Hurrah, we are into May, so that means Summer is onthe horizon! To kick-start the Summer, Personal StylistJanice Coyne has some great advice on creating theperfect Summer Capsule Wardrobe (pg 6). With onlya few weeks to go the school holidays, we have acomprehensive listing of the Local Summer Camps(Pgs 24 - 28), which have something to suit all tastesfor young children and teens alike.

Lots of good news locally. The Dundrum FamilyRecreation Centre has opened ahead of schedule andwhat a fantastic facility it is for the community! If youhaven’t already seen it, get down there. You are sureto be tempted into the beautiful pool, state-of-the-artgym or onto the new all-weather pitches. Staying withnew buildings, the Ballinteer Community Schoolopened its doors to its fantastic new facilities. Again,another wonderful facility for local children to enjoyfor many years to come.

Your Summer Capsule Wardrobe Did the recent spell of gorgeous weatherset you off to look out last year’s summerclothing to check what would still fit andwhat was still in? With the Irish climateoffering us four seasons in one day it canbe difficult putting together clothes thatare summery in appearance and yet handlethis variety.

I would like to suggest a working summercapsule wardrobe as this simplifies the matterof choosing what to wear everyday. What isa capsule wardrobe and how do you createone?

A capsule is basically a collection of betweenseven and ten items that you can mix andmatch yielding several outfits. This caninclude for the summer, light weight trousers– perhaps in linen or cotton, a skirt or dressand shorts or cropped trousers. Look carefullyat the existing clothes you have, you maywell find that you are already choosing itemswith one colour being prevalent, perhapswhite or cream or a paler shade of blue orbrown. A good capsule would include eitherknitwear or a light coat or jacket that workswith the colour-way on the bottom half. Bymixing in a selection of tee-shirts or tops itshould now be possible to create severaloutfit combinations from this basic collection.

This everyday capsule can be adapted to suityour lifestyle or holiday requirements. If youare heading off to certain sunshine then yourholiday capsule could include: swimwear witha kaftan or a beach cover-up, shorts andcropped trousers or light weight skirts and aneasy to wear dress for evening or sightseeing.It is really simple to totally change the look ofan outfit by wearing different footwear andaccessories. The kaftan that can be slipped onover your swimwear can look completelydifferent if teamed with strappy sandals orwedges and pretty jewellery. With baggageallowances being cut to the minimum it canbe important to choose wisely when packingyour bags.

This basic guide can be used for all the familymembers and for any holiday destination. Inorder to get the greater number of outfits outof your capsule look carefully at the coloursyou are choosing, if you can match two orthree tops to each bottom then the optionsincrease. Add in flat comfortable sandals orshoes along with a dressier pair with a fewwell-chosen accessories and the optionsincrease again.

If this sounds too complicated, don’t worry,help is at hand. Creating capsule wardrobesand yielding outfits out of existing clothing ismy speciality. My aim is to create outfits thatwork for you whatever the season, whateveryour budget.

ENCORE! School of Performing Arts take to the Stage

It is that time of year again where the manytalented and enthusiastic young performersfrom Encore! School of Performing Arts taketo the stage of The Mill Theatre, Dundrum(2nd – 9th May). The performers range from4 to 18 and will delight audiences with theirplays, songs and dances with familiar itemssuch as “How do you solve a Problem likeMaria” from “The Sound of Music” and thatfamiliar dance number from the eighties“Fame”.

The very young will be taking audiences on avisit to Nursery Rhyme Land and the moreseasoned young students entertaining everyonewith their newly acquired “Southern AmericanAccents “ not unlike that heard on “WaltonMountain” and dancing to the familiar tune of“Grandma’s Feather Bed”. These plays and songsare written by Emer O’Neill and CaoimheBrennan, the principals and founders of theschool, which makes the annual show unique asit maximises the talents of eaËch student givingevery single child in every group a “speakingpart”. This in turn allows every child to developtheir talents in a non competitive environment.

