Publisher’s NoteThis is one of The mosT exciTing issues of california Arabic magazine i have worked on so far. We have new writers and contributors who joined our editorial team which gave us a more in-depth, variety of views and talents.
We also were able to secure an interview with one of the most renown chefs from the middle east, chef osama who gave us an inside look at his life and profession.
Also, we discovered a new talent in our community, sama Wareh a member of the Arab-American community that has a wealth of talents and accomplishments. We are proud of her work and happy to share sama’s story with you.
We also address an issue that is considered taboo in the Arab-American and muslim communities, dating. We believe the best way to deal with a hot issue is to address it and create a discussion among our community to help find solutions especially for our young members.
in addition, we have a number of new articles that covered areas of health, fashion, immigration as well as some community news.
We hope you will enjoy this new issue and feel free to contact me with any ideas and suggestions.

10 steps to enjoy a vibrant & a healthy summer

good health is the most valuable asset you can ever have. even if you have everything else in life – money, business, and all those things by which we typically define success – none of these matter if you are not healthy. Your body is the best image of your soul. Taking care of your body and your health attracts positive qualities such as confidence, enthusiasm, and joyfulness ― qualities that enable you to create the life you desire. it also attracts positive and healthy people to you.
There are plenty of diets and products in the market today – more than enough – and obviously, most of them don’t work. We have been conditioned to believe that there is a pill for every problem. The truth is, there is no magic pill or drug that will cure diseases or even help you loss weight. many of the health problems we have today, including obesity, are symptoms, the real problem is the toxic lifestyle most people are living.
The solution is simple. give your body what it needs to heal itself. make healthy choices and eliminate the foods, drinks and habits that attract disease; including sugar, refined carbohydrates, soda, caffeine, smoking, fried food, alcohol and stress…
1- Avoid sugar: The average person consumes about 150 lbs. of sugar per year. most of the “foods” in any supermarket are loaded with sugar, even baby’s formula. A 12-ounce soda can has 10 to 13 teaspoons of sugar!
sugar is an addictive substance that causes tooth and gum decay, stomach problems, and mental disturbances… sugar increases insulin levels, which can lead to high blood pressure, heart disease, diabetes, obesity and many other problems. What is even worse than sugar is Aspartame. This chemical is used as a sugar substitute. There are 92 afflictions related to aspartame, including brain tumors, diabetes, emotional disorders, seizures, breast and prostate cancer.
natural sugar alternatives: stevia, it’s an herb native to south America, it’s easily digested, dissolves quickly, and it’s safe for diabetics. honey is also a great alternative.
2- Avoid Trans fats: Trans fats or “partially hydrogenated” oils. manufacturers use it in their foods because they’re inexpensive and allow for a longer shelf life. Trans fats are found in many foods: french fries, doughnuts and all fried food... snacks, chips, cookies, popcorn... fast food and junk food. commercial oils and margarine. Vegetable oils, corn oil, soy oil, canola oil ... all these oils are very harmful.
Trans fats clogs the arteries, causes obesity and increases the risk for heart disease and stroke. The best oils to use are extra virgin olive oil and coconut oil. Avoid all other oils.
3- eat more whole food: vegetables, fruits, sprouts and greens. The living foods help the body heal and rejuvenate. eat green leafy vegetables: swiss chard, kale, arugula, spinach, turnip greens and collard green.
4- Buy local and seasonal produce; local food has more nutrients. Produce in the supermarket travels 1500 miles on average.
During traveling, produce can lose up to 50% of its vitamins and nutrients.
5- When you buy meats and animal products, make sure they are from grass-fed and free-range farms. Animals should be free of hormones and antibiotics.
6- eat wild caught fish. Avoid farm raised. Add fish oil to your diet; it’s omega-3 rich food.
7- Avoid Refined carbohydrates, including rice, pasta, sweets and sugary food...
8- Avoid coffee, soda, and alcoholic beverages. Drink herbal teas and homemade juices. fresh vegetable juices provide live enzymes that are easily absorbed and reach down to cellular levels in just a few minutes to nourish your cells.
9- Drink Water: The human body is more than 70% water. start your day with a glass of fresh water with lemon or fresh lemon juice. Avoid bottled water, make it a habit to carry reusable stainless steel bottle wherever you go.
10- move and breathe: exercise is essential to excellent health. Practice yoga, martial arts and sports. moving your body circulates blood, moves lymph fluid, distributes nutrients, cleanses cells and strengthens your body. it’s important to get fresh air and sun exposure daily, at least 20 minutes.
Your body and your mind are worthy of good care. You deserve outstanding health, vitality and happiness in every area of your life, and i truly believe that no one is more qualified to care for your health than yourself.

