This month we tried our best to bring you a

more ‘professional’-looking and well laid out

Modern medical research has clearly demonstrated the many health benefits of green tea, a drink made from the leaves of the tea plant (camellia sinensis). Tea is the most consumed beverage in the world af-ter water and has been used by man for over 5000 years. Much of its benefits have been attributed to a number of potent antioxidants found in the tea leaves called polyphenols. These substances are al-so present in other plant foods like cocoa.

More recently however researchers have focused on another sub-stance that is found only in tea leaves. It is a unique, amino acid called theanine that accounts for tea’s relaxing while energizing effect as well as many of its medicinal benefits. Theanine is the predomi-nant amino acid in green tea leaves and gives tea its characteristic taste.

THEANINE FOR STRESS

Though it contains small quantities of natural caffeine, green tea has a calming effect that can be explained by the action of theanine. It ac-tually balances the stimulatory effects of caffeine on the nervous sys-tem.

Researches have demonstrated that theanine creates a sense of re-laxation in approximately 30-40 minutes after ingestion by two ac-tions. First, it stimulates the brains electrical activity to produce alpha brain waves. This creates a state of relaxation and mental alertness similar to that achieved through meditation. Second, theanine influ-ences the brains chemistry to increase the level of 2 neurotransmit-ters, dopamine and serotonin. These important brain chemicals pro-duce feelings of well-being and relaxation. People under stress may use theanine to alleviate its negative effects without becoming sedat-ed, as theanine doesn’t make one drowsy.

THEANINE FOR LEARNING AND CONCENTRATION

Theanine enhances the ability to learn, remember and concentrate, a reason why historically monks and scholars have incorporated tea drinking as an aid to meditation and study. It seems to be even more ef-fective when you are stressed and your mind is preoccupied by many thoughts by allowing you to focus on the task at hand. A 2007 study found that it even synergizes with caffeine to boost the activity of brain cells. Researchers found that as little as 100 milligrams of theanine en-abled people to focus beta on complicated tasks, when consumed with 60 milligrams of caffeine a combination found in roughly 4 cups of green tea.

THEANINE AND CANCER

A 2002 study published by Sadzuka found that theanine may help im-prove the quality of life of cancer patients by improving the efficiency of cancer drugs and through its relaxing effects. Theanine increased the concentration of anti-cancer drugs in tumors while reducing the levels of anti-cancer drugs in the healthy tissues, where they are not needed. This served to improve the effectiveness of the treatment while de-creasing its side effect. Theanine itself also inhibited the growth of can-cer tumors Surveys in Japan, where green tea is very popular, showed green tea drinkers had a much lower incidence of liver, pancreatic, breast, prostrate, lung, oesophageal and stomach cancer.

THEANINE FOR BLOOD PRESSURE AND CHOLESTEROL

Japanese researchers report that theanine reduces high blood pres-sure, but has no effect on normal blood pressure. Theanine was also found to reduce cholesterol levels in humans, and prevent good choles-terol from turning bad through oxidation.

THEANINE FOR WEIGHT LOSS

Green tea helps with weight loss, and according to a 2004 Japanese

study, theanine contributes to this effect. In this research on animals,

theanine administration lowered body weight, body fat and blood

fat. Green tea even in large amounts is associated with very few side

effects. It’s all natural.

Ingredients

1/2 banana, frozen and chopped into ½ inch slices

1/2 cup frozen blueberries

1/2 cup 2% cottage cheese

1 tablespoon of your favourite chopped nuts

Instructions

1. Put the banana and blueberries in a small food processor or blender. Process until

it’s in small chunks.

2. Add the cottage cheese and process until smooth, scraping sides down as neces-

sary.

Put your “ice cream” in a bowl and top with chopped nuts. If desired, return to freez-

er for 5 minutes or so before eating.

Notes

When bananas start to get over-ripe, peel them, cut them in half, score them without cutting all of the way

through (this makes them easier to break into small pieces when needed later), wrap them in plastic wrap,

and put them in the freezer.

This tastes the best when made with very ripe, frozen bananas. Under-ripe bananas taste starchy.

Ingredients

2 large organic eggs

1 cup raw unsalted creamy almond butter

1 teaspoon vanilla extract

½ teaspoon apple cider vinegar

12 drops KAL liquid stevia

½ cup xylitol or ¾ cup coconut sugar

¼ cup unsweetened cocoa powder

2 tablespoons buckwheat flour

½ teaspoon baking soda

¼ teaspoon sea salt

¼ cup unsweetened shredded dried coconut (optional)

Instructions

1. Preheat oven to 350°. Line 2 cookie sheets (I use an 18 x 13 cookie sheet) with parch-

ment paper. (I use the same parchment paper later to store them.)

2. Beat eggs with an electric-mixer in a medium bowl and then add almond butter, vanilla,

apple cider vinegar and liquid stevia. Do not mix the rest of the wet ingredients together.

3. Add dry ingredients (xylitol, unsweetened cocoa powder, buckwheat flour, baking soda,

sea salt and dried coconut, if you so desire) in a separate large bowl and whisk together.

4. Combine the wet and dry ingredients and mix well with an electric-mixer until thorough-

ly mixed. At first it will seem too dry, but keep mixing and it will form into a thick, fudge-

like dough. Finish mixing with a spatula to make sure it is well mixed.

5. I use a 1 ½ tablespoon cookie scoop to evenly portion out the dough onto a cookie

sheet. Flatten the cookies gently using the back of a spoon or your fingertips.

