OUR TEA PACKAGINGOur teas are packed in a variety of

gram-weight sizes, including a sample size that yields approximately 3-6 cups of tea. Samples provide a great opportunity to try our teas and find new favorites.

Our silver poly-foil packets are heat-sealed to protect freshness. Smaller sizes are resealable with a convenient zip-lock closure. When ordering the largest size packets (-H and -K), we recommend dispensing a portion of the tea into a small canister, which can serve for daily use. Select teas are also offered in a plug-top British style tea tin (-T). We suggest ordering only the amount of tea that will be consumed in 3-6 months.

We will gladly personalize the tea label on your tea packet or tin with your name or the name of your gift recipient. This personalization is free of charge and adds a wonderful personal touch to your tea. If no personalization is chosen, a default message: “Happy Tea Drinking!” will be printed.

All of our teas come with a complete customer satisfaction guarantee. If you are not pleased with a tea for any reason, kindly let us know within 30 days of receiving your order. If we made an error in fulfilling your order, we will correct it immediately. If the tea is not what you expected, you may return the unused portion within 30 days and we will issue a credit for the purchase price of the tea. Tea generally comes from two varieties of the plant species, Camellia sinensis: Camellia sinensis var. sinensis and Camellia sinensis var. assamica. The leaf used, terroir, elevation, rainfall, harvest date, and processing are all contributing factors that determine the final flavor of the tea. Tea grading was used historically to signify the grade of leaf by appearance only.

The term Orange Pekoe does not refer to a particular flavor, or even to a specific variety or quality. Orange Pekoe is nothing more than a designation of leaf size. As a result of the manufacturing process, the final product is composed of leaf particles of varying sizes. Because the finer particles steep quickly, the tea is sifted into lots of uniform leaf size. Teas designated OP are composed of larger leaf particles, or whole leaves, that will not pass through a sieve of a particular gauge. BOP (Broken Orange Pekoe) designates a grade that is finer than OP. While there is a general correlation between acronyms and the general appearance and character of the tea, there is no strict correlation between the acronyms and the value or flavor of the tea. While these lengthy acronyms appear on nearly every chest of single-estate tea, the real value of the tea is in its appeal to the palate.

This 2020 first flush Darjeeling offers an inviting aroma with hints of honey and toasted almond. The first sip of the light amber-gold liquor reveals fresh floral notes complemented by a tropical fruit sweetness. The finish is crisp and clean.

The version I sampled came from the Tindharia Estate, where the tea grows between 2,400 and 3,600 feet of elevation. “At the start of the season, the tea bush is coming back to life after its winter dormancy, or banjhi, and growth is much slower, resulting in lots that are very small compared to autumnal flush harvests,” Nicole Patterson, Upton’s Tea procurer explains.The freshly hand-plucked leaf is left to wither naturally in the trough, without any application of hot air, which allows it to maintain the greenish character of the first flush. This removes about 65% of the moisture, in a process that takes approximately 17 hours. The withered leaf is then rolled for 30 minutes, alternating intervals of light and harder pressure to ensure even roll and proper twist. The rolled leaf is then briefly exposed to air; this short oxidation keeps the liquor light while allowing the flavor to develop. The leaves are then dried in an electric cabinet drier for 45 minutes. The result, brewed loose-leaf for three minutes with just-boiled, filtered water, is a delightful, steaming, amber-gold beverage, offering fruity notes that hint at pineapple. With a sprinkling of downy silver tips, the olive-green leaves of the first harvest from the 2020 season are fragrant, revealing hints of freshly cut grass. This organic selection delivers an outstanding tea experience. I enjoyed it in the afternoon, but its delicate caffeination also provides a gentle pick-me-up for the morning hours...

There are several flushes each growing season in Darjeeling, the most well-known being first flush and second flush. A “flush” is a period of time when the tea plants grow new leaves, which are then harvested by hand.