more than 60 Americorps members, staff, and volunteers took part in the annual national Arab-American service Day on saturday, may 16, hosted locally by the network’s member Access california services.
Dr. sophia momand, a staff physician in student health and Psychological services at california state University, Dominguez hills, volunteered her time to provide medical checkups to those in need. her presence was of vital importance thanks to her detection of a breast lump in a homeless woman.
“imagine someone who has no money, no house, no medical supplies and that person has an unattended medical problem,” said Dr. momand in an interview with the california Arabic magazine. “Their pains were addressed. Their sores were treated. They were made to feel better whether physically or psychologically just by stopping by to see the doctor,” she added.
The inspiring event took place in santa Ana as well as 19 other cities across the nation amounting to over 1000 community members volunteering their services nationwide. The national Arab American service Day is a project of the national network of Arab American communities, which is based in Dearborn, michigan.
Access california services celebrated the occasion by encouraging, empowering, and giving back to the community. in addition to free medical checkups, volunteers gathered in the city of santa Ana to distribute food, clothes, and hygiene supplies to 300 poverty-stricken domestic violence victims and homeless families and individuals.
This event coincided with Americorps week, which provided an opportunity for Americorps members to motivate their colleagues, families, friends, and peers to help serve the community. Americorps members worked for several months to make sure the day was a success.
All participants, including young children and youth, agreed that this was a monumental event. To many, it was a day to be grateful for what they have in their own lives and a day to recognize the needs of others.
outreach coordinator and Americorps member at Access cal, Zaki hmaydani expressed his enthusiasm regarding the day of service, looking forward to participate next year as well. Americorps supervisor Bida Keloyan felt proud to see all the volunteers come together for such a great cause. social Worker Raida hamida felt obliged to support those less fortunate than her. executive Director, nahla Kayali was particularly appreciative for the abundance of community donations provided to make this event a success.
contributors to this particular event included Al-Anwar, Dalati insurance inc., olive Tree Restaurant, Rayes Auto service, and Dr. Aftab Ahmed. food and hygiene kits were supplied by community Action
Partnership and giving children hope.
The service day “was an opportunity for Access cal to demonstrate its strength in community service, and furthermore, it was a chance
for children, youth, and adults to illustrate their role as compassionate and contributing citizens within the social fabric of America,” said Kayali who also
sits on the advisory board of the national network of Arab American communities.
As long as she is able to serve, Dr. momand will continue to participate in this event on an annual basis. “Because we are all one big human family, the problem of the homeless is our problem too,” she stated.

