wooden mold in layers and pressed into a square

shape to make Hakozushi (boxed shushi). It is also

known as "oshizushi (pushed sushi)" or "Osaka sushi." In

Osaka Prefecture, pushed sushi using fillet of

mackerel and horse mackerel became popular during

the Meiji era. Later, hakozushi using high-class

ingredients such as sea bream, shrimp and conger was

devised and has become a popular dish for

Temple's ritual for rice planting. During the Edo
