defying 3D standing heart cake using modeling chocolate,

petals dusts will also be executed in this class. Students

and/or filled chocolates. They will learn to temper
chocolate, color cocoa butter and use cocoa butter to

Judges? This is the class for you! The class is open to
all ICES members who want to take it, even if they don’t
want to become a judge, but want to improve their
competition skills. There are three (3) Sessions: Class

1:00pm - 4:00 pm and Test on Saturday, 9:30am -

popular gumpaste filler flowers. Flowers created will

Baking and Decorating

If you are a beginning or an experienced baker and would
like to incorporate more vegan baking & decorating into
your repertoire, this demonstration will interest you. I will
share what I have learned from baking and decorating
vegan cakes for the two vegans in my family over the past
5-10 years. In this demonstation I will share my
experience using vegan substitutions for common
ingredients such as eggs, sugar & milk. My talk will
highlight other vegan ingredients found in grocery stores
and may be carrried by ICES vendors. I will share cake &
icing recipes and make book recommendations. I will
provide and demonstrate at least 3 ideas for decorating
vegan cakes. Time permitting, I will follow a recipes and
