AGEING PROCESS
Our grapes are carefully selected from low yield vines of our best blocks on stressful stony soils at Hacienda Caperana near the Maipo River. Special rows are chosen to produce this amazing wine. The Pacific Ocean breezes beyond the river lend this special terroir in Isla de Maipo, an ample daytime-nighttime temperature differential that gives rise to rich colour and well-ripened tannins to produce this Unusual blend.
Low yields vines (1.0 kg/plant) Drip irrigation, deficit controlled regime.Careful viticultural management searching for the proper ripeness of the tannins and avoid green flavours.Cabernet Sauvignon: Block 49, selected rows Shiraz: Block 67, selected rowsZinfandel: Block 6, selected rows
High temperatures during summer advancement harvest about two weeks, however the grapes are well balanced and have a great aromatic expression.
