    Combine 14 years as a chef at a beloved

    Southern California restaurant, a work

    ethic that takes nothing for granted,

    some hearty Italian roots and more than 50

    acres of vineyards on the east side of Paso

    Robles and you have the ingredients of

    Falcon Nest Vineyard and Winery.

    Francesco Grande owns Falcon Nest with

    his wife, Carol, and is the winemaker.

    Leaving behind a successful restaurant and

    starting a winery made perfect sense, said

    Francesco.

    Wine has always been part of my job, he

    said, referring to the extensive wine lists he

    compiled. Indeed, he sees a winemakers task

    as a natural extension of a chefs.To me, he said, making wine is like

    cooking. I dont fuss around too much.

    Grande said hes guided in his wine-

    making by the same philosophy which

    proved successful as a chef know what

    consumers want and provide quality at a

    reasonable cost.

    With that in mind, Falcon Nest wines are

    made in a bold, fruit-forward style without

    an oversupply of tannins. They are smoothed

    out with aging in French oak that typically

    lasts at least two years and can extend

    another 24 months after that.

    The 53 acres of vineyards are planted to

    varietals that have put Paso Robles at the

    forefront of California wine producers

    Zinfandel, Syrah, Cabernet Sauvignon and

    Merlot.

    Grande is a native of southern Italy and

    thats reflected the moment you walk into the

    winerys tasting room. Shelves are lined with

    a variety of imported pastas and homemade

    sauces. Fresh eggs are also for sale, compli-

    ments of the various members of the poultry

    family visitors often hear upon arriving at the

    winery.

    There are a handful of tables where guests

    can enjoy a plate of antipasto and a bottle ofwine or a more robust lunch. A recent

    menu featured selections such as chicken

    parmigiana, chicken marsala and pork

    cilantro.

    Not surprisingly, a larger seating area

    attached to the existing tasting room is

    already under construction. The Grandes

    vision for Falcon Nest also includes a bed

    and breakfast inn.

    Tasting room visitors are seeking a memo-

    rable experience as much as a memorab

    wine, said Carol Grande.

    Most people know more about wine th

    they used to, her husband added, abo

    what they like. Were trying to give them

    experience, not just sell them wine. Th

    want to meet the people who made the win

    find out the story behind the wine.

    The Grandes are more than willing

    share those stories. An affable pair, th

    quickly make visitors feel at home. Its easy

    see Francesco in his former career minglin

    with guests at his restaurant, talking abo

    the dishes hes prepared.

    waited for them to begin producing fruit, splitting their time between

    Paso Robles and their Simi Valley restaurant. The Grandes did much

    of the work themselves.

    If you want to do it right, its hard work, said Francesco. We

    were planting vines, pulling weeds.

    The vineyards are planted in an east-to-west direction, maximizing

    sun exposure to achieve desired ripeness. The vines produce small

    yields, leading to intensely flavored fruit.

    Falcon Nest was bonded in 2004 and, finally, they decided to sell

    the restaurant and move permanently to Paso.

    It was getting too hectic, said Francesco. We needed to make a

    choice.

    They never looked back. Falcon Nest is now producing about

    5,000 cases annually, and the Grandes say they are in a position to

    steadily increase that amount over the next several years. Theyve

    recently retained some seller representatives to help market Falcon

    Nest wines to other regions of the state and nationwide.

    Grande, an effervescent gentleman, only sounds a weary notewhen he speaks of keeping up with the myriad and ever-changing

    state laws governing shipments of wines to consumers.

    Thats the hardest part, he laments. Making the wine is the

    easiest part of my life.

    The competition within the wine world is,

    to put it mildly, fierce. In this world, the

    microcosm of the small winery is

    instructive. How can small producers making

    between 500 and 5,000 cases of wine a year

    compete with wineries who produce well over

    100,000 cases a year? The answer, of course, is

    the wine itself. After all, if the wine is good-

    people will drink it. But theres more to thatequation. Marketing becomes of primary

    importance and so it is no wonder when

    groups of smaller wineries band together to

    show off their product.

    The Highway 46 West Winery Group of

    Paso Robles is an answer to the age-old ques-

    tion of winemaking Davids and Goliaths and is

    a unique response to getting smaller wineries

    more well known. Executive Director Kristin

    Odenwald likens the group to a family. We

    were formed to bring people to the West Side

    and help each other out, she says. Thatsimplicity is the key to success.