Encore! was established in 1998 in Knocklyonand since then has grown to service fourcentres. The two principals of the Encore! Schoolare Caoimhe Brennan and Emer O’Neill bothSecondary School and Primary School teachersrespectively. They have developed a formula ofwork and play: the “Rainbow System” TMwhich allows the pupils of the school exploretheir creative talents at class while also takingpart in a full scale theatrical production everyyear.

The emphasis on participation of everyindividual in each class has resulted in a learning

environment which promotes the growth of selfconfidence and allows the students develop theirtalents.

In all it has been another fantastic year at thislong established school with over 600performers from the classes in the four centres:Knocklyon, Taney Parish Centre, SandyfordCommunity Centre and The Mill Theatre itself.The year was sprinkled with fun events such as“Finger Puppet Poetry” “Dress Up Week”,“Encore’s Got Talent”, Poetry writing, ComedyNight: “The Sound of Music” meets “Fame”

The annual shows in The Mill Theatre 2nd May –9th May gives every participant in the Encore!classes a very positive experience. The schoolmotto is well represented in every aspect of theshow “Everyone is a star at Encore!”

One True Voice! – Local Voice Coach Timara Galassi

Rathfarnham resident Timara Galassi has been aprofessional vocal coach, musician and speechcoach for over twenty years. She has successfullydeveloped and trained professionals andamateurs, using a unique and thought provokingapproach.

The Ballinteer Male Voice Choir Represent Ireland in France!

Following the first International Male VoiceChoir, held in Ballinteer last April, the BallinteerMale Voice Choir (BMVC) head to France thisyear. They will be representing Ireland in theChoral Festival being held in Chatte, south-eastFrance, at the end of May.

With a choir of 43 singers and 30 supporters – theBMVC and Ballinteer will be very well represented!Four other international male voice choirs will attendthis year’s festival. Before they go, the defendingchampions will sing an afternoon programme inCastletown House in Celbridge, Co. Kildare on 3rd May.Following a successful performance in the NationalConcert Hall last February - a busy season will bequickly followed by another appearance in the NCHin September. May is a frantic month in the garden. Youmay not need a list of what to do in thegarden in May, because it is staring you in theface every time you walk through yourgarden. But here are some reminders of whatyou can do. Don’t panic. The season is justbeginning.

Everyone=Treat yourself to at least one great new plant before the best selection is gone

=Water regularly, if it doesn’t rain=Water newly planted plants even if rain is predicted

Flowers=Deadhead spring blooming bulbs, but let the foliage grow until it yellows,

=Deadhead and begin replacing pansies and primroses as the blossoms fade.

=Give everything a good feeding, to get things growing. Divide crowded perennials and makesure tall perennials are staked.

Vegetables=Keep the perennial vegetables and berries weeded

=Seed cool season vegetables and root crops after mid-month (beets, beans, cabbage, carrots,lettuce, onions, potatoes, radishes,turnips...)

Flowers=Finish seeding annuals=Deadhead and begin replacing pansies and primroses as the blossoms fade

=Summer bulbs can be planted=Plant new roses=Prune one-time blooming roses as they faded and feed.

A special concert held on March 19th tocelebrate the opening of the newlyrefurbished Ballinteer CommunitySchool was attended by politicians,clergy and other local dignitaries. It wasthe first of a number of special eventsto mark the opening of the new schoolbuilding.

The line up included the school choir aswell as past and present pupils andmembers of the Southside Music Centre,which rehearses in the school. The schoolchoirmistress, musician/composer MaryKelly, described the standard of the choirand the soloists as “exceptional”. (FiveBCS pupils are currently members of theNational Youth Orchestra.) Kelly, a prolific composer who conductedthe Frascati Singers for seven years, haswritten a Mass specially for the officialopening of the school, which will takeplace in October. The audience at lastnight’s concert enjoyed a sneak previewwhen they heard the choir sing the Gloriafrom her Mass of St Brigid. The new BCS building, which has been inuse since last June, can cater for up to 600pupils. It includes three science labs, twotechnology rooms, two resource rooms,home economics facilities, a sports hall

