In 1989, Urth Caffs modest mail order and wholesale beginnings barely made a ripple in

the coffee community. Rejecting the mediocre standards of most other coffee companies, Urth

Caff sought only the finest and most exquisite, certified organic beans for its customers. Thefounders vowed to maintain quality and ethics, and above all else bring a great tasting

By the time the caf on Melrose Ave. in West Hollywood, would open five years later, Urth

Heavy ChemicalsCoffee is the heaviest chemically treated food commodity in the world. Types of common pesticidesare DDT and malathion, which are manufactured in America but are illegal to use on our soil. In loweraltitudes, BHT is commonly used on coffee crops applied through airplane dusting.The most common chemical used in coffee production is synthetic petroleum based fertilizers whichslowly destroy the soils fertility and seep into local water supplies. Exposing coffee workers and theirfamilies to these harmful chemicals have caused birth defects and cancer. Scientists have found traceamounts of DDT that have made its way to the Antarctic. DDT is known to remain active for over15,000 years before breaking down.

DeforestationOriginal coffee trees do not grow in direct sunlight, but under the shade of dense rainforest. Scientists,in the name of progress, developed sun-resistant coffee tree hybrids that have come to comprise 70%of the worlds coffee production. Coffee farmers are clearing lush rainforest at alarming rates to makeroom for new, sun resistant coffee trees. The Smithsonian Migratory Bird Center estimates that overthe last five years 150 species of song birds have been displaced or have gone extinct due to thisdeforestation.

Soil Erosion & Water ContaminationShort term thinking brings poor maintenance of the land that has caused severe soil erosion in coffeegrowing regions. Farmers using petroleum based synthetic fertilizers year after year on the same plotof land eventually find the soil exhausted and unable to grow anything. At processing plants, coffeecherries are de-pulped in aqueducts. The pulp is routinely dumped in local rivers. When coffee treesare treated with chemicals this all but destroys the water supply. Even in situations where chemicalsare not usedthe organic debris can reek havoc on rivers. Imagine dumping ten thousand banana pealsa day into the local water supplychemical or not it will contaminate the water.

Economic OppressionWorkers harvesting coffee for wealthy landlords on average make .25 cents per hour and slave 12 to 14hours a day. These conditions are worse than the garment industry. Small land holders in high altitudelocations fall prey to exploitive middlemen known in the industry as coyotes. Coyotes areinternational coffee buyers armed with cash penetrating the most remote farms and paying farmersonly pennies for the finest coffees of the world. While coffee retailers, roasters and importers aregetting richmany times the farmers and their families are starving .

Certified Organically GrownAll coffees must be certified to be organically grown by reputable third party inspectors. Certifiedorganic for Urth Caff means grown 100% chemical free. Inspectors test soil, leaf and beans forchemical residue; they audit the shipping of the beans to prevent blending or spraying of beans; andthey inspect the roasting facility. All Urth coffees are fully inspected, documented and certifiedannually.

Shade Grown & Bird FriendlyWe do not buy from farmers that have deforested land. Our source farms are situated deep with in thedense shade of the rainforest. Only old, non-sun resistant coffee stock are used which are known togrow up to twenty feet tall. Shade grown coffee takes longer ripen creating sweeter and morearomatic coffee and leaves the fragile habitat of song birds and other jungle creatures intact.

Sustainable AgricultureSustainable agriculture is a holistic approach to farming utilizing natural methods to insure superiorquality of coffee and to preserve the longevity of the soil. Composting is a key element to sustainableagriculture. The fruit, skins and all organic debris is recycled after processing to make rich, natural

fertilizer for future crops. Cross cropping and intercropping of other kinds of commodities with in thecoffee plantation plays a major role in protecting soil vitality and providing economic diversity forthe growers. Many other innovative techniques are used by sustainable farmers for effective, naturalpest control and for yielding healthier crops of coffee.

How to make teaThe simple act of making a pot of tea is both, relaxing and economical (one pound

of tea makes between 150 and 200 cups).1. Place one heaping teaspoon of loose leaf tea per each ten ounces of water (add

double the amount for herbal blends) in a warmed teapot. The best flavor results

when the leaves have plenty of room to grow as they steep.

2. Bring cool, fresh, filtered or mineral water to the recommended temperature (see

chart below).

3. Pour water over leaves.

4. Cover and steep for the appropriate amount of time.

5. Stir with spoon, remove tea leaves and then serve.

Tea brewing temperatures & timesBlack tea: Bring water to a boil, remove immediately. Steep 3-4 minutes.

Oolong tea: Allow water to achieve small beads of bubbles, approximately

185, and remove. Steep 2-3 minutes.

Iced tea: Add 6 heaping teaspoons of tea to a large pot. Steep for 10 minutes

to form a concentrate. Pour tea concentrate into a pitcher and add

an equal amount of room temperature water. Chill.

Proper StorageTea can last for one year or more, but fine teas that have multifaceted flavors and

aromas lose their complexity in less than six months. So, buy tea fresh and in small

quantities. Exposure to air, light, moisture, heat, and odors, rob tea of its flavor. Store

the tea in a clean, airtight container away from heat, but not refrigerated.
