Apple-Lentil-Salad
Ingredients:
- 250 g lentils- 16 cherry tomatoes- 2 apples- 2-3 twigs of thyme- 5 tablespoons vinegar-10 tablespoons applejuice - 4 tablespoons oil- salt and pepper- 50 g rocket salad or other salad leaves
- Cook the lentils in water until soft and drain them- cut the tomatoes in halves- peel the apples and quarter them, remove the core- cut the apples in small and thin slices- pluck the thyme leaves from the sprigs
- Mix vinegar, apple juice, oil and the thyme leaves- add salt and pepper
The vinaigrette should look like that
Mix the apples, lentils and tomatoes with the vinaigrette
Before serving add the salad leaves