The traditional head cloth, kufiya, worn by Arab men to protect them from the sun and sand has become a fashion trend in the west the past five years and can be seen in stores catering to the young. The kufiya is a square white cotton cloth with an evenly sample. Usually the sample is in colored black or red woven. Palestinians, syrians, and iraqis wear the white and black kufiya while Jordanians and saudi Arabians wear the white and red Kufiyas. furthermore, the Aِrabian gulf countries wear a plain white kufiya. The Kufiya is folded into a triangle and draped on the head and kept in place by a rope circlet called an agal. some choose to wear the kufiya in tuban style and still others wear it on their shoulder loosely or around their neck.
According to Lalli nina, Author of “checkered Past: Arafat’s trademark scarf is now military chic”, Kufiyas became popular in the United states in the late 1980s, at the start of the first intifada, when bohemian girls wore kufiya as scarves around their necks. in the early 2000s, kufiyas were very popular among youths in Tokyo, who often wore them with camouflage clothing. The trend recurred in the mid-2000s in the United states, europe, canada and Australia, when the kufiya became popular as a fashion accessory, usually worn as a scarf around the neck in hipster circles. stores such as Urban outfitters and Topshop stocked the item. (After some controversy, however, Urban outfitters pulled the item.) The controversy began with pro-israeli activists protesting the rise of the popularity of the kufiya in the fashion and hollywood industry. many top stars such as colin farell and cameron Diaz sported the kufiya and pro-israeli groups and activists saw this as a support to terrorist or terrorism. nemi Jamal, a Palestinian-American designer, said “The Palestinian people consider
this their flag. it is about pride and class struggle and nothing else. To say it stands for what they’ve said is just a disgrace.”
in spring 2008, kufiyas in colors like purple and mauve were given away in issues of fashion magazines in spain and france. nina goes on to explain that in the mid-2000s in new York city, non-Arabs tended to wear kufiyas in one of three ways. Pro-Palestinian activists wore them loosely draped over their shoulders. World-music aficionados wore them as regular, bunched scarves around their necks (as did girls in the 1980s). finally, hipsters folded them in half to make a triangle, and then gathered the scarf around the neck to leave one point facing down in the center of the chest.
There is no denying it that as Arabs when we pass a much recognizable item such as the kufiya sold at local stores we are proud and excited about our heritage and culture. it does not matter how you wear the kufiya just wear it and be proud of it.

A day hardly goes by without sama Wareh achieving something
significant. Wareh is an artist, a writer, a student, a teacher, an environmentalist, and most important, she’s a hijabi muslim woman, who lives her life to inspire and be inspired.
Born in the United states to syrian parents, Wareh’s religion, tradition has always been an important part of her life. And her parents’ influence have imprinted on her.
“my mom has always been a passionate person and very driven and always busy,” Wareh said. “i’ve never seen her sit and watch TV and not do anything. Being in that environment for so long has made it not oK to just do nothing.”
Wareh, 25, recently earned her master’s in environmental studies with an emphasis in education from cal state fullerton. To complete her master’s Wareh choose to channel her degree in Radio/TV/film, which she also earned from cal state fullerton, and create a documentary that brings awareness about the shortage of water in syria due to overpopulation, pollution and global warming.
“Dwindling Drops in the sand,” was inspired by a visit to syria and a statement her uncle made. As she and her uncle drove through the drying syrian land, her uncle said “we’re running out of water.”
These few words came as a surprise to Wareh and she couldn’t keep them out of her mind. The earthy advocate side of her went to work and didn’t rest until she finished her project.
“i’m somebody that’s passionate about life, about nature, about human rights issues and i act upon those passions,” she said.
The environment is one of those passions. if there’s one thing Wareh wants people to recognize is that this earth we live in is part of us. saving it is saving humanity.
“Don’t think that environmental
issues are not your problem,” she said. “it affects you in so many ways. The more you find out, the more you realize how connected you are to the environment. every year try to come up with some small solutions to live environmentally friendly.”
Wareh, who’s been married for five years, seems to find time to do so much and everything she wants. ever since she was a little girl, she has been interested in art work.
“once i told my dad i wanted to get serious about art, even though at the time we were struggling financially, he said ‘go to the store and buy what you need because i think you’ll do something good with it.’ i was 12.”
Wareh is now an accomplished artist with her own signature pieces influenced by her style and creative mind.
Wareh draws Arabic calligraphy and also does abstract work. her work is marked by a lot of earthy colors.
“The fun thing about abstract is you put your pencil and you hit go,” she said. “i don’t plan it out and i draw what goes on in my mind. We live in a society where everything is planned. When you let your mind go you’ll have a strong art piece because it’s truthful.”
And those who know Wareh cannot escape her sense of humor. if her passion and hard work came from her mother, her funny side sure comes from her father.
“he always cracked jokes. We never had dinner time without laughing,” she said. “The best article of clothing you can wear is humor. most people forget about their sense of humor. it comes naturally. i just like to have fun.”
And politics doesn’t get a break from Wareh, either. she said while all human rights issues are important to her, she’s especially aware of the Palestinian/israeli conflict in the middle east because it’s something she grew up hearing about. she recently attended a protest in support of the voters in iran.
her dream job is to work with national geographic to bring awareness to environmental issues. meanwhile she’s checking out potential schools where she’ll be working on her PhD. in environmental studies. she’s also works with an outdoor science teacher for the orange county Department of education and continues to draw and is working on a novel.