After the first flush season ends around mid-April, the tea plants go through a short dormancy until the next growth period - the second flush. Second flush season usually begins in late May and continues through the month of June.

The liquor ranges in color from golden to dark amber, a full-bodied cup that is prized for its “muscatel” character, a ripe fruit quality. Fragrant and rich, notes of honey along with nutty/toasty hints are often found in the flavor.

You already know that true teas — that is, anything that is not an herbal infusion or tisane - are all derived from the same plant: Camellia sinensis. But did you know that tea leaves, when processed differently, can determine which tea comes to life in your cup?

Intrigued? We certainly hope so! You can see on the chart below how different processes yield different teas. From withering and shading, to steaming and rolling, the journey from tea plant to cup can vary, but always produces a fantastic end product — especially when curated by your friends at Upton Tea Imports!

Fresh Tea Leaves: Harvested daily, the fresh growth of the plant is hand plucked, two leaves and a bud set.Withered: The fresh leaves are laid into troughs, where they begin to wilt and oxidation gradually starts. In most instances, forced hot air helps lower moisture levels in the leaves. Shaded: To produce Matcha tea, tea rows are shaded twenty-one days before plucking to block sunlight and boost chlorophyll and theanine levels in the leaves.Pan Fired: China green teas, such as Lung Ching (Dragonwell), are pan fired in a wok to stop oxidation and retain their green color. Pan firing gives the tea a chestnut quality not found in other offerings. Steamed: Japanese green teas, such as Sencha, are steamed after plucking. This stops oxidation and ensures that the leaves stay as green as possible.

TEA PROCESSING 101 KEY TERMSBruised/Rolling: Wilted tea leaves are bruised and rolled to encourage oxidation, a key step in making Oolong and black tea. Rolling breaks down the enzymes in the tea leaf wall and causes them to react with the oxygen.Oxidation: The level of oxidation determines the kind of tea that will be produced. White and green tea have minimal oxidation. Oolong tea is partially oxidized: from 5% to 40%, and black tea is fully oxidized.Fermentation: Shou Pu-Erh tea processing requires that the tea leaves be moistened and piled for about six weeks. This encourages microbial activity, which causes the leaves to ferment. This process was invented as a quick way to mimic the traditional aging process of Sheng Pu-Erh.Dried/Fixed: After all processing steps are completed, tea leaves are dried to remove all moisture and stop oxidation.

PU-ERH TEAS OF CHINAThis tea is named after the town of Pu-Erh in Yunnan province, where it originated. It is produced from the large-leaf Yunnan variety of tea and it is made in loose leaf form and cakes of various sizes, including compressed tuo cha (small, bowl-shaped cakes). Pu-Erh tea has a unique character due to a double fermentation (oxidation) process which imparts an earthy flavor and aroma. Those unfamiliar with this tea are urged to try a sample before buying larger quantities. Pu-Erh teas are especially appropriate for multiple infusions, and yield a flavorful cup even when using less tea than that recommended for other types of tea.

The Japanese tea ceremony has come full

circle, developing over time into an elaborate

and complex performance of the everyday

act of making tea, thoughtfully designed

to follow an intricate number of carefully

rehearsed steps. This traditional “art of

tea” is a rite performed by tea masters who

spend years studying chado, the Way of

Tea, and temae, its performance, in order to

demonstrate the following values: wa (harmony),

kei (respect), sei (purity) and jaku (tranquility).

ceremony have likewise been honed and

simmering — conversation is sparse and, at

times, avoided entirely. The tea master gently

lifts the hishaku water ladle to warm the tea bowl

with water from a pot sitting nearby on a hearth.

Pouring water carefully over the Matcha

powder, she quickly and expertly whisks the

tea until frothy. In perfect anticipation of her

actions without verbally communicating, the

guests bow and accept the gift of tea to share.

When the company moves and thinks as a single

unit in a moment of understanding like this

one, they embody the spirit of ichi za konryu:

to become one in a moment of sharing.

