Hiroyuki Hanada (60), the second genera-

tion owner, has been working in the stall

since he was 18. The menu is mainly skew-

ers, and char-grilled ‘shiro’ (pork intestine)

is one of the most popular. The seasonings

are simple: local sea salt and homemade

yuzu-infused ponzu. Finish off with a bowl of

tonkotsu ramen. With no artificial additives,

the soup is light and mellow. The wall panels

are removed in April, making the large yatai

feel even more open. Last year, Hanayama

started opening at noon on Sundays. So, if

you’re heading for the shrine, be sure to stop

by Hanayama.

Among the city’s 150 year-old yatai,

Hanayama is truly unique. Unlike the

bustling rows of food stalls in other

parts of town, Hanayama sits alone on the

approach to Hakozaki Shrine in Higashi Ward.

It’s also massive. While a typical yatai can

hold eight to 10 people, Hanayama seats 42.

(Regulars often sit in separate enclosures

called ‘hanare’.) Despite the size, custom-

ers still sit close to each other, which sparks

On February 11 Salvatore Cuomo, the man who

brought the Neopolitan pizza to Japan, opened

his new restaurant in Hakata: Salvatore Cuomo

Market. This restaurant is Salvatore’s first ven-

ture away from his well known franchise and marks his

return to the kitchen as the restaurant’s head chef. Of

Italian and Japanese descent, Salvatore learnt his trade in

the kitchens of some of Naples’ finest pizza restaurants,

starting under the tutelage of his uncle at age eleven. After

moving back to Japan at fifteen he decided to stay perma-

nently following his father’s death and has since become

a well known Celebrity Chef, riding the Italian food boom

of the 1990s to create about 100 restaurants in his name

and develop a TV personality in a country known for its

cooking shows. In this latest edition of In Fukuoka, Fukuoka

Now sits down with Salvatore to discuss his work, new life

in Fukuoka and his latest project: Salvatore Cuomo Market.

While in Japan sake (酒) refers to

alcohol in general, to the outside

world it means just one thing, the

usually clear, fairly strong ‘rice wine’ that is

served at your local Japanese restaurant

back home. The drink being referred to is

actually nihonshu (日本酒 lit. Japanese sake)

an alcohol that has been produced in Japan

since the Nara period.

Sake production was introduced to Kyushu

in the 16th century, and led to the creation

of sake’s rival alcohol shochu (焼酎) a drink

primarily based on the distillation of barley

and other crops instead of rice. This piece of

history means that Kyushu’s reputation as a

producing region is based more on its shochu

than its sake and yet, in Fukuoka Prefecture

alone, there are over 70 breweries produc-

ing more than 1,000 varieties of high-quality

sake each year.

WHET YOUR APPETITE?

Futsushu (普通酒) or ordinary sake is the

most prevalent sake on the market and

comprises some 75-80% of all sake sold

in Japan. It does not meet minimum rice

polishing standards and is the type you’ll

find in 1.8l cartons in Japanese convenience

stores for around ¥700.

Junmaishu (純米酒) is sake made up of wa-

ter, koji mould, yeast and rice that has been

been polished so that at least 30% of the

bran has been removed. This is the minimum

standard of polishing for high-quality sake.

Honjozo (本醸造) is similar to junmaishu and

is made up of rice (30% bran removed), wa-

ter, koji mould and yeast. It differs in the ad-

dition of a small amount of distilled alcohol.

Ginjoshu (吟醸酒) is sake that is made up

of rice, water, koji mould, yeast and a small

amount of distilled alcohol. The rice is pol-

ished so that 40% of each grain is removed.

Junmai Ginjo (純米吟醸) is sake that is made

up of water, koji mould and yeast. The rice is

polished so that at least 40% of the grain

is removed. Similar to ginjoshu, but with no

extra alcohol added.

Daiginjo (大吟醸酒): Sake that is made up

of rice, water, koji mould, yeast and a small

amount of distilled alcohol. The rice is pol-

ished so that 50% of the grain is removed.

Junmai Daiginjo (純米大吟醸) is sake that

is made up of water, koji mould, yeast and

rice polished so that 50% of each grain is

removed. Similar to daiginjo, but with no

extra alcohol added.

MainClassifications

of Sake

LOCAL BREWERIESFukuoka Prefecture has many sake brewer-

ies and a few of them are open to the gen-

eral public to tour. Fukuoka Now recently

visited two of these producers, Shinozaki

and Morinokura:

Shinozaki is a large family-owned brewery

located in Asakura City and produces 1.3 mil-

lion litres of sake, shochu and amazake a

year. It has a shop that sells a wide variety

of alcohols brewed in house, as well as other

souvenirs.