    Highway 46 West leads across undulating

    hills where rolling vineyards with names that

    have made their mark, stand among majestic

    oaks and soaring views. Brian Benson Cellars,

    Castoro Cellars, Dark Star Cellars, Doce

    Robles, Eagle Castle, Fratelli Perata, Grey Wolf,

    Hunt Cellars, JanKris Winery, Midnight

    Cellars, Peachy Canyon, Windward Vineyard

    and Rotta Winery make up the group and their

    location in the Templeton Gap makes their

    wines special. We get the sea breeze in theafternoon and the fog that comes up from

    Cambria and so while the days are warm

    even hot, the evenings cool down and provide

    a great growing climate, says Odenwald. But

    the group is more than that. These are not just

    cooperative businesses that have bonded

    together, but longtime neighbors and friends

    who spend time with each other, talk and play

    and even work together.

    The unique wineries themselves are testa-

    ments to the sense of place, of home that wine

    lovers get when they visit. Grey Wolf, for

    example, and even Peachy Canyon, are essen-

    tially old homes that now boast wineries asresidents. And its that home-style feeling that

    has bred a passion for these winemakers and

    their wines. Indeed, these wineries have all

    won awards in various categories for every-

    thing from Syrah to Zinfandel to Cabernet

    Sauvignon.

    So it is that with smaller production come

    many benefits. The concentration for these

    winemakers remains their connection with the

    land on which they grow grapes and make

    wine. Their bond with their employees an

    each other is as important as the quality of t

    wine they make. In the end, they are able

    concentrate on what they love doing wh

    helping each other along the way.

    Chef for the evening, as vintners combine their favorite culinary

    creation with their wines while wooing the attendees for their votes.

    The event will be held at the newly remodeled River Oaks Hot

    Springs & Spa.

    Pasolivo Olive Oil is the major sponsor for the Ninth Annual

    Winemakers Invitational Cook-off, where winemakers, including

    Opolo Vineyards, Eberle, Justin, Robert Hall, Tobin James and

    J. Lohr to name a few, will prepare unique culinary cuisine to pair

    with their favorite wines. The winemakers love to participate

    because it breaks from the traditional wine-tasting event, comments Josh Yaguda, whose family owns Pasolivo Olive Oil. They get to

    showcase their finest wines and compete by cooking a dish that will

    bring out the greatest of qualities in their wines. The winemaker-

    chef with the most attendee votes at the end of the evening wins the

    Peoples Choice Award.

    When asked about some of the delectable food that one might

    expect at the cook-off, Yaguda laughs, Thats top secret. The win

    maker-chefs prefer not to share what they are preparing in advan

    because they want to keep their competitive edge. In addition to t

    Peoples Choice Award, local renowned chefs will also be tasti

    and voting to determine which winemaker-chef will win this yea

    coveted Judges Award.

    This sell-out event is expected to draw close to 1,000 attende

    ine lovers often give lip service to the

    concept that wine, particularly great

    wine, is made in the vineyard. At

    Stolpman, we believe that our Estate

    Vineyard gives us the opportunity to put

    outstanding wines in the bottle for our

    customers.

    Marilyn and I purchased the ranch in

    Ballard Canyon after several years of

    searching California for the ideal site. In

    Ballard Canyon, we found an outcropping of

    limestone soils with heavy clay top soil.

    (Limestone is found in areas like Chablis, the

    right bank of the Gironde in Bordeaux,Champagne, the Rhne and Italy.)

    After years of working with the vines, it

    became clear that the potential of the vine-

    yard could not be reached with the vines

    planted in the early to mid 1990s, before high

    density vineyards were fully appreciated in

    California. Beginning in 2004, our team

    made a decision to begin redeveloping

    blocks, replacing outmoded vineyards with

    state-of-the-art, 21st century plantings.

    In 2004, we began with the insight that

    higher density vineyards, while expensive to

    plant and expensive to farm, because of the

    need for new equipment to navigate the

    narrow rows, would allow us to grow fruit

    with more concentration and structure. The

    first step was to lay out approximately eight

    acres on Limestone Hill (the Ridge which

    fronts Ballard Canyon Road). At about 2500

    vines per acre, this is more that three times

    the density of the blocks planted in this area

    in 1992. The Sangiovese and Merlot from

    these small blocks is spectacular plan to

    taste the wines in 2008. At the same time we

    replanted three, our first block with Syrahpanted on its own roots. All of our other vines

    are planted on phylloxera-resistant rootstock;

    given our experience with Syrah, we felt that

    a trial with our own rooted vines would give

    us a chance to see if Syrah really does better

    when not grafted. We are keeping are fingers

    crossed no phylloxera, please!