Cha-no-yu, the Japanese tea ceremony, is

a time-honored and cherished tradition: a

ceremony crafted for the optimal enjoyment

of the experience of drinking a bowl of

tea, arranged with great care and detail to

create beauty and harmony in this moment

of simplicity. To understand the complexity

of Cha-no-yu and its cultural value, let us

begin with the history of the tea that inspired

the ceremony: a powdered green tea known

today as Matcha, prized for its characteristic

umami (savory vegetal) flavor.

Matcha first made its appearance in Japan in

1187 AD, when a Zen Buddhist monk named Eisai

encountered a unique method of tea preparation

while studying abroad in China. The common

practice at the time in Japan was to process tea

by steaming the leaves of the tea bush and then

compacting them into small, round cakes to dry.

These cakes were lightly roasted to remove the

last of their moisture and then pulverized into

a coarse powder. When it was time for a cup of

tea, the powder was stirred into a pot of boiling

water with salt and spices, and the resulting

liquid was spooned off the top of the pot to

avoid the dregs lurking at the bottom. Eisai’s

colleagues, the Zen Buddhist monks of China,

preferred to enjoy their tea in a similar way to

how Matcha tea is prepared today: the powder

was added to a bowl, hot water was poured over

it and then it was whisked until frothy. This

beverage was referred to as “whipped tea.” As

Zen Buddhism is a principle that emphasizes

rigorous self-restraint and meditation practice,

the tea’s high caffeine content made it

an ideal companion to routine meditation,

keeping students and masters awake and alert.

Upon his return to Japan, legend says that Eisai

planted tea seeds and seedlings in Ureshino village

at Mount Seburi in Saga prefecture, to share with

his home country the wellness that tea brings.

The first tea ceremonies evolved from Eisai’s

successors, who held an annual event in his

honor called ocha-mori where tea was shared

as the monks paid respect to Buddha and

prayed for good health. This early relationship

between the Zen philosophy and tea led to

the ritualization of the rite of tea, as well as

the use of special tools in the tea ceremony.

As Zen Buddhism flowed from China to

Japan, so too did many fine pieces of Chinese

artisanal teaware purchased by monks

who traveled between the two countries.

Participants would partake in meals together

before tea and play a game called tocha where participants attempted to guess the

differences between teas in a taste test.

As popularity of these parties grew, the

aristocratic Daimyo lords and elite warrior

Samurai class held their own tea-themed

affairs. These gatherings took place in

mansions where the wealthy and powerful men

would show off hundreds of pieces of fine

imported arts and teaware during lavish feasts

and large games of tocha in which gambling

took the center of attention.

By the 1400s, the tea ceremony had

almost entirely lost its original spirit of

Zen and simplicity when the intervention of

three key forces influenced a return to form.

First, there were the wealthy and influential

Sakai city merchants who cherished the tea

ceremony as an opportunity to showcase

their products. They emphasized the importance

of a minimal, austere setting in which to

display teawares highlighting the beauty of

elaborate Japanese folk crafts. At this time,

local goods were valued more highly than

imported Chinese antiques, introducing the

element of Japanese craftsmanship into the

tea ceremony. In addition, monks began to

hold more reserved ceremonies, with just a few

guests, to reintroduce an element of the “study

of humbleness,” to the Way of Tea. What further

cemented this shift in attitude was the increasing

availability of tea to the common person

unaffiliated with wealth, power or religion.

At the time, it was believed that tea improved the overall spiritual and physical wellness of a person.

Intimate gatherings of monks praying over tea evolved into larger occasions of merrymaking.

In a way, Cha-no-yu is a celebration of tea itself, as it strives to create and appreciate a sense of sacredness in tea by a process that appreciates the beauty and simplicity of life and the human connection.

The audience of the tea ceremony widened, leaving its temporal wealth and extravagance behind.

In nearly perfect economy of motion, she lifts the lid of the natsume, without hesitation or grandeur, to reveal a vibrant green powder, which she swiftly measures into the bowl.
