The beekeeper himself can perform a self control, following the guidelines of good apicultural praxis (see From the Bees to the Pot). Honey control according to the scheme given below will be carried out by larger apiaries, honey companies and food control authorities. The degree of control depends on the size of the company. Smaller and medium companies can control parameters 1 to 8. These refer to those aspects of h oney quality that can be more or less appreciated by honey consumers. The honey control begins with sensory examination of honey (steps 2 to 5). The organoleptic characteristics of honey will be determined by a panel, composed of at least 3 persons. For this purpose knowledge of the normal and the off sensory quality of honey is necessary.
