Welcome to CHEFography, our personal interviews with Chefs from our Society Clubs. Find out where they got their start, their likes and dislikes, and what makes them tick! Daniel Andre – Executive Chef, Buckhead Club Q: Where did you grow up? A: In a suburb on the northwest side of Paris, near Versailles, a city named Argenteuil. Q: Did you eat your vegetables? A: Yes, my father grew them in our garden. Q: Are there any foods that you refuse to eat now? A: No, not really. I’ll try anything. Q: Have you ever eaten anything really unusual? A: I had an ostrich omelet a long time ago, not really unusual. I also tried “A fermented black bean” Sushi when living in California. It had a bit of a strange flavor, but wasn’t bad at all. Q: How did you catch the cooking bug? A: I never thought about going in the kitchen until I spent some time with someone in the family who had a bakery. I used to put filling in the pies and that’s how I fell in love with playing with food. I didn’t have much interest in cooking at all until I was 15. I went to The Hotel School of Paris where they do hospitality training and then specialized. Q: Where did you receive your culinary training? A: I spent two years at Ecole Hoteliere de Paris, where I learned classic French cooking techniques. Q: What restaurants/clubs have you worked in the past? A: La Place du Tertre, in Paris that was frequented by lots of artists and tourists. I worked with a young chef who was very ahead of his time, not the old fashioned chef who would scream and yell but would take the time to teach you. After that I went to Ledoyen on the Champs-Elysees, very classic cuisine and big “Brigade,” which means that there were many people in each station, screaming, yelling, but very classic, very fancy, very nice. Everything was made from scratch and with the very best ingredients. Then I moved to Versailles, and then Bermuda. I moved to the United States and started with The Ritz-Carlton Downtown for a year and a half before moving to Pasadena, California, to open another Ritz Carlton property. After two years I returned to Atlanta and came back to The Ritz Carlton, Buckhead. I also worked with Atlanta National Golf Club, Ravinia Club in Perimeter, left and went to the Crown Plaza, at Milan, a tapas restaurant, and finally ending up at The Buckhead Club. Q: How do you get your inspiration – is there a culture or style that defines your cooking? A: I get ingredients, play with them, and get things in my mind and create the dish. I like to use seasonal products and sometimes things that are trendy. Q: What are some of your favorite dishes to make? A: I like seafood, mushroom dishes and foie gras. Q: What do you think is the hardest dish to cook? A: Some Asian dishes because they define flavors that have to be well balanced together. Q: What kitchen tool could you not live without? A: Graters for zest, the handblender and lately the siphon. Q: What is the must-have items in your refrigerator and pantry at home? A: Butter, cheese and limes. I like to make Brazilian caipirinhas. Q: What is in your refrigerator right now? A: Assorted cheeses and wines. Q: Do you have a favorite wine? A: Yes, Burgundy wines, that’s where my family is from originally. Q: What is your favorite restaurant in Atlanta? A: Bacchanalia, I’d say that’s my favorite, not that I go very often, but I like the food and their service. Q: If you could have your dream dinner party, who would you invite, living or dead, and why? A: I’d invite someone like Salvador Dali, several French musicians and writers like Serge Gainsbourg. Q: Do you have any special family traditions during the holidays? A: The family comes over most of the time to spend Christmas together, and on New Year’s Eve we cook a big dinner, then spend the rest of the evening with some friends who play music. Q: Are there any foods that stand out as particularly special or important during the holidays? A: In France, we eat lamb and turkey. The recipe I have included is one I would prepare for Easter. What Atlanta Society Members Are Saying I’d just like to share with you the great experience I’ve had as an Atlanta Society Member. This membership has allowed me to entertain friends and business colleagues at other area clubs outside my Home Club, the Buckhead Club. I can speak directly on the fantastic service, atmosphere and food

quality of the former 191 Club downtown (now The Commerce Club). I always find value in the Society Select benefits. ClubLine has been great in setting up dining reservations, securing tickets to concerts, sporting and theatre events.

I’ve also used the Society benefit to take advantage of golf privileges. Recently, I started golf instruction at Laurel Springs Golf Club, and I also look forward to enjoying the benefits soon to be offered at The Country Club of the South.

Additionally, through the Society, I found my private Salsa dance instructor. I read about her in the Society newsletter and started taking lessons several months ago.

Overall, I have taken advantage of a lot of the benefits Atlanta Society membership offers. It has truly been a great experience for me and I realize the value it offers. Thank you Judy for managing a great program…you and especially Mandy have been great concierges over the last three years. Please be sure to pass my regards to her as I saw that she has moved on to another role with a Society club.

The Country Club Of The South Holds Golf Course Grand Re-OpeningIt was an action-packed day recently when The Country Club of the South in Johns Creek, Georgia, hosted a grand reopening of the newly renovated golf course for their Members while also celebrating the Club’s 24th anniversary. The event began with a ribbon-cutting ceremony on the driving range with champagne and chocolate-covered strawberries and an exhibition by trick-shot expert Dan Boever. This was followed by a golf tournament that featured food stations throughout the course offering a variety of culinary delights prepared by Daniel Iammarino, executive chef, and his staff.

Members were still raving about the course and food that evening as they enjoyed cocktails, hors d’oeuvres, and a Scotch tasting in the clubhouse, where the decor included five-foot-tall floral centerpieces and three-foot-tall ice carvings of the Club’s logo and a three-foot-tall ice luge golf bag. The Members then dined on an elaborate dinner followed by a variety of speakers that include Jay Biggs, general manager, the Club’s first golf professional and several Members.

The course renovation began last August and superintendent Kent Cain and his team rebuilt the old PenCross greens to the new Bentgrass A1-A4. Additionally, they leveled and resodded many tees with a more durable Zoysia grass. As golfers play the course, they’ll also see great craftsmanship in the construction of the convenience stations and the stone bridges. The next improvement to the club will be the addition of an outdoor patio that will accommodate l00 people with multiple firepits overlooking the 18th hole.

Society Members presently enjoy dining privileges at the Club, and beginning in May, golf privileges will become available. The pool will open on Memorial Day. Due to the heavy participation by CCS Members, the tennis privileges will not be available to Society Members.