and gymnasium. Work on the grounds,including an all-weather GAA pitch, hasyet to be completed. The original schoolbuildings, which were erected in 1974,were demolished in the autumn.Staff and students are finally enjoying theirnew surroundings, which was first mootedin 1999. “This function gives members ofthe local community an opportunity tovisit our new school,” said principal AustenCorcoran. “We are privileged to have sucha building. I greatly appreciate the work ofMary Kelly and the school choir as well asthe excellent work done by everyone herein the school.” Kelly says that participating in the choirnot only helps the young people developtheir ear for music, but also theirconfidence and self-esteem. During hertime as conductor, she has also seen verygood peer relationships develop betweenstudents of different ages. “The choir isvery much an anchor in the school,” saysKelly, “And I see it becoming a reason forpeople to choose BCS.”

Fennel and tomatoes are gently served withwine, herbs and garlic and then topped withpan-fried sea bass. A tasty combination of classicMediterranean ingredients.

Ingredients:For the sea bass:4x170g/6oz fillets of sea bass, skin on 1 tbsp olive oilsalt and freshly ground black pepper

For the slow cooked fennel and tomatoes:4 fennel bulbs, tough outside leaves removed175ml/6fl oz extra virgin olive oil400g can of chopped tomatoes 1 head of garlic, split into cloves and peeled150ml/5fl oz boiling water120ml/4fl oz dry white wine 2 tbsp chopped fresh oregano leaves24 black olives, stoned and halved2 tbsp balsamic vinegar12 basil leaves

Method1. Preheat the oven to 170C/325F/Gas 3.2. Slash the skin of the sea bass fillets and place in the fridge.3. Cut the fennel lengthways into quarters. Heat the oliveoil in a heavy-based ovenproof pan and add the fennel.Cook the fennel over a medium heat, turning frequently,for 20 minutes or until starting to brown. 4. Add the tomatoes, garlic, boiling water, wine, oreganoand some black pepper. Bring to the boil, cover and cookin the oven for 1½ hours. 5. Remove the pan from the oven and add the olives,balsamic vinegar and basil leaves. Place on a low heat,season and simmer gently.6. Take the sea bass from the fridge, rub the surface withthe olive oil and season with salt and pepper. Heat a largefrying pan. Add the sea bass fillets, skin side down andcook for 3-4 minutes until the skin is crisp. Turn the filletsover and cook for a further minute or until the fish is justcooked through.7. Place a spoonful of the fennel and tomatoes into thecentre of each plate and top each with a piece of sea bass.

As I sit here typing on my keyboard, Irealise that I am as comfortable holding acomputer mouse as I am holding a pen.That wasn't always the case, though. Ireland’s First Personalised Wedding Website

Coming into the Summer months, weddingsare very much in the air. So, what anopportune time to speak with two localentrepeneurs, Richard Masterson and PaulArmstrong, the founders of the www.ourwed-dingjourney.ie - personalised weddingwebsites.

These days, the average person spends severalhours a day sitting at a computer. Staying intouch and communicating has never beeneasier, with the phenomena of Bebo andFacebook leading the way. It was only a matterof time before this easy communication viapersonal websites, came to the world ofweddings.

This is where Richard Masterson from Dundrumand Paul Armstrong from Ballinteer, have comeonto the wedding scene, changing weddingplanning as we know it. After going through theplanning process with their own weddings,Richard and Paul saw the huge need to have aplace where all wedding arrangements could bemade; a place for guests to get information andfor couples to keep track of wedding plans andexpenses. .Launched in January ‘09, www.ourwed-dingjourney.ie is Ireland’s first personalisedwedding website company. OWJ is a placewhere couples can create a beautiful website inorder to showcase their wedding and giveinformation to all their guests. Couples havecomplete control over their own site; can uploadpictures, news, music and have a forum to talkto guests. It is essentially the Facebook or Bebofor weddings!

Richard explained “OWJ gives your guests aplace to get all the information they need forattending your wedding. They can RSVP, finddirections, get phone numbers, contact you,find out about your gift list and read all aboutyou as a couple.”“Having a website is especially important for theguests travelling to your wedding.