6. Bake for about 12 minutes. The cookies will be soft and moist on the inside. It’s a little

hard to tell when they are golden brown because they are already brown…so I tend to

cook them about 12 minutes, they will still be gooey and moist on the inside! Cook less

when in doubt, they firm up as they cool… do NOT overcook.

7. Cool the cookies on a cooling rack for 10-15 minutes.

After they are completely cooled use parchment paper to separate them and store in a zip-

lock bag or airtight container.

cookie that’s sure to please your sweet

tooth! These freeze great too and no need

for thawing, so you always have a sweet

treat on hand to satisfy those cravings.

Broccoli soup

Ingredients

1 fresh flower/head of broccoli

1 onion

1 potato

Butter

Greek-style yoghurt

Salt and freshly ground black pepper

Instructions

1. Boil the broccoli, onion, and potato until soft.

2. Blits to a smooth mixture.

3. Add salt and pepper to taste.

4. Before serving, and a tablespoon of yoghurt.

5. Serve with extra freshly ground pepper, and

(optional) butter.

Destined to become your “go to” gluten-free white bread recipe, this incredible version will get rave reviews from both gluten avoiders

and wheat eaters alike.

Ingredients

1 TB active dry yeast

1 cup warm water

1 TB granulated sugar

1 1⁄2 cups white rice flour 1⁄2 cup corn-starch

1⁄2 cup potato starch 1⁄2 cup sorghum flour 1 TB xanthan gum

1 teaspoon kosher salt 1⁄4 cup canola oil

3 large eggs

Directions:

1. Lightly coat a 9 x 5-inch bread loaf pan with oil.

2. Combine the yeast, water, and sugar in a small bowl and stir to dissolve. Allow to “proof” and bubble, about 8 minutes.

3. Meanwhile in a large bowl whisk together the rice flour, corn-starch, po-tato starch, sorghum, gum, and salt. In another bowl lightly beat together the oil and eggs.

4. Beat together the yeast mixture, dry ingredients, and egg mixture until well combined. Dough will be loose and sticky. Spoon into the prepared pan and allow to rise in a warm location for 1 hour.

5. Preheat the oven to 375 degrees F. Bake the bread until the crust is golden brown and a tap on the top sounds hollow, 22 to 28 minutes. Cool slightly before removing from pan and cool completely before slicing.

Ingredients Gluten-free non-stick cooking spray or 16 paper cupcake liners 1 1/4 cups (5 ounces) white rice flour 1 cup (8 ounces) granulated sugar 1/4 cup (1 ounce) potato starch 1/4 cup (1 ounce) cocoa powder 1 1/4 teaspoons baking powder 3/4 teaspoon salt 1/2 teaspoon xanthan gum 1/2 cup vegetable oil 2/3 cup coffee or water 3 large eggs

For the Fluffy Coconut Buttercream

1/2 cup coconut oil, softened but not melted 3/4 cup confectioners' sugar 1 (7 1/2 ounce) jar marshmallow crème (I used

Marshmallow Fluff) 1 teaspoon vanilla extract 1 cup shredded coconut, optional

Directions

For the Cake: Adjust oven rack to middle position. Preheat oven to 350°F.

Spray a 9- by 9- by 2-inch square cake pan with non-stick cooking spray or

line 16 standard cupcake cavities with paper liners. Set pan(s) aside.

In large mixing bowl, whisk together white rice flour, granulated sugar, potato

starch, cocoa powder, baking powder, salt, and xanthan gum. Add vegetable

oil, coffee, and eggs. Using a handheld mixer, mix until a thick batter forms,

about one minute. Spread batter evenly into prepared pan or spoon into

cupcake cups. If making cupcakes, fill each cavity about 2/3 full. Bake until

cake tester inserted into center of cake comes out clean, about 40 minutes

for a square cake; 18 minutes for cupcakes. Cool cake on a wire rack. Re-

move cupcakes from pan after five minutes. Ice as desired when cool. If de-

sired sprinkle coconut over cake or dip tops of iced cupcakes into coconut.

For the buttercream: In medium mixing bowl, cream together coconut oil and confectioners' sugar until light and fluffy, about 30 seconds. (Use high speed on a handheld mixer or medium-high speed on a stand mixer.) Add marshmallow crème and vanilla. Mix until fluffy. Spread on cooled cake or cupcakes.

This easy one-bowl chocolate cake is dairy-free and tastes great iced with a fluffy coconut buttercream.

make a list and write them down! Do you want to learn something new

every month? Are you trying to change your career path? You’ve always

wanted to find your life’s purpose, here’s your chance. Need a few new

friends to help you on your mission? This is where you figure out what

you what from life right now at this moment in time.

Keep a journal Having a tough time sticking to your above-mentioned

list? Write down all of the hurdles you’re experiencing, and you’ll find a

way around them. It’s a known fact that if you write things down, you are

more likely to see your thoughts in perspective. And while your mind is

placing your thoughts into the correct pile, it’s probably going to start fig-

uring out those hurdles. By the end of the exercise you’ll know exactly

what you need to do! And you’ll feel a lot better, too.

Make your spiritual connection the most important Unlike our

less-spiritual human counterparts, those who understand faith and the

existence of a higher power know that taking any kind of step in this di-

rection will spearhead your entire effort. Take the time to worship, learn

and practice more often and the rest will be too easy!
