Rod’s canapés of Cane toad leg and garlic butter
Ingredients (serves 4) • 8 toad legs with skins
removed • 2 table spoons of butter
• 3 cloves of garlic
• Salt and pepper to taste
• 1 fresh baguette sliced
• Garlic chives, finely
chopped
Cane toads are a feral animal, with great ecological impact on the Top End native landscape. They need to be killed humanely (eg. Smashing them on the head really quickly, or pitting them in a dark bag and then the freezer ASAP. ) After they are dead- best to freezer either way and make sure, you need to cut the legs off and skin them (see website for details) Their bodies make great compost- put in a closed bin away from other animals!

Rod’s Cane toad canapés Method • Melt butter in a heavy based sauce pan and fry garlic
until soften
• Add toad legs and cook in butter until tender
• Lightly toast the baguette
• Serve two toad legs on a piece of baguette, drizzled with
garlic butter and garnished with local garlic chives.