    Two blocks were redeveloped in 2005.

    Ten acres on Rhne Ridge (long-time fans of

    our wines will remember our Rhne Rid

    Cuve, made with Syrah, Grenache a

    Mourvdre grown on the ridge) had be

    lying fallow after the Grenache a

    Mourvdre were removed. Our nurser

    gave us virus-infected vines which made

    almost impossible to ripen the fruit. Af

    The people that make wine and run

    wineries tend toward the eclectic in

    their interests, past careers and experi-ences. Of no one is this more true than Terry

    Culton of Adelaida Cellars. This social

    worker, turned winemaker via his friends and

    family brings a wealth of experience with him

    and not just a little serendipitous fortune.

    His path to winemaking is now carved in

    legend. On a social work-related visit to a

    small town in Northern California called

    Philo, Culton happened upon an old friend,

    Bob Nye, at the famed sparkling wine maker,

    Scharffenberger Cellars. The visit changed his

    life and the course of his career.Cultons wife Kathleen was accepted at Cal

    Poly, San Luis Obispo in 1991 to get her B.S

    is bio-chemistry and so the pair moved to

    Paso Robles to be close to the campus. That

    same year, Culton worked the crush at

    Creston Manor and was subsequently hired

    by famed Central Coast winemaker and

    mentor, Ken Volk of Wild Horse. According

    to Culton, Volk was a generous and giving

    teacher and he was quickly promoted to

    cellar master for Wild Horse. With solid

    winemaking and cellar master experience

    under his belt, the Cultons moved back to the

    North Coast where Terry became cellar

    master yet again with Edmeades Cellars and

    from there, he went on to work at Willamette

    Valley Vineyards which produced some

    90,000 cases of wine annually. That experi-ence was invaluable and it helped propel him

    back across the California border when he

    was offered the assistant winemaker position

    at Calera Wine Company in San Benito

    County. The experiences with Wild Horse,

    Willamette and Calera made Culton some-

    thing of an expert in limestone soil Pinot

    Noir, which remains a passion for him.

    It wasnt until 2003 that Culton accepted

    the position with Adelaida as head wine-

    maker. With a complex four-tier winemaki

    program, Culton began to carve out one

    the more famous niches in Paso Robles wi

    making. Adelaida boasts a reserve lab

    (prices range between $35 and $75 a bottla white label ($20 to $30 a bottle), the SL

    label ($15 to $20 a bottle) and the Scho

    house label ($13 to $15 a bottle). Each lab

    represents a different set of vineyards a

    fruit levels used in the wines. This consum

    based structure is one of the reasons w

    Adelaida has garnered so much press att

    tion. The wines are clearly labeled and the

    are no hidden agendas in any of the wines

    just good, honest winemaking from some

    the best fruit that Culton can find.

    has fashioned Adelaida as a maverick in t

    Central Coast wine community. Its

    wonder, of course, seeing as Culton is som

    thing of a maverick himself.

    good film unless, that is, all those simple

    luxuries are combined in a picturesque picnic

    Enter Cinema E Vino Paradiso is the

    unique new business venture thats taking

    Californias central wine region by storm.

    Founded by Gina DeGirolamo and Melita

    Toscano, Cinema E Vino turns scenic vine-

    yards into open-air theaters, allowing movie

    lovers to sample wines, eat Italian cuisine and

    enjoy classic films all at the same time.

    This is the true meaning of la dolce vita,

    explains DeGirolamo, who said she and

    Toscano brainstormed their idea with area

    vintners, winery owners, wine room

    managers and others before launching the

    evening in Tuscany, only better, because this

    The evening begins with a private wine

    tasting at select Paso Robles vineyards like

    five semi-final concerts

    feature five originalmusic artists competing for a spot at the final competition on October

    7 and a chance to win prizes, cash and a breakthrough recording

    contract.

    The summer-long series of concerts brings together a variety of

    musical genres performed by artists across the country from Los

    Angeles, CA to Portland, OR to New York City.

