from the month
of middle June to September end, and followed by the winter season, which starts
from the end of October and goes up to February. The winter rains are generally
experienced in late December or early January, which brings down the temperature
and that’s how December and January are the coldest months in the district. The
summer season starts from March and it goes up to June. The hottest months of the
year are May and June. The maximum temperature in the district goes up to 42ºC
during the summers and the minimum temperature is between 1 and 4ºC, further
north of the district, the temperature comes down to 0.4ºC in winter season.
Rainfall, spatially, is highly variable depending upon the altitude. The intensity of the
rainfall increases from south to north and the amount of rainfall decreases in
generally from west to east. About 90% of the rainfall received during the monsoon
period, and the remaining 10% of the rainfall in non-monsoon period. The average
annual rainfall is 1296.85 mm .