SUMMER 2009
By Ann Amori
A large number of the Arab community are immigrants and have gone through the naturalization process or are going to go through it sooner or later. even though the paperwork and the process brings on a certain fear and anxiety the process itself is not difficult. if money is tight and you’re trying to cut corners hiring a lawyer or a paralegal might not fall into your budget. As long as you are through in answering all the questions on the application and attach all needed supporting documents then all should go well.
however, if your case is not simple and requires more than simply filling out the application and requires the assistance and knowledge of immigration law then a lawyer is a must.
The cases that fall into the category of most common naturalization cases are those who received their permanent residence status as a result of a marriage to a U.s. citizen, being a relative of a U.s. citizen, or through employment by an American company or entity. The primary prerequisite to apply for citizenship is that you have been a permanent resident for at least five years and are at least18 years or older or if you received permanent residence through marriage to a U.s. citizen then you must have your permanent residency for at least three years and living with the same U.s. citizen for the past three years and are at least 18 years older.
once your eligibility has been confirmed then the next step is to download the n-400 application from the U.s. citizenship and immigration services, www.uscis.gov. The form and instructions can be downloaded under the tab of immigration forms on the website. once you have downloaded the form you can fill it out straight from your computer and save it too. i suggest that you first download the n-400 instructions and print them and that way you will have them by your side in case you stumble. The questions on the form are basic information regarding you such as your marriage, children, employment and residence history in the
U.s. Answer all questions and the question that does not apply to you write n/A or none and if you need more space to answer question completely attach a sheet of paper as a continuation of that answer with your name, Alien number, and number of the Question on the paper. After finishing the form make sure to review and it is wise to have a friend or spouse review it just to make sure you did not miss anything.
After the application is complete the supporting documents must be attached. The n-400 requires that a copy of the front and back of your permanent resident card is attached. You must also attach two identical passport pictures, which you can have done at Walgreens, Kinkos, and costco to name a few at a minimal cost. Lastly, attach a money order for $675.00 written out the Department of homeland security. Please make sure of this amojnt since it might change over time.
now take a deep breath and in a manila envelop insert application, copies, pictures and money order. seal envelop and address it to Uscis P.o. Box 21251 Phoenix, AZ 85036 for california residents. i prefer to mail it via certified mail so i receive confirmation that the application was received. U.s. citizenship and immigration services will review your application, and then send you to take your fingerprints, then an appointment to take the citizenship exam, and lastly, an appointment to swear and receive your naturalization certificate.