    This music competition showcases the extraordinary undiscov-

    ered talent in original music, says Kathy Kelly, producer of the

    Winery Music Awards. Anyone who appreciates quality original

    music should come to any one of the elimination round concerts to

    hear it for themselves. And the winery atmosphere makes it even more

    enjoyable.A total of twenty unsigned, original music artists compete at the

    Winery Music Awards Semi-Final Elimination Round concerts, held

    one Saturday each month from June to September, with the Final

    competition on Sunday, October 7. The Final Competition will feature

    the winners of each Elimination Round in addition to two wild card

    winners who earn the next two highest scores among all artists.

    Founded and produced by Kathy Kelly Productions, Inc., the

    competition was created out of the growing popularity of quality

    musical performances at many wineries throughout California. Music

    and entertainment industry professionals judge artist performances in

    the categories of Originality, Musicianship and Marketability to the

    prime wine-consuming market men and women aged 21 to 54.

    Attendees enjoy fine wine, food and quality original music in a variety

    of genres surrounded by rows of vineyards and stacks of wine barrels.

    The breakdown of scores earned by each artist is posted on the

    Each show is hosted by Andrew Firestone, general manager of Fire-

    stone Winery, and once featured on TVs The Bachelor, and co-host

    Just a few years ago women wine-

    makers were a novelty. Only a handful

    of persistent and talented females were

    able to push their way to the top in a

    very competitive field. More and more

    though, women are not only at the helm

    of some very prestigious wine opera-

    tions, they are also garnering their share

    of accolades and awards. Patricia Bello

    of B&E Vineyards is a perfect example

    of the creative spirit that epitomized the

    women of the vine.

    Patricia did not come to her calling

    in the usual fashion. She and her husband, Jerry began by planting

    grapes and selling them to local vintners. Patricia, a cutting horsetrainer and breeder left the farming duties to Jerry. The vineyards

    provided her with a marvelous view from her hilltop home and she

    came to love their brilliant displays in the fall and spring, but wine-

    making was not something she even considered. Along the way

    though, she developed an expensive habit. I love a good bottle of

    wine but unfortunately I seem to particularly like the ones that cost a

    hundred dollars or more. Thats why I had to start making my ow

    production of nearly 4000 cases of Cabernet Sauvignon, Merlo

    has helped her meet her goal of a creating fine wines that will fit in

    Classical Theater Under the Stars ContinuesThe Central Coast Shakespeare Festival

    theatre under the stars, July 13th through

    August 18th. This year features one of Shake-speares original villains, Richard the Third, a

    are matched only by the relish and delight he

    then up a stake planted three feet from the mother vine, doubling the

    density from 720 vines per acre to 1540. The first fruit, harvested in

    2006, is making very, very good wines!

    In 2006, Sashi, Peter Hunken, (now our Director of Marketing and

    Sales) and Ruben went to France and Italy to visit vineyards and

    wineries, looking for new ideas for our wine production. While in

    Cte Rtie, Ruben was fascinated by the ultra-high-density style of

    planting used there. After a year of going without new planting (high

    density vineyards cost about $35,000 to plant and bring to harvest),

    Ruben suggested the brilliant idea of planting a Cte Rtie style block

    on a steep slope facing Ballard Canyon Road. As you may know, Cte

    Rtie produces some of the finest Syrah wines in the world. Many

    folks driving along the road stop and try to figure out what is going

    on with tepees on the side of the hill! Stakes are angled, about 18

    inches apart, meeting at the top about six feet in the air. Syrah cuttings

    were then planted at the base of each stake, to be trained up the stakeand head pruned. With a planting of 5,800 vines, this one-acre block

    may be the highest density in the United States. Look for Super

    Syrah from these vines in the 2009 Vintage.

    We also have a ten-acre block on Whale Hill which was planted to

    Cabernet Sauvignon. Who knows what we will plant there! Another

    future planting will be on about on Limestone Hill, once planted to

    Cab Franc (one acre of that old block is taken up by a new home f

    Ruben and his family). While these are new concepts for us in Ca

    fornia, they reflect the centuries of experience of French and Itali

    vintners in producing world-class wines from high-density vineyard

    As we adopt some of these new traditions, we are confident that o

    wines will continue to improve! Oh, does anyone have any big buc
