Make Tahini DipPlace lemon juice, garlic, and tahini in a food processor. Process until pureed. Add watercress and pulse until pureed. Stream in olive oil and mix until smooth. Add lemon zest. Season to taste with salt and pepper. Can be made one day in advance and stored covered in refrigerator.
To AssembleLine the interior base of each pot with foil or line with a bowl. Spoon tahini dip into each pot and submerge vegetables partially in dip, allowing tops to show. Garnish with herbs and edible flowers.

Croquembouche are beautiful towers of custard filled profiteroles held together with caramelized sugar. Our version is filled with matcha cream
then wrapped in fine strands of pulled sugar, finally garnished with flowers and pearls. It looks impressive as a dessert centerpiece but is surprisingly

Champagne towers can be a simple, yet glamorous addition to your reception. The glasses are beautifully arranged to allow Champagne to flow down like a flawless waterfall. Our version takes this classic to a new level, surrounded
by a luxurious base of flowers
Art of the Champagne Tower
A S S E M B LY 1) On top of the large plastic tray, start with a firm, level base for your tower. Create the first layer of your tower by placing 19 champagne glasses in a circle on a table or tray. This should be approximately 15-inch in diameter.
2) Place the vines around the hem of the glasses letting them do their spindly thing weaving about, creating the illusion of a wreath. Gently place your flower heads (no stems) on and around the vines and leaves, weaving in and out in an ethereal way.
3) Build the levels. The five—tier tower should be made of successively smaller layers of circles. For example, the next layer should be made of 10 glasses, followed by 7, 3, and finished with 1 glass on top.
4) Make sure each glass touches the surrounding glasses. A diamond shaped gap will appear between each. When building layers, center the stem of the glass over the diamond openings created by the layer below.
5) Slowly begin pouring the Champagne from the top glass, allowing it to trickle down. If the tower is used for decorative purposes only, assemble and fill with Champagne before the celebration and pass trays with fresh Champagne to guests.

Huntress is a Brooklyn-based floral studio inspired by wild, opulent, equatorial designs, spirit of place, a mood or feeling in time, cross cultural savoir-faire, the tropics, botanical exploration, and natural oddities. Specializing in weddings, events, private installations, and floral styling.

Chantelle Pabros is a Fine Wine Specialist at Morrell and Company. In 2015, she became the Wine Director at Upland Steven Starr Restaurant Group in New York, prior to switching over to Morrell and Company. Pabros has been featured on ABC News, in NYT, New York Post, Gotham Magazine, Atlanta Magazine, amongst others.