Alien number

he is a chef among the best of chefs worldwide. he is chef osama el sayed c.e.c. The host of the show “ma osama Atayab” (it’s more delicious with osama), was first inspired by his mother. his favorite dish to eat is Koshari which is a popular egyptian dish made of lentil, rice, maccorini and a tomato base sauce. “i remember my mother making it and i love it because it brings back a lot of great memories,” states chef osama.
he is a father of three Adam, 23, omar, 22, and sarah, 16. chef osama has an international reputation and yet a humble man. When i spoke to him via telephone i found him to be a classy and eloquent speaker. chef osama is a grounded person who has not let the fame of being a household name in the middle-east or Western world get to his head.
he was born and raised in cairo, egypt. he graduated from the hotel Technical institute in cairo and apprenticed with the el-nile hilton international hotel. chef osama then immigrated to Washington D.c. in 1981 and worked at the serbian crown restaurant. he perfected his skills learning different world cuisines such as french, Russian, and serbian. During his twenty year stay in the Washington D.c. area he has served dignitaries in the political community such as President Bill clinton.
hosting his show live five days a week, writing a syndicated column published in many middle-eastern magazines in the middle-east, and traveling internationally keeps chef osama busy these days. he has designed his show to have live interaction with his audience by accepting questions and comments via phone during the show. he began his T.V. career in 1991 airing in Washington D.c. on the Arab network of America with his first studio being at home and then eventually renting a studio. he also hosted a radio show at the time as well. “i see the show as an opportunity to elevate the profession of chef among the Arabs and to educate the world about the diversity of middle-eastern cuisine. The middle-east includes the cuisine of many countries and the cuisine is not the same. There is a difference from moroccan cuisine and syrian cuisine and that is what i want to teach the world. We do not lump
together english cuisine with spanish and french cuisine just because they are in same region likewise we cannot lump together the cuisine of so many countries under the term-middle-east,” states chef osama
chef osama listens to his viewers and their concerns. “As a host i listen to what the viewers want to know and cater to them. if they want to learn vegetarian dishes i do so many vegetarian dishes. my show is not only about me and what i want to convey to my audience.” chef osama knows the busy schedule of the people in today’s fast paced world and thus, presents versatile, easy to follow, healthy and great tasting recipes. in addition, he stresses the importance of the family gathering together to share a meal. “it builds family unity and creates an everlasting bond
between family members,” explains chef osama.
chef osama has plans to tour Thailand, egypt, and the United states during the month of July. Thereafter, for the upcoming month of Ramadan he plans to focus on traditional recipes on his show. “even the desserts i want to focus on the traditional Arabic desserts such as baklawa and kanafa,” states chef osama.
You can visit chef osama’s website for the latest recipes and news at chefosama.com.

n. shahin has been dating someone for more than a year. her parents, who are traditional muslim Arabs and
who she lives with, haven’t the slightest clue about her relationship. shahin said dating is the only way for her to find out about the man she’ll spend the rest of her life with. she has tried to reason with her parents, but gave up shortly after and vowed to live a happy life.“i think dating prepares you to pick a life mate,” shahin said. “some people’s ultimate goal is not marriage, for me it is. i want to get married. Dating is about finding out about people and finding out about yourself and that will lead to successful marriage.” Before her current relationship, shahin was in a relationship for almost four years – also without her parents’ knowledge. she introduced her former boyfriend to her parents a few months before the relationship ended as someone she had just met. her boyfriend expressed interest in marriage, but there was one big obstacle: he was not muslim.her parents said in order for him to marry her, he must convert to islam and mean it. The relationship ultimately ended when shahin, 22, realized that her boyfriend was not a good fit for a long term relationship and that she was too young for marriage.in the 21 century, dating is hardly a new trend. But in the Arab community – both muslims and christians – dating is somewhat a taboo.
some, like shahin, do it in secrecy. others say they are blessed to have an open minded family, but there is always an uneasy feeling about the idea of dating among Arab families. William Khury, 25, said his family upholds strong christian values, but recognize the importance of dating.
“To be honest, parents need to understand that it’s not like it used to be,” he said. “People are getting married later on in their lives and they need time to know the person they’ll marry.”But Khury believes dating must be handled with care.“i feel parents fear over the names of their children and they are right and their reputation is very important, especially in a culture where gossip is so prominent,” he said. “i feel the parents do want their children to date, but they don’t want anybody else to know about it.” But you can’t have it both ways, he said. Therefore, parents should be involved in the process and should instill good values in their children.shaikh Yassir fazaga said islam acknowledges that it is natural for men and women to be attracted to one another, but that these attractions must be dealt with through the proper channels to hold the ethical values of a potential relationship between men and women. The problem with traditional dating, fazaga said, is that it’s a short association between a man and women where mutual – physical – benefits are exchanged in the process.“islam frowns upon that relationship because it lacks the ethical values,” he said. “The question is, in what venue do you get to know the person, and what is it that you need to get to know about the person.”
fazaga said young people need to drop the myths associated with finding their significant other: That you will know what you want when you meet him or her.“People have to be very clear,” he said. “make yourself available as to where you’ll meet that person. You won’t find them if you’re not making yourself available.” since it is natural for men and women to be attracted to one another and it is important for people to learn about each other before marriage, fazaga said, “islam says facilitate for a place and a way for people to get to know each other without crossing these ethical boundaries.”Parents must invest in their children, fazaga said. saying something is sin is no longer enough. some parents reside in the United states, but live somewhere else, he said.“Parents expect certain things from their children even though they didn’t invest enough to teach them these values,” fazaga said. mohammed fakih agrees. he said it is important for people to get to know each other within respectable boundaries. fakih, 36, who got married quickly and later divorced, said dating in the Arab community is a catch 22. “it’s frowned upon to go out with a girl and spend time with her, but at the same time you have to get to know her if you’re going to be serious with her,” fakih said. “i can see how it’s stressful and i can see why the divorce rate is higher. Times have changed and relationships are very complicated.”fakih doesn’t think that dating is a taboo. he said parents do want their adult children to be happy and they are beginning to open their minds to the idea. shahin acknowledges that not all parents are like hers. But said that as long as they aren’t willing to open their minds and as long as they are allowing her brothers to do what they may because they are boys, she will keep dating in secrecy.
Dating, Is it becoming more common among Arabs?

