Back in 2003, the North Carolina Cooperative Extension Service started a program to help traditional tobacco farm-ers transition to a different crop. Shiitakes were, and still

are, considered a specialty crop. The extension office proposed that these farmers grow edible mushrooms for farmers markets, restau-rants, and health food stores, or grow medicinal mushrooms for herbal stores and acupuncturists. A diversified farm could do both!

The extension office provided each farmer with organic mush-room spores in exchange for data on how well the mushrooms produced. Each farmer received bags of spores with batch num-bers. When submitting their data, the participating farmers would refer to their batch numbers. This ongoing research is revealing which strains of shiitake mushrooms do best in various areas of North Carolina.

The technology of the domed oven is ancient. In one of the world’s oldest excavated Neolithic villages, every house had a domed mud oven. That was 9,000 years

ago! The technology hasn’t changed. Any refractory dome that has a hole cut into it (so you can heat the oven with an interior fire) will cook pizza and other foods when the fire is still burning. However, the ultimate power of the domed oven is that the dome functions like a battery, absorbing heat while it’s being fired. So, after the fire has died down, you can sweep out the embers and bake bread and casseroles with the stored heat radiating into the oven from the dome. When the oven is nearly cool, you can dry wild mushrooms, herbs, and fruit inside.

The oven I suggest you build is made of powdered clay — fire-clay — and sand. It heats quickly; you can start baking dinner in 15 to 20 minutes while the fire is still burning inside the oven and achieve a full firing after about an hour and a half. While the shell is thin compared with brick, it’s so well-insulated under the floor and over the dome that it can be used for days on a single firing. In summer, after making a pizza dinner, if I close the door and put insulation in front of it, my oven will almost always be at least 400 degrees Fahrenheit in the morning — still hot enough for me to bake bread that afternoon. And, its temperature will still be higher than 200 degrees by the following morning.

Ovens are beautiful architectural and sculptural statements. I built my oven on a table made of the trunk and branches of a backyard plum tree. I was inspired by ovens I saw in Italy that were built on platforms made of chestnut trees. This is my aesthetic; you’ll want your oven to reflect your own aesthetic. May 2017 issue, we decided to call on them again — this time for their favorite pickle recipes. Reflected in the bloggers’ submissions is this welcome food-pres-ervation truth: You can pickle just about anything. They’ve given us a variety of ideas — asparagus, beans, beets, and even eggs. Some of their recipes are true fermentations, taking advantage of the lacto-fermentation process. Others are “quick pickles” or “refrigerator pickles,” reliant on refrigeration. We hope this col-

Spicy Asparagus PicklesThe worldwide practice of pickling has

produced long-lasting and tasty veggies for millennia — lacto-fermentation is the original “quick pickle.” With a little salt and time, the process does all the work.

Asparagus is one of the season’s first truly great pickling vegetables, and if you have a good patch, it’s abundant. There are very few ways to preserve the sublime

flavor of fresh asparagus. Fermentation comes close. In this recipe, the fiery burn adds a fun element. I use dried chile pep-pers to add spice because fresh hot pep-pers aren’t in season at the same time. If you want a mild pickle, simply omit the red pepper flakes and only add 1 to 2 dried chiles to the jar.

• 1 to 2 pounds asparagus spears• 3 to 4 whole cloves garlic, peeled• ½ tsp red pepper flakes• 1 tsp black peppercorns• 4 to 5 whole dried red chile peppers,

such as cayenne or bird chiles

Grafting is the joining together of two living plant parts so that the whole grows as one plant. The rootstock pro-vides the roots and a short length of trunk. The scion

becomes the rest of the trunk, plus the stems, leaves, flowers, and fruits of the grafted plant. The graft union never moves; all growth above this union retains the identity of the scion, and all growth below the union retains the identity of the rootstock.

Grafting is useful for multiplying clones (genetically identical plants), whether the clone is a ‘McIntosh’ apple, a ‘Sargent’ cherry, or some nameless apple tree bearing tasty fruits. An old, dying apple tree can be perpetuated by grafting one of its stems onto a young rootstock.

Grafting is a way to multiply plants that don’t form roots readily as cuttings or come true from seeds.

The rootstock itself can also serve other useful purposes. It may influence the form of a plant. Weeping cherry growing on its own roots merely creeps along the ground; grafting it high on an upright trunk of a non-weeping cherry rootstock will bring the weeping head high off the ground. A rootstock might influ-ence the eventual size of a plant, as attested to by my 10-year-old ‘Liberty’ apple tree, topping out at 8 feet high thanks to the M27 dwarfing rootstock onto which it’s grafted. Some rootstocks pro-mote quicker bearing, or tolerance to soils that are too wet, too dry, too salty, or nematode-infested.

Baking bread is something people have practiced for centuries but have partly forgotten in modern

life. It’s a skill worth relearning for the pride and joy of putting a lovely loaf on the table, knowing it was our care and skill that made this beautiful bread for family and guests.

When we bake our own bread, we know what’s in our food. In today’s world of un-pronounceable ingredients, this is reassur-ing. We purchase the best flour available and combine it with only the healthful ingredients of our choice. The breads we bake at home have more flavor because we

allow the loaves time to develop, so they never have that odd processed aftertaste.

We can also save money by baking our family’s sandwich bread. You can make a very basic sandwich bread loaf with high-quality flour for about 70 cents. Adding organic milk, butter, and eggs will bring the cost up to nearly $1.50. Even so, that’s savings.

Expanding into more fancy artisan breads can yield even more savings. As home bakers, the entire world of breads is available to us — we can duplicate the breads of any culture right in our own oven and all at a modest cost.

A day spent baking bread is a good day. Great satisfaction comes with see-

ing loaves out of the oven, cooling on the rack. The house smells fabulous. For some, bread baking starts with just a ba-sic loaf for family sandwiches. Success can lead to passion — for creating the perfect artisan loaf, the perfect pizza, the perfect sticky bun. The more we learn, the more we want to learn.

Getting StartedI figure, if you’re going to get all the

ingredients out and make a mess, you might as well bake a lot of bread, es-pecially on a cold day. I certainly don’t want to have to wash the bowl in be-tween! The following recipes include mixer instructions, but as home bak-ers have mixed bread for centuries, you can certainly mix any of these by hand — which will take longer but will build your arm strength.

In fact, you can meet them face to face via the Mother Earth News fair. Each year we bring thousands of passionate people to our vast eco-friendly marketplace for family-friendly fun and learning. They’re looking for sustainable household and cleaning products, renewable energy systems, gardening supplies, organic food, quality farm equipment, property improvement materials, and much more.

We’re strengthening our commitment to interactive programming in 2018, replacing many presentation-style workshops with demonstrations that provide a more hands-on experience. other acceptable files include photoshop tiffs and Illustrator Eps files (no tiff-It, JpEg, or gIf files, please). send all support files that are incorporated into your ad (e.g., fonts, logos, images, etc.). All images must be at least 300 dpi. When submitting Eps files from Adobe Illustrator, be sure to convert all text to outlines before saving the file. We cannot accept truetype fonts. please note: All native files will be converted to pDf/X-1a files, and the publisher does not guarantee exact replication.

All colors must be in CMYK format: no RgBs, pantones, or spot colors. Any ads with noncompliant colors will be converted to CMYK, and color accuracy cannot be guaranteed.

thin lines, fine serifs, and medium to small type should be restricted to one color and not reversed. As a guideline, reverse type and line art should not be less than .007” (equivalent to a 1/2 pt. rule) at the thinnest part of a character or rule.

Rich blacks should not exceed 280% and 100% is recommended for the black channel. using 4-color black type on small type is not recommended.
