THIS MONTH WE HONOUR ALL THE WONDERFUL GRANDPARENTS AT GEMLIFE BRIBIE ISLAND.
Grandparents Day is celebrated across Australia on Sunday, 27 October and GemLife is giving you and your grandkids the chance to win a fully customised ‘’ultimate family experience” package in recognition of the very special relationship between grandparents and grandchildren. I’d like to encourage our Bribie Island grandparents to share this great opportunity with their grandchildren. We understand the important role grandparents play in the lives of their grandchildren and vice versa, so let’s get the grandkids sending in their entries to let us know how much they love their grandparents (see below for details).
I would also like to take this opportunity to invite our Bribie Island residents to join the GemLife team for the Noosa Breakfast Fun Run on Friday, 1 November 2019. The pair, in their early 60s, fast-forwarded their downsizing plans when a premium site facing Bribie Island National Park became available.
The couple’s new home gives them front-row views across spectacular coastal bushland, a haven to an abundance of native wildlife ranging from kangaroos, koalas and echidnas to possum gliders and, according to neighbours, a regularly appearing bandicoot (there are two bandicoot species living in the park).
“We love it. We look over all this beautiful green space, we’ve already seen kangaroos and we’re keeping an eye out for the bandicoot,” said Kerry.
Previously living in a large, four-bedroom canal property, the pair were surprised at how roomy their new, low-maintenance home felt.
“The design of the home has made downsizing much easier than I thought. There’s so much storage - there’s more here than our old four-bedroom,” she said.
A keen cook, Kerry loves the kitchen design of her new home, especially the walk-in pantry where she can see all her appliances at a glance.
An active couple, the women regularly walk their dogs at the resort, socialising with other pet owners at the off-leash dog-run, and plan to use the gym, pool, lawn bowls, music room at GemLife’s award-winning country club and the pickleball courts.
“Having all these facilities in one place is great - it makes it easy to stay active and try new things,” said Kerry.
The pair also appreciate the inbuilt social and support network on offer at the resort. “It’s very easy to make friends here.”
“There’s a ready-made community. You can balance being social or step back and have privacy.”
“It’s hard for people to get away from the idea of a retirement village - it doesn’t feel like that at all. It’s just a smaller place on a smaller block,” she said.

Bribie Island Community Arts Centre, located on Sunderland Drive. The 3.8km trek features the
Banksia, Palm Grove, and Melaleuca walks, giving walkers the chance to stroll through eucalypt forests,
paperbark wetlands and wallum heathlands.

Bongaree WalkaboutA self-guided historical tour that starts and ends at the Bongaree Jetty. The walkabout takes visitors to the foreshore area’s historical landmarks and
buildings. It’s considered low-intensity, with a small amount of uphill walking involved.

“It’s completely different from parenting your own children. I’m a lot wiser now and have more time to guide them,” said Denise. “We spend a lot of time together and they enjoy sharing their news and chatting with me. They enjoy my company as much as I enjoy theirs,” she said.
Before moving to Bribie Island 12 months ago, Denise was living on a dairy farm in the Darling Downs region. Plans to downsize and sell the farm were suddenly accelerated after her husband unexpectedly passed away. She said a big part of moving forward with her life was making a home close to her daughter and grandchildren, who also moved from the country to the coast. “It’s important to focus on the good things in life and my grandsons are a godsend,” said Denise.
“Living here is a big change for us. We all enjoy the coastal lifestyle. In the beginning, it felt like being on a holiday. Having the kids is the best backup of all,”
she said. “In summer the kids love to swim in the pool, ride their bikes around the resort and walk the dog. We love to have meals together as well.”
The boys are well-known around the resort, having lived with Denise in her lakeside home while their family home was being built. “They know everyone here, they talk to all the new people - especially Luke, he’s a chatterbox - and know what’s going on and where everyone is from,” she laughed. “They love the resort. Most of the residents know who they are and have come to know them quite well,” she said.
“The best thing is when people tell me ‘What lovely grandchildren you have’,” she said. But it’s the little moments that are most cherished. “I can tell by the way they look at me how much they love me,” she said. “They’re always supportive and helpful. They’re good, caring kids. I don’t know what I’d do without my grandchildren.”

Cooking oil spray, to grease
4 large carrots, peeled
1 cup brown sugar, firmly packed
1 cup extra virgin olive oil (light flavour)
3 eggs, lightly beaten
2 cups plain flour
1 ½ tsp baking powder
½ tsp bicarbonate of soda
2 tsp ground cinnamon
1 tsp ground nutmeg
½ cup walnuts, finely chopped
plus an extra cup to decorate
Frosting
250g block cream cheese,
chopped & softened
50g unsalted butter,
chopped & softened
¼ cup icing sugar mixture
Basic Salted Caramel Sauce
2 cups granulated sugar
12 tbs unsalted butter, cut into pieces
1 cup heavy cream, room temperature
1 tsp sea salt
Caramel popcorn to decorate
PREPARATION TIME: 10 MIN
COOKING TIME: 1 HR 10 MIN
MAKES 12Step 1: Preheat oven to 180°C (fan-forced) or 200°C. Line a 12-hole ⅓ cup capacity muffin tray with baking paper.
Step 2: Coarsely grate carrot and measure out 3 cups (discard remaining).
Step 3: Put carrot, brown sugar, olive oil and eggs in a large bowl. Mix with spatula to combine.
Step 4: Sift flour, baking powder, bicarb and spices into separate large bowl. Make a well in centre and pour in carrot mixture. Gently stir until well combined. Stir in walnuts.
Step 5: Spoon batter into prepared muffin tray, scatter with sprinkling of brown sugar, then bake for 25 minutes or until cooked when tested with skewer. Cool completely.
Step 6: Frosting
i) Put cream cheese and butter in large bowl. Beat with electric hand-beaters until light and fluffy. Add icing sugar and beat on low speed until combined, increase speed to high and beat until light and fluffy.
ii) Spoon frosting onto cakes and decorate with extra walnuts and caramel popcorn, drizzle with cooled salted caramel sauce (see Step 7).
Step 7: Salted Caramel Sauce
i) Add sugar in an even layer over the bottom of a medium saucepan. Heat the sugar over medium-high heat, whisking it as it begins to melt. The sugar will begin to form clumps - keep whisking as it continues to cook, they will melt away. Stop whisking when sugar has melted and swirl the pan occasionally while sugar cooks.
ii) Continue cooking until sugar has turned deep amber colour and has slight toasted aroma. Keep a close eye on it because it can burn very quickly. At this stage add all the butter (the caramel will bubble-up). Whisk butter into caramel until melted. Remove pan from heat.
iii) Slowly pour the cream into the caramel (it will bubble vigorously).
iv) Whisk until smooth. Add salt and whisk again.
v) Set sauce aside to cool for 10 to 15 minutes, then pour into a glass jar to cool.
