DIRECTIONS

Tools: mixing glass, strainer,bar spoonGlass: snifterGarnish: Aztec chocolate and black walnut aromatic “steam” **

DIRECTIONS

Pour all ingredients into mixing glass. Stir with ice. Strain into snifter. Top off with aromatic “steam.” Recover.

*Homemade Orange Blossom Water Shrub:1 cup apple cider vinegar2 cups granulated sugar1 whole orange cut into pieces2 oz. orange blossom waterBring apple cider vinegar and orange pieces to a boil. Add sugar and orange blossom water, and simmer on low heat for 15 minutes. Strain and cool.

**Aromatic “Steam”:Combine ½ oz. black walnut bitters and ½ oz. Aztec chocolate bitters with 2 oz. hot water. Pour liquids into mixer with dry ice. Let “steam” build.

**Cake Frosting Washed Copper & KingsFloodwall Apple Brandy:250g Miss Jones Organic Cake Frosting750mL Copper & Kings Floodwall American Apple Brandy

Melt cake frosting in a pot on a low heat. Add brandy and blend thoroughly every 15 minutes for one hour. Let rest for 30 minutes and place in freezer overnight. Strain through chinois, then coffee filter. Bottle and refrigerate.

DIRECTIONS

Combine all ingredients except seltzer in shaking tin, add ice and reverse mime shake. Add seltzer to glass, pour cocktail into glass, and garnish.

*Chicha Morada Syrup:Macerate the ingredients below for five minutes, then strain through chinois.250g pineapple juice5g Butterfly Blue Pea Flower

Combine below ingredients in a pot and bring to a boil. Reduce to medium heat, simmer for 10 minutes, turn off heat, rest for 10 minutes and strain through chinois.600g filtered water100g purple corn kernels20g cassia cinnamon3g allspice2g clove

Whisk 500g of granulated sugar into the tea until dissolved, then whisk in pineapple juice. Bottle and refrigerate.

DIRECTIONS

Add all ingredients to mixing glass. Add ice and stir. Strain into chilled Nick and Nora glass. Garnish with lime twist.

*Butterfly Pea Flower Infused Copper & Kings:6 oz. Butterfly Pea Flower Tea1 bottle Copper & Kings Un-Aged Apple BrandyCombine ingredients and agitate for 30 seconds to a minute; until you achieve desired color. Strain solids through a coffee filter or cheesecloths.

**Blueberry Syrup:8 oz. fresh blueberries8 oz. water 8 oz. cane sugarCombine ingredients in saucepan. Bring to a boil. Reduce to a simmer, stirring until sugar is dissolved.

Tools: mixing glass, strainer,bar spoonGlass: tumblerGarnish: Lapsang cigarette

DIRECTIONS

Combine all liquid ingredients in a chilled mixing glass. Pour ice into mixing glass. Give thirty-forty rotations with a bar spoon, until the cocktail is sufficiently diluted. Strain chilled cocktail into a tumbler with a julep strainer. Add one oversized ice cube. Garnish with a Lapsang cigarette--attach with a roach clip.

*Lapsang tea-infused Immature Brandy:Add one tablespoon of Lapsang (smoky, black tea) to eight ounces of Copper & Kings Immature Brandy. Let sit for twelve hours, and double strain into container/bottle.

1 ¼ oz. Copper & KingsFloodwall Apple Brandy1 oz. fresh squeezed lemon juice½ oz. rye whiskey½ oz. Licor 43¾ oz. molasses syrup*5 dashes of apple pie tincture**

Tools: shaker tin, strainerGlass: cocktail glassGarnish: bruleed cinnamon sugar apple slice

DIRECTIONS

Add all liquid ingredients into a shaker tin. Shake vigorously. Fine strain cocktail into a chilled coupe glass. Garnish with a bruleed cinnamon sugar apple slice.

*Molasses Syrup:Build like a 1:1 part simple syrup.Take 1 cup water. Bring to a boil. Add 1 cup dark brown molasses unrefined cane sugar. Dissolve. Remove from heat and cool. Store in cooler.

**Apple Pie Tincture:Take one piece of freshly made apple pie. Put pie in airtight container and add 1 cup of white whiskey. Put in cooler for 3 days. Strain with a piece of cheesecloth removing all of the pie. Put remaining liquid in dropper bottle.

DIRECTIONS

Build in a mixing glass and add ice, stir and strain in to a chilled coupe. Garnish with a luxardo cherry skewered with a gold flake-encrusted bamboo pick.

*Peach Picon:Mix 2 parts Ramazzotti with 1 part peach tincture and⅓ part G.E. Massenez Crème de Peche(Note: To make peach tincture fill a mason jar with whole dried peaches and cover with Copper & Kings Un-Aged Apple Brandy, age for at least 48 hours.)

