The favorite part of my day atBelmont Village is the opportunityfor me to greet our residentsduring the mealtimes inJosephine’s Kitchen.
I revel in the banter and thequick wit that is expressed duringthe meals, and most of all, thegenuine atmosphere of residentsenjoying a meal together.
I’m often caught up inconversation during this time as alifetime of memories andexperiences are opened up for me.Whether it is a perspective shiftingstory of a earlier time in history,or a reality gut check of the liveslived by our residents, I countmyself fortunate to be able to hearand contribute in the stories thatare told in Josephine’s Kitchen.
As I was passing by one thetables, the residents regaled eachother with stories of growing upin Eastern Europe. Approachingthe table, I heard the names offamiliar cities, cities whose namesI’d visited and walked the streets:Kiev and Lviv in the Ukraine.
Given the recent turmoil in
Ukraine, a flood of memoriescame to mind as I hoped for thesafety of the faces that I associatedwith the country. Once that wasdone, I joined the table and triedmy hand at the art of storytelling...
In the spring of 2003, anopportunity came about to travel toUkraine to speak to a gathering ofyouth, college and young workingprofessionals. Our team wascomposed of the same workingprofessionals who accompanied ateam of physicians and nurses on amedical mission to Bangladesh acouple of summers before.
The gathering was to be held onthe grounds of a sanatorium justoutside the city of Lviv. Interestingly,we would all be housed there also. It’snot often one gets to share, or ratherwants to share, about time spent in asanatorium. In this case it was a coldwar era sanatorium in the heart ofwhat was the old Soviet Union.Memorable would just begin todescribe the experience. Starting withthe three-hour plane ride from Kievto Lviv on a similarly cold war eraTupolev commercial jet where thepilot really had to fly the planebecause there was no such thing asan autopilot, to the not so odd customof the passengers bursting out inapplause when the plane landedsafely. I later found out the airline weflew had a questionable safety record.

October is remembered formany special or awareness days.National Breast Cancer Awareness,National Chocolate Day, NationalOatmeal Day, the list goes on andon. But, with Trick or Treat daysoon upon us, let’s talk aboutNational Chocolate Day!
When providing those specialtreats to the little ones, we mightwonder what the benefit ofchocolate is. Althoughmoderation is the best policy,chocolate is considered afunctional food. The definition ofa functional food is, “any food orfood ingredients that may providea health benefit beyond thetraditional nutrients it contains.”(*1) Some examples of functionalfoods are oats, flaxseed, garlic andchocolate. That is a healthy list offood ingredients, but chocolate,what are some of the potentialbenefits of chocolate?
“Chocolate contains flavonoidcompounds that act asantioxidants.
• Reduce free radicalsproduced by oxygen
• Lower LDL cholesterol• Reduce blood pressure• Reduce platelet aggregationEating as little as 7 grams of
dark chocolate may reduce the riskof cardiovascular disease. Becareful though; eating too manycalories from chocolate may leadto weight gain. Aim for eating 90to 100 Kcal/d of dark chocolate togain health benefits withoutgaining weight.” (*1)
As always, follow your doctorrecommended diet, eating healthyfruits, vegetables, proteins andsome “healthy chocolate” ifpermitted.