Also family owned, the Morinokura brew-

ery has been making sake just outside of

Kurume City since 1898 and has won many

consecutive gold medals at the Annual Ja-

pan Sake Awards.

At both breweries we were able to sample

sake and shochu as we toured the factory in

dashing hairnets. We were given complete

access to the factories with the exception of

the koji (fermentation) rooms which are kept

under controlled conditions at all times. The

tours were incredibly informative and can

only be likened to entering Willy Wonka’s

Chocolate Factory.

THE FUTURE FOR FUKUOKA’S SAKEThe future for Fukuoka’s sake is promising.

At a tasting event organised by local gov-

ernment agencies, a group of brewers was

joined by two international sake experts,

Stephen King (True Sake, San Francisco)

and Carlin Kumada (Meishi No Yutaka, Hok-

kaido), who discussed strategies for the

promotion of Fukuoka’s sake internation-

ally. This is part of a larger trend which has

seen high-quality sake become increasingly

available abroad, with dedicated sake shops

being set up across the world. While it is

likely to be more expensive than buying it

in Fukuoka, sake’s growing global presence

means tasting, trying and becoming an ex-

pert does not need to be a pleasure confined

to Japan. And if you’re yet to cut your teeth

on Japanese sake, Fukuoka is the perfect

place to do so. With so many breweries and

有田陶器市2015長崎帆船まつり福岡インターナショナルスクールフェスティバル

昨年は25,000人が来場した、年に一度の地球村は、今年で16回目の開催。ペルー、エジプト、スリランカ等、世界各国からの留学生や在福外国人達が母国の自慢料理や民芸品を販売し、舞踊や民族歌謡、楽器の演奏を披露する。食文化や芸術を通じて、互いを理解し、友情の輪を育むのが目的だ。26日には日本の子供たちによる神楽も予定されていている。

◊ Waterfront RedevelopmentRedevelopment work has started on the

Waterfront, the area around the Chuo

and Hakata Wharves that includes Marine

Messe Fukuoka and Bayside Place Hakata.

Many foreign cruise ship passengers alight

at the Waterfront, and the various conven-

tion centers attract numerous visitors.

This May, the City will open a new cruise

ship terminal. Plans are also in the works

to build a new exhibition facility and hotel

in the area.

◊ Shikanoshima Buses RedesignedThe buses on the Shikanoshima Island Bus

Route (Bus no. 1) are getting a facelift. New

buses with wood-filled interiors designed

by Eiji Mitooka, the mastermind behind

the Kyushu Shinkansen and Seven Stars in

Kyushu, will begin operating in April. The

buses will now stop at Saitozaki Station,

making for a more convenient connection

Colorful tulips are set to brighten up 2.5

km of streets between Hakata and Tenjin

(Hakata Station — Ekimae-dori — Canal

City — Hakata Riverain — Seiryu Park

◊ Fukuoka Castle Cherry Blossom FestivalThe annual cherry blossom festival will

be held in Maizuru Park, one of the city’s

prime cherry blossom areas, Mar. 26 (Thu)

~ Apr. 5 (Sun). The highlight of the festival

is the daily light-up of the trees and castle

ramparts (18:00~22:00). Visitors can also

enjoy the night scenery from atop the

castle keep, the ruins of Otaka Yashiki

or Tamon Turret (¥300 for one venue;

¥800 for all three). About 40 food stalls

and trucks will ring the grassy area near

◊ Tenjin Big Bang ProjectWith the relaxation of building height restric-

tions under the Strategic Special Zone initia-

tive, the City has eased its own regulations

on floor-area ratio to encourage the rede-

velopment of old buildings in Tenjin. It is also

working to attract new companies to the area.

Over the next 10 years, the City will encourage

the private sector to rebuild 30 buildings, aim-

ing to boost total floor area by 1.7 times and

increase jobs by 2.4 times. Upon completion,

an economic ripple effect of ¥850 billion is

◊ Attention All Dog OwnersDog owners in Japan must register their

dogs and vaccinate them against rabies. If

you registered your dog in the City, you will

receive a postcard about vaccinations in

early April. Shots are available at any vet-

erinary clinic. Vaccination drives will also be

held at public halls in April and May (Regis-

tration: ¥3,000, vaccination: ¥3,050). For
