Daily Operations1. Turn on lights, computers, ovens, and hoods2. Prep the make line• Cheese, meats, vegetables, prepare the sauce
3. Fold the pizza boxes 4. Make sure everything is clean
and ready for making pizzas and taking orders
5. Make sure you have enough staff for the day

Taking an order
Orders by phone• Greet the customer• Take the order• Repeat the order back• Give the total cost• Take payment information
Online orders• The order automatically goes to the pizza maker’s screen
Walk-in orders• Greet the customer• Take their order• Repeat the order back• Take payment
• Cash • Credit / Debit card
• The order is prepared and baked• Serve the order
• Wait time is approx. 12 mins.

Making the Pizza1. Start with the dough ball,
stretch it out in the stretch table to oven screen, or toss the dough to stretch it out
2. Sauce – spread it over the dough
3. Cheese Typically use mozzarella Some pizzas add provolone Customized for the customer Toppings – wide variety to choose from
4. Oven – into the conveyor oven for 8 minutes at 470º F

Out of the Oven
Remove the pizza when it exits the conveyor oven using a large paddle
Place the hot pizza in the box
Slice the pizza in the box to avoid losing any of the yummy goodness
Close the lid, place in heat rack until order is complete

At the counter

•credit card or cash unless
• large orders have to be paid by card
At the door – up to $20 & lockbox
