8 cups as-sorted fresh berries(blueberries, strawber-ries, raspberries, black-berries), divided

1 cup water 3/4 cup sugar1 tablespoon

vanilla extract 1 (18-ounce)

brioche loafW h i p p e d

cream

1. Mix 6 cups ofberries with the waterand sugar in a largesaucepan. Cook overmedium heat, stirringgently, until berries startto soften and sugar dis-solves, about 15 min-utes. Remove from heat.

2. Stir in remain-ing berries. Strain berrymixture, reserving all thejuice and berries. Stirvanilla into juice. Line a2-quart serving bowl withplastic wrap.

3. Cut a slice ofbrioche to fit the bottomof the bowl. Dip into juiceand place in bottom ofbowl. Cut the remaining

brioche into wedges and

dip each piece, one at atime, into juice. Placethree-fourths of the juice-soaked brioche wedgesagainst the sides of bowlpressing to remove anygaps. Spoon berries intocenter. Top with remain-ing brioche wedges.

4. Cover withplastic wrap. Press downwith your hands untiljuices rise to the top.Place a plate on top, andset weights on the plate(2 or 3 cans of soup work

well). Refrigerate at least

8 hours.5. To serve, re-

move weights, plate andtop plastic wrap. Place aserving plate on top ofbowl and quickly turnboth over together, shak-ing gently, so that thepudding releases fromthe bowl. Remove plasticwrap. Cut into wedgesand serve with whippedcream. Serves 8.

Melody Sim-mons had decided toadopt a dog. Not just anydog, but a French Bull-dog, preferably brindlecolored. The Miami, Fla.,woman began searchingonline. About 100French bulldogs arelisted on Petfinder at anyone time, so the oddsseemed slim of findingone in her area.

Meanwhile adrama was playing outfor a French bulldog mixand her two full-grownpups. Their owner haddied, and they had beenpractically forgotten in adusty yard in SouthFlorida. They swelteredin the heat for a monthbefore coming to some-one’s attention. By thetime Big and Small Paws

Rescue, Plantation, Fla.,took them in, they wereunderweight and heart-worm positive. Theywere placed in foster

homes and treated for

heartworms. Once a vetgave them a clean bill ofhealth, they were listedon Petfinder -- just whenSimmons was in the

midst of hersearch.

She calls her ir-resistibly adorable and is

thankfulfor her every day. “I waslucky enough to find mypet soul mate onPetfinder,” she says.And MJ was luckyenough to find herhuman soul mate. (Herpups found homes, too.)

¼ C brown sugar*¾ C white rice

flour*½ C tapioca

starch*¼ C sweet rice

flour plus more forkneading the biscuits

¼ C powderedmilk

1 tsp sugar¾ tsp kosher salt2½ tsp baking

powder¾ tsp baking

soda¼ C (½ stick)

cold unsalted butter, cutinto pieces

¼ C vegetableshortening

1 large egg½ C buttermilk

*in place of riceflour and starch, you canuse 1½ cups all-purposegluten-free flour blend orall-purpose flour plusextra for kneading thebiscuits.

Preheat oven to450°. Brush standardmuffin pan with 1 table-spoon melted butter.Place a maraschino inthe bottom of each muffintin. Drain pineapple, re-serving juice. Combinepineapple, 4 tablespoonsmelted butter and brown

sugar. Spoon mixtureevenly into muffin tins.Place white rice flour,tapioca starch, sweet riceflour, powdered milk,sugar, salt, baking pow-der and baking soda intofood processor. Pulse tocombine. Add the coldbutter and shorteningand pulse the mixture

several times until it re-sembles coarse crumbs.Add egg and buttermilk.Pulse to combine. Flour awork surface with riceflour, dump biscuit batteronto it and knead untildough is no longer sticky.Divide dough into 12equal-sized balls and flat-ten them so they fit the

muffin tins. Place biscuitson top of pineapple mix-ture. Mix 2 tablespoonsof reserved pineapplejuice with remaining ta-blespoon melted butterand brush on biscuits.Bake 12 to 15 minutes oruntil golden brown, coolin pan for 2 minutes, thenflip onto a plate.