91 at 19 is the maiden debut of Dania Alkhouli’s penetrating poetry. Beginning with her first poems in “Baby steps” to her most recent poetry on love and relationships. each poem illustrates Alkhouli’s deepest emotions, and describes a certain experience that led her to take a step further into her future—into maturity. Portraying 91 life changing experiences that she encountered up until the age of 19, Dania titled the book 91 at 19 because she feels 91 at 19.
91 at 19 was created as somewhat of an emotional reference book. it is intended for people to open to a poem they need at the moment; to feel the inspiration behind the poem; and the emotions behind the inspiration; and the incident behind the emotions. Because every poem is the result of a ripple effect. every incident is a pebble thrown into the water. from the incident come the emotions; from those emotions comes the need to express; and from this need comes the inspiration to create the poetry.

The southern california Arab and muslim community joined efforts with many local organizations and activists to support Viva Palestina campaign that took off to gaza on July 4th.
number of local events and activities took place in Anaheim, Los Angeles and san Diego to raise money and create awareness of this campaign to help gazans.
A walkathon was organized in Anaheim where many of community members and supporters participated. They raised Palestinian flags and signs asking to lift the siege on gaza.

stress is part our life and could lead to serious consequences physically and mentally if we do not learn how to deal with it. stress is used to describe
the demands on our body externally and internally. The external events whether pleasant or unpleasant trigger internal responses that affect us emotionally and physically.
You can reduce the stress in your life by learning how to handle it. The following ten ways are great ways to do just that.
1- Talk it out. You can talk out your problems with a spouse or close friend and do not withhold your fears and worry. They can also assist you at looking at the problem more objectively.
2- Laughter is great medicine. Laughter encourages healing within the body and creates social bonding. go see a comedy or rent a good old comedy that you enjoyed before.
3- exercise. When you stress out it creates a certain nervous energy and exercise will burn that energy and relieve you of that unwanted anxiety. swimming is excellent or other aerobic exercises that raise your heart beat to about 120 beats per minute. Try it out once you feel anxious visit the gym or take a long walk and burn the tension off.
4- Treat yourself. At least once a day do something you really like.
5-Take up a new interest. if you feel frustrated and stressed that personally or professionally you are not where you want to be then it is time to take on a new interest that is stimulating mentally and physically.
6-say no. if there is an issue you’re facing and are uncomfortable about it just put your foot down and say no. You can explain that you are not interested or comfortable and receive the respect that you long for.
7- Accept who you are. Do not be too harsh on yourself. Learn to accept your personality and focus on your strengths. Do not harp on past mistakes, just learn from them and go on with your life.
8- Plan and prioritize. You have a lot you want to accomplish and canot get anything accomplished can make anyone frustrated. Write what you want and do not take too much on at one time.
9- Think positive. Those who seek approval have self-doubt; and creates low self-esteem.
10- Be kind to yourself. eat properly and get enough sleep. eating good balanced meals keeps your body running at its best and getting enough sleep will help your body deal with stress.
even though we cannot eliminate stress the above suggestions can help us better adapt to stress and avoid illnesses that are associated with stress such as high blood pressure, cancer, heart disease, asthma, ulcers and headaches.
