cookingoilscanberecycledintorenewedmaterialssuchasanimalfeedadditives,cosmeticsandalternativefuels.Companiesoftenprovidethisservicefreeofchargedependingonthevolumeofgreasegeneratedbyyourestablishment.Renderinggreasebenefitsyourestablishmentandtheenvironmentbyturninganuisanceintoabeneficialproduct.

Itisimportanttoasktherightquestionswhenlookingforagreaserenderer.Suggestedquestionsinclude:

Fats,oil,andgreasedischargedintothesewerfromfoodserviceestablishmentsinterferewiththewastewatertreatmentprocessandcancausesewerblockagesandoverflows.

Overtime,oilandgreaseaccumulatesinsewerpipescausingclogsandflowrestrictions.Ifwastewatercan’tmovefreelythroughthesewersystem,itcanbackupintoyourestablishmentandcausedamagesthatcanbeexpensivetorepair.

ThisdocumenthasbeenprovidedbytheCityofBryan’sWaterServicesDepartmenttoeducatefoodserviceestablishmentsonbestmanagementpracticesconcerningfats,oil,andgreaseto:

• Preventsewerstoppagescausedbyfats,oils,andgrease.

• Educatefoodserviceestablishmentsonhowbesttocollect,store,anddisposeoffats,oils,andgreasetoprotectthesewersystem.

• Promotebestmanagementtechniquesforgreasetrapmaintenance.

• EducatefoodserviceestablishmentsontheCity’sinspectionguidelinesforgreasetrapsandcleaningrecords.

Waste Manifest ExampleGrease Traps – You Have to Have OneAgreasetrapisrequiredbycityordinanceforanyestablishment

whosebusinessactivityreleasesgreasetothesewersystem.Examplesarerestaurants,cafeterias,churchhalls,daycarefacilities,bakeries,sandwichshops,icecreamshops,conveniencestoresandconcessionstands.Greasetrapsarevitaltopreventinggreaseclogsinthesewersystemandcanonlybeinstalledbyalicensedplumber.

Grease Trap or Interceptor…. What’s the Difference?

Interceptor

• Usuallysmallandfoundinsidethekitchen.

• Madeofrustresistantmetalandcanbeinstalledabovefloorlevel.

• Typicalvolume:30-70gallons.

Grease Trap

• Usuallyverylargeandlocatedoutside,underground.

• Normallycanbeidentifiedbymanholecovers,whichprovideaccessforpumpingandcleaning.

• Typicalvolume:200gallonsandgreater.

Managing your ManifestAliquidwastemanifest,alsoknownasawastetransportertripticket,

isusedtoverifydisposal.Itisadocumentconstructedoffiveidenticalpages,eachpagebeingadifferentcolor,boundinacarboncopyformat.Thefivepagesinclude:

1)GeneratorFinalCopy(providedbythewastetransporterwithin15daysofinitialtrapservice).

2)GovernmentalCopyorSecondaryTransporterCopy.

3)TransporterCopy.

4)DisposalSiteCopy.

5)GeneratorPumpCopy(attainedonthedayoftrapservice).

GeneratorfinalcopymanifestsarerequiredbyBryanCodetobemaintainedforaperiodofthree(3)years.Thesedocumentsmustbemaintainedonsiteatyourplaceofbusinessandmadeavailableuponrequest.

GovernmentalCopyorSecondaryTransportercopymustbeprovidedtotheWaterServicesDepartmentwithinten(10)daysofreceivingyourGeneratorFinalCopy.ManywastehaulersprovidethisdocumenttotheWaterServicesDepartmentasacourtesytotheircustomers.Ultimately,foodestablishmentsareresponsibleforensuringthesedocumentsarereceivedbytheCitysomakesureyoudiscussthisprocesswithyourliquidwastetransporterbeforeschedulingserviceforyourgreasetrap.

How Does a Grease Trap Work?Greasywastewaterenteringthegreasetrappassesoveraseriesof

separatorbafflestoreducethewastewater’sflow–allowingseparation.Adetentiontimeoftwelve(12)minuteswithinthetrapisrequiredtoallowthegreasetoseparatefromthewastewater.Thegreasethenfloatstothetopofthetrapandaccumulates;theprocessedwastewatercontinuestoflowthroughthetrapandisreleasedtothesewersystem.

Cleaning is Crucial Thecleaningfrequencyofagreasetrapdependsonthesizeof

thetrapandthevolumeofwastecontainedwithinthetrap.PumpschedulesforgreasetrapsaredeterminedbytheWaterServicesDepartment.Followingyourassignedpumpschedulehelpstopreventsanitarybackupsandadditionalplumbingexpensesforyourestablishmentandisrequiredbycityordinance.

9 Steps to a Healthy Kitchen

1.Collectusedcookingoilandstoreinarenderingcontainer.

2. Scrapefoodwastefrompots,pans,anddishwareintothetrash.Followbydrywipingpots,pans,anddishwarebeforewashing.

3.Usestrainersonwashingequipment(dishwasher,sink,etc.).

4.Donotdisposewastethroughagarbagedisposal.

5. Post“NoGrease”signsaroundsinks.Educatekitchenstaffofproblemscreatedbygreaseinthesewersystemandthecosttoyourbusinessforfinesorcleaningofcloggedpipes.

6.Useabsorbentsorothermaterials(towels,kittylitter,etc.)tocleanupspillsbeforemopping.

7.Witnesscleaningandmaintenanceeventsperformedonyourtrap.

8. Becautiousofchemicalsandadditives(includingsoapsanddetergents)thatclaimtodissolvegrease.

9. Beforemopping,cleanupspillswithadryabsorbentsuchaskittylitter;bagcontentsanddisposeofinyoursolidwastecontainer.

Grease Doesn’t Stop At The Sink!

OnlyliquidwastehaulersregisteredwiththeTCEQ(TexasCommissiononEnvironmentalQuality)andtheCityofBryanmaylegallypumpandtransporttrapwastewithinBryan.Asafoodserviceestablishmentitisimportanttoasktherightquestionswhencontactingaliquidwastehaulerforservice;knowingthesizeofyourtrapandyourpumpingschedulewillbenefityouinthisprocess.
