La domestication du cheval date d’au moins 6 000 ans, en Asie centrale. Les chevaux étaient montés pour la chasse au gros gibier et pour la capture de nouvelles juments. Les éleveurs consommaient leur lait et leur viande. Ils utilisaient aussi le crin et le cuir.
Nos ancêtres ont peint sur les parois des grottes les chevaux qu’ils chassaient.
Ces chevaux sauvages ont tous disparu.
Les premiers chevaux domestiqués étaient assez petits. La sélection exercée par les éleveurs a permis d’obtenir des individus moins craintifs, plus grands et plus rapides. Ils ont ensuite été attelés aux chars des archers, dans les premières armées comme celle des Assyriens, il y a 2 700 ans.
Les chevaux les plus puissants sont capables de tirer de lourdes charges. Ils ont parfois remplacé les bœufs pour les labours.

Courses. L’attrait des courses de chevaux et des paris qui leur sont associés a joué un rôle important dans l’histoire des chevaux. Les éleveurs ont exercé une sélection très poussée afin d’obtenir des chevaux grands et rapides. Mais ces pur-sang sont souvent de santé fragile.
Équitation. Les chevaux sont de moins en moins utilisés pour leur force de travail, et leur viande n’est presque plus consommée. L’équitation a pris beaucoup d’importance et s’est largement féminisée. Hybridation. Les chevaux sont de proches parents
des ânes. La reproduction entre les deux espèces, ou hybridation, est possible. Fécondée par un âne, une jument donne naissance à un mulet ou à une mule. Mais ces hybrides sont eux-mêmes stériles.

LE BÉBÉ Le veau
Le veau est un bébé, mâle ou femelle, qui boit encore du lait.
Ce petit veau est déjà bien agile. Il adore courir partout et découvrir le monde, sans perdre de vue sa maman.
L’éleveur choisit souvent le taureau sur catalogue pour ses qualités, qui complètent celles de la vache.
Parfois, quand une vache est en chaleur, le taureau la féconde de manière naturelle.
Souvent, surtout pour les vaches laitières, le taureau ne rencontre pas la vache. Ses spermatozoïdes sont recueillis dans un tube, puis congelés pour être conservés et ensuite insérés dans l’utérus de la vache.
Le petit veau grandit ici ! dans l’utérus de sa maman.
Au bout de neuf mois environ, quand la vache sent qu’elle est prête à accoucher (à mettre bas), elle s'isole du troupeau. Le plus souvent, elle met au monde son bébé toute seule. Parfois, l’éleveur doit l’aider, ou même le vétérinaire.
Chez les vaches, mieux vaut naître femelle que mâle, car les mâles sont souvent élevés pour être mangés. Les femelles restent dans le troupeau, si elles font facilement des veaux. Sinon, elles sont mangées aussi.
Le petit veau est né ! La vache le lèche et le renifle pour s’imprégner de son odeur, qu’elle reconnaîtra longtemps. Elle l’aide à se relever en le bousculant un peu avec son museau. Il tient à peine sur ses pattes.
Aussitôt levé, le veau cherche le pis de sa mère. Il donne des petits coups de tête pour déclencher la production de lait et hop, il tète goulûment !
Deux petits veaux peuvent téter le même pis, si la maman est d'accord !
Le veau boit ce qui sort d’abord du pis de la vache : le colostrum, un liquide qui lui donne des forces pour résister aux premières maladies de sa vie. Puis il boit un peu de lait.
Au bout de quelques jours, les veaux sont capables de gambader ! Ils jouent entre eux, explorent leur environnement et apprennent les règles du troupeau.
Le lait de la vache est aussi pour nous ! Pour qu’on puisse traire ce lait, le veau est mis dans une petite niche, à l’écart. Il boit alors du lait reconstitué, en poudre, puis commence à manger du foin.
Quand le veau reste près de sa mère, il tête le lait de la vache pendant plusieurs mois. Puis il commence à brouter de l’herbe ou du foin. On l’appelle alors un broutard.
La vache à viande, allaitante (parce qu'elle allaite son veau), produit moins de lait qu’une vache à lait.
Dès l’âge de 2 jours, des boucles avec des numéros sont fixées aux oreilles du veau. Il a aussi des pièces d’identité, un passeport et un carnet de santé.
Quand le veau est la tête vers le bas, l’« accouchement » – la mise bas – risque d’être difficile pour la vache.
La vache attend deux petits veaux : des jumeaux. C’est assez rare ! L'éleveur l'avait repéré, avec le vétérinaire, grâce à une échographie.

LA FAMILLE DE LA VACHE
Toute la famille est réunie : la mère, le père et les petits. C’est assez rare, profitons-en pour bien les distinguer.
LES ADULTES
Au pré, un troupeau peut être composé d’un taureau et d’une dizaine de vaches à qui il peut faire des bébés. Un taureau adulte fait le poids d’un petit éléphant. Il surveille et défend son troupeau. Mieux vaut ne jamais rentrer seul dans un pré !
Quand on voit un troupeau dans un pré, avec taureau, vaches et veaux, il s’agit le plus souvent de vaches à viande.
La vache est une femelle d’au moins 2 ans, qui a déjà un veau. Une vache peut avoir cinq veaux dans sa vie ! Celles qui en ont le plus sont les vaches laitières.
La vache meugle quand elle veut rentrer en contact avec son veau ou avec les autres vaches, quand elle est inquiète, quand elle a soif, faim ou mal, ou au printemps, quand elle est impatiente de sortir !
Dans le troupeau, il y a souvent une vache dominante. L’éleveur, qui la connaît bien, l’utilise pour guider les autres vaches.
