    HOW DOES IT WORK?

Weve managed to compress the same protection as astandard 150ml aerosol pack into a little can half the size.

Weve reengineered the spray system, reducing the amountof gas needed to deliver the same level of antiperspirantingredient with each spray. This allows us to deliver at leastthe same sweat protection as the 150ml can but in a smaller75ml can.

Our compressed technology has been extensively tested so wecan be confident that if you use it just like you use your normal

150ml pack, it will last just as long and work just as well.

    2 largeegg yolks

    1tbsp oil

    150ml semi-skimmedmilk

    2 large onions, peeled

Oil, for frying in deep fat fryer

    1 eggwhite

    Tomato ketchup, to serve

    Sift the flour, cajun seasoning

and a pinch of salt into a large

bowl. Make a well in the centreand add the yolks and oil. Slowly

whisk in the milk to make a

smooth batter. Chill in the fridge,

    covered, for 20 minutes.

    Slice the onions into rings

    about 1.5cm in diameter.

Separate the rings and set aside.

Heat the oil in a deep fat fryer

to 180C or you can use a large

saucepan and fill it one-third with

oil. Heat until a small piece of

bread dropped in the oil turnsgolden brown in 60 seconds.

Whisk the egg white until it

forms stiff peaks and then gently

    fold it into the batter.

Dip the rings into the batter,

a few at a time to coat them

    completely, then carefully fry in

the oil in batches, for 3-4 minutes

    each, turning them over half-way

    through, until golden brown. Its

important to only cook a few at

a time, because if you overcrowd

the pan, they wont cook properly.

Lift out with a slotted spoon and

transfer to a plate topped with

three sheets of kitchen paper this

will soak up any excess fat. Keep

warm while you continue to cook

the rest of the rings in the same

Red onion chutneyThis keeps for up to a month and is delicious with cold meats and cheeses

    700g red onions, halved

    and very thinly sliced

    2tbsp sunflower oil

    1 bay leaf

    1 sprig of fresh thyme

    50g soft brown sugar

    3tbsp balsamic vinegar

    150ml red wine

    75ml apple juice

    Put the onions in a

saucepan with the oil and stir

to coat. Add the bay leaf

    and thyme. Cover and cook

over a very low heat, stirring

    often, until theyre really

    soft and falling apart but

    not coloured. This is called

    sweating and will take

    20-30 minutes. Doing this

    will make the flavour milder

and will bring out the natural

    sweetness of the onions.

    Add the sugar, balsamic

    vinegar, red wine and apple

juice and cook over a medium

    heat, uncovered, stirring

often, until all the liquid has

    evaporated. This will take at

    least an hour. Stir continuously

towards the end of the cooking

time to make sure the chutney

    doesnt catch and burn.

    Half an hour before the

chutney is ready, wash a 450g

jar and lid in hot soapy water

and then rinse and put in the

oven for 20 minutes at 140C/

    120C Fan/Gas 1 to sterilise.

Or you could wash the jar on

the hot cycle in a dishwasher.

    Put the chutney in the

    sterilised jar and leave until

cold. It will keep in the fridge

A taginecan be made in advance and reheated. The flavourimproves if its kept in the fridge for a few hours or up to a day, then reheated. If you fancy a change from lamb, you could make an equallydelicious chicken or pork tagine by replacing the lamb in this recipe withskinless chicken thighs or pork steaks. You can use an authentic tagine instead of a casserole dish its conicallid provides plenty of room for steam to form, keeping the lamb and other foodmoist while they cook. But you dont have to use one to create this beautiful dish.

    Jims tips

A tagine is an idealdish for weekendentertaining because,

although it takesaround two hoursto cook, it doesnttake a lot of time toput together.

Weve used lambneck fillet in this recipebecause it becomesincredibly tender

when slow-cookedand its reasonablypriced. Plus, its easy

to cut, which makesyour job easier!

Its sow easy!Whether youre a seasoned gardener, a novice or want

to get your kids interested, growing your own flowers and vegetables

from seed is the easiest and cheapest ways to get masses of plants.

Sowing seeds indoors now will give you a head start and youll have

strong, healthy plants to transplant out once the weather improves.

    How to sow seeds

1Fill seed trays orsmall potswith multi-purpose compost break up any lumpswith your fingers or use a garden sieve if

you have one. Gently firm the soil with your

hand or use a tamping tool.

2Sprinkle your seeds over the compostthinly, or follow pack instructions. Coverthem with a fine layer of compost.

3Poke in labelswith the plants names

and the planting date. Water gently.

4Place in a propagator, a clear plasticbag or cover with a piece of glass.Place on a warm window sill. Remove the

cover once the seeds have germinated.

5When the seedlings arebig enough tohandle, transplant them into individualpots. Once it gets warmer, gradually

    acclimatise them before planting outside.

    WHAT YOULL NEED TO GROW

YOUR PLANTS FROM SEEDClean pots or seed trays; fresh multi-purpose compost; plastic labels;propagators (or clear plastic bags/piecesof glass); seeds; and a little patience!