INGREDIENTS1 ½ oz. Copper & Kings Immature Brandy1 oz. Copper & Kings Un-Aged Apple Brandy1 bar spoon Copper & Kings Absinthe Blanche¾ oz. fresh squeezed orange juice½ oz. housemade Rosemary Mandarin Syrup*

Tools: shaker tin, strainerGlass: cocktail glassGarnish: housemade Crème de Violette foam**

*Rosemary Mandarin Syrup: Steep 5-6 rosemary stalks in 3 cups water for about 15 minutes. Remove and add 3 cups plain white sugar to the hot water and dissolve into a 1:1 ratio simple syrup. Peel oranges (as little pith as possible) about 6 cups worth of orange skins. Once rosemary syrup is cooled add orange skins. Cover skins completely with syrup and let sit covered overnight. Remove skins and any small particles. Transfer to a pour bottle. Keep refrigerated.

DIRECTIONS

Combine ingredients in a mixing glass. In a 5 oz. coupe, fill half way with house made Crème de Violette foam using a wider flower tip. After shaking previous ingredients, fine strain gently

into the coupe between the glass and foam.

**Crème de Violette Foam: Bloom one (1) 200 bloom gelatin sheet in ice water. This takes about 15 minutes. While the gelatin is blooming, mix 3 oz. of fresh lemon juice with 4 oz. of 1:1 simple syrup in a small pot. In a separate container whisk 4 oz. egg whites (pasteurized works as well) with 3 oz. Rothman & Winter Crème de Violette set aside. Once gelatin sheet has bloomed add to pot with lemon juice and simple syrup and heat just until it is dissolved. DO NOT OVERHEAT. Cool gelatin mixture completely. Combine all ingredients. Add to a half pint iSi Cream Whipper and charge with N

20 cartridge. Shake 5-6

times and charge once more. Refrigerate foam for at least 3 hours.

DIRECTIONS

Combine all ingredients in a warm mixing vessel, ignite and pour back and forth 5-7 times. Extinguish and pour into a coupe glass. Garnish with apple fan.

*Gastrique: Combine 200g of Orange blossom honey and 25g of Copper & Kings Floodwall Apple Brandy. Over medium heat reduce and caramelize until the mixture is noticeably darker, about 5 minutes. Add 100g of Apple Cider vinegar and 6 fresh blackberries and reduce for another 3 minutes. Remove from heat and allow it to cool, once cool strain and bottle.

DIRECTIONS

Combine ingredients in shaker tin with ice. Shake & strain into old fashioned glass with fresh ice. Garnish with flamed orange peel.

*Drunken Pineapple Compote:1 whole pineapple chopped into chunks and infused with plantation 5 year rum for 24 hours. Mash the chunks and mix with equal parts Campari, sugar and ½ part water. Cook until alcohol has burned off. Fine strain the pineapple from the mixture. (Pine mash can be repurposed as a jam)

Combine absinthe, brandy, infused agave, lemon juice, and heavy cream in mixing tin over ice. Shake vigorously. Strain contents into smaller half of mixing tin. Add 1 egg white to the mix and dry shake once more. Pour contents into high ball glass. Top with 2 oz. of sparkling apple cider. Garnish with a star of anise pod.

DIRECTIONS

Pour ingredients into a shaker tin with ice and whip. After 15 seconds, strain ice out and add egg white. Reverse dry shake for 1 minute and pour the contents into a chilled coupe glass. Grate nutmeg on top of foam for garnish.

DIRECTIONS

Combine ingredients in shaker tin, add ice, shake. Pour into chilled cocktail glass, garnish with a sprig of fresh lavender.

Rosé Vermouth:Steep 1 lb. fresh, hulled strawberries in 2.5 cups of Copper & Kings Immature Brandy for 2 days. Strain. Caramelize 3 cups of sugar and cool. Add strawberry, brandy, heat, cool.

In second pot, combine 3 cups Spanish garnacha rosé wine with fresh rosemary, sage, oregano and thyme, ¼ tsp Chinese ground ginger, along with dried wormwood, gentian, and powdered ginger. Boil for ten minutes, cool. Add one cup ruby port.

Tools: mixing glass, strainerGlass: cocktail glassGarnish: orange twist

DIRECTIONS

In one shaker combine all ingredients expect for egg white and verjus. Shake, 2x strain into coupe.

In second shaker combine egg white and verjus. Shake well, float on top in coupe.

Garnish with violet flowers and lime zest.

DIRECTIONS

Stir all ingredients with ice in mixing glass until proper dilution occurs.

Single strain into a chilled cocktail glass.

Garnish with an orange twist wrapped around the stem of the glass.

DIRECTIONS

In a cocktail shaker, add all ingredients shake with ice. Double strain into Collins glass filled with ice and garnish with sage leaf.

Simple Syrup:In a pot add 2 cups sugar to 1 cup water. Bring to medium heat and stir until sugar is dissolved.
