Banana and Orange Marmalade
Sandwich
What ketchup is to the
Americans is what marmalade is to
the British. Marmalade is a big part
of the British culture. Marmalade
can be found in almost every British
breakfast table usually served in the
morning with butter and toast and
included in the old-fashioned idea
of a proper English breakfast. The
fictional character James Bond has a
daily breakfast regimen of boiled
egg, whole-wheat toast, butter and
marmalade, with strong coffee.
Marmalade is also the choice of
Edmund Hillary and Winston
Churchill. It is typically served in the
Continental breakfast in most hotels
around the world. In this version,
marmalade is combined with
mashed bananas spread on whole
wheat bread with a thin layer of butter.
The tangy and slightly bitter flavor of marmalade is complemented by
sweet and delicate flavor of bananas. The popular breakfast fruit also adds a
wonderful texture that is pleasant to the bite and tastes like dessert. You can use
a bottle of store-bought marmalade to make this gourmet food recipe. Or you can
make a jar of homemade marmalade. Traditional orange marmalade is made with
Seville oranges, which are bitter type oranges from Spain. Since these kind of
oranges are not always available thus regular oranges can be substituted along
with one lemon for every pound of orange used.
A simple recipe for 11 cups of marmalade calls for two pounds of oranges,
which are cut and seeded. The juice is squeezed out and the ends and membranes
of the orange are removed. The remaining orange peels are cut into thin strips. In
a large saucepan, the juice and peels are placed along with the large lemon, which
is chopped and tied up in a cheesecloth bag together with the orange ends,
membranes and seeds. Nine cups of water are added to the mixture. Then this is
simmered for at least two hours until the peels turn very soft. The lemon bag is
then removed after all its juices are squeezed into the pan. The nine cups of sugar
is added and stirred over low heat until it dissolves completely. The heat is then
increased and the mixture is boiled for about 15 to 20 minutes. The scum is then
skimmed off from the surface.
Ingredients
2 slices of whole wheat bread
1 large banana, peeled and chopped
2 tablespoons orange marmalade
1 tablespoon butter
Preparation Instructions
1. Mix all the ingredients in a bowl, except the butter and bread.
2. On both slices of bread spread the butter evenly.
3. On both slices of bread spread the mixed ingredients and press well. Serve
at room temperature.
4. If desired you can also grill these sandwiches.
