    Blast chiller / freezers have becomean essential feature of the modernprofessional kitchen. By reducing

    the temperature of food quickly, theyoffer those responsible for organi-zing work in the kitchen indispen-sable advantages in terms ofhygiene, product flavour andappearance, menu size and theplanning and rationalization ofoperations.

    Hygiene

    Rapid temperature reductionprevents the reproduction of micro-organisms, so the food then storedin the refrigerator contain them inonly negligible quantities. Shelf lifein the refrigerator depends on thepackaging; foods stored withoutpackaging must be consumed withinfive days, since bacteria are able toreproduce even in a cold environ-ment, while vaccum packed pro-ducts, since they are not in contactwith the air, can be kept for up to

    Soft chilling

    Suitable for joints having less than20 mm thickness or delicate foods.During thes cycle the chamber airtemperature is not going below 0Cand remains at this level until thetemperature at the core reaches+3C. In case the product do notallow the use of the core probe,

    then the chilling cycle must use thetime mode (max 90). At the end ofthe cycle, the program starts thestorage phase and the appliancewill run as a normal refrigerator.

    Hard chilling

    Suitable for joints having more than20 mm thickness or for dense pro-ducts. In the first phase of the cycle,the refrigerant group runs at 100%.As soon as the chamber air-temperature reaches -15/-25C itremains at this level until thetemperature at the core reachesabout +10C, just to avoid problemsof food surface freezing. In thesecond phase of the cycle, thechamber air-temperature isincreased up to about +0C until the

    core temperature reaches +3C.At the end of the cycle the programstarts the storage phase and theappliance will run as a normalrefrigerator.

    Soft freezing

    dropped down to -40C and main-tains this level until the core tempe-rature reaches -18C. In case theproduct do not allow the use of thecore probe, then the freezing cyclemust use the time mode (max 240).At the end of the cycle the programstarts the storage phase and theappliance will run as a normalrefrigerator.

    Hard freezing

    Suitable for joints having more than20 mm thickness or for denseproducts. During this cycle, therefrigerant group runs at 100%. Assoon as the chamber air tempera-ture reaches -440C it remains atthis level until the temperature atthe core reaches about -18C.Then, the program starts thestorage phase and the appliancewill run as a normal refrigerator.

    BLAST FREEZERSBLAST FREEZERS

    Blast freezers are able to reduce the temperature of a food product from+70C to -18C at core within 240 and to store the product at -18/-25Caccording to the cycle previously choosen.

    The exclusive design of thechamber enables the air flow toreach quickly the required tempera-ture in all points. The chillers having

    a capacity of 20 GN 1/1 and20 GN 2/1 are provided with verylarge inner rounded corners.

    The components of the cooling unitare of high quality and performan-ces partcularly suitable for heavy-duty operation. The refrigerant is

    R404A.

    Fully in compliance with the CEE93/43 guidelines (H.A.C.C.P.).Bottom of chamber fully and easilycleanable. The snap-in typeshelf-supports can be removedwithout the aid of tools. Inside instainless steel AISI 304 18/10 withfully rounded edges.

    The insulation is provided by meansof CFC-free high density expandedpolyurethane. The 20 GN 2/1chillers are provided with panels

    having 100 mm thickness.Automatic switching to the stroragephase after the chilling/freezingtemperature has been reached.On request, the 20 GN 1/1 and the20 GN 2/1 chillers can be suppliedwith a 2nd, low-power compressor,for storage purposes only.
