Pavilion will be closed for judging until 10.30 am Thursday. Stewards will be in attendance to receive exhibits. All exhibits of Farm Produce and Fruit and Vegetables in

Regulations - Cookery and Preserves 1. No portion of a collection can compete as a single exhibit. 2. Unless otherwise specified collections to consist of 3, one of each kind. 3. Delivery of preserves, bottled fruits must be made to the Stewards in the pavilion on Tuesday 15th October or prior to 9am on Wednesday 16th October. 4. Exhibits forwarded to the Secretary will be returned by the same route as forwarded. 5. All lids must be loosened on preserves and jam jars (NOT Bottled Fruits) 6. Exhibitors may enter more than one entry in each class. 7. Delivery of cookery exhibits: All exhibits in Cookery Section must be delivered to the stewards at the pavilion before 12 noon on Wednesday 16th October. No late entries accepted. 8. Collection of Preserves/Cookery exhibits from pavilion: The pavilion will open from 9am to 11am on Sunday 20th October for the collection of the exhibits. Any exhibits not collected on the Sunday may be collected the next week during office hours from the Lismore Showground Office, Alexandra Parade, North Lismore. 9. Decorated cakes: Must be delivered to Stewards on Tuesday 15th October from 9am to 10am and may be collected from the pavilion on Sunday 20th October from 9am - 11am.

DECORATED CAKES Fondant Icing only

Entry fee:Free

No entry accepted if more than 6 months old. Hand work only. No cake will be cut. Dummy bases may be used. Small vase and manufactured pillars may be used on wedding cakes. Tulle, ribbon, wire and stamens are permitted. Natural

dried, fine stems may be used with restraint with floral sprays. Glue must not be used on sugar work in any class. Edible foods, e.g. sugar, coconut etc may be used as part of the presentation.

Cleats must be attached to all base boards. A tiered cake is one or two or more levels (not necessarily above one another) linked by a common base. Board size is limited to 40cm on the display side.

AGRICULTURAL SOCIETIES COUNCIL RICH FRUIT CAKE COMPETITION RECIPE The following recipe is compulsory for all entrants (see Class 6286)

Winner must be prepared to bake second Rich Fruit Cake for the regional final prior to the end of the year and that the regional winner must bake a third Rich Fruit Cake to forward to Sydney

INGREDIENTS 250g (8oz) sultanas 250g (8 oz) chopped raisins 250g (8oz) currants 125g (4oz) chopped mixed peel 90g (3oz) chopped red glace cherries 90g (3oz) chopped blanched almonds 1/3 cup sherry or brandy 250g (8oz) plain Flour 60g (2oz) self Raising Flour ½ teaspoon ground ginger

1/2 teaspoon ground cloves 250 g (8oz) butter 250 g (8 oz) soft brown sugar ½ teaspoon lemon essence or finely grated lemon rind ½ teaspoon almond essence ½ teaspoon vanilla essence ¼ teaspoon grated nutmeg 4 large eggs

METHOD Mix together all fruits and nuts and sprinkle with sherry or brandy. Cover and leave at least 1 hour, but preferably overnight. Sift together the flours and spices. Cream together the butter and sugar with the essences. Add the eggs one at a time, beating well after each addition, then alternately add the fruit and flour mixtures, mix thoroughly. The mixture should be stiff enough to support a wooden spoon. Place the mixture into a prepared tin, no larger than 20cm (8") and bake in a slow oven for approximately 3 1/2 to 4 hours. Allow the cake to cool in the tin. NOTE To ensure uniformity and depending upon the size, it is suggested the raisins be snipped into 2 or 3 pieces, cherries into 4 to 6 pieces and almonds crosswise into 3 or 4 pieces. 1. All work must be original and have been executed by the exhibitor unaided, within the past two years and not have previously won a prize in any Exhibition. No more than four (4) entries per person/per section 2. Any art work entered must be for sale, a commission of 20% from the indicated price of the exhibit will be deducted by the Society. 3. Judging is Wednesday 16th October 2013 at 9am. The decision of the Judges shall be final. The Committee reserves the right to cancel any section if there are less than 5 entries. The individual art work will be allocated to the next appropriate section. If a dispute arises not covered by the conditions of entry, the decision of the Committee will be final. 4. Artwork may be forwarded by post, rail or otherwise and will be returned by similar route to that forwarded at the exhibitor's expense. 2013 Celebrating Local Life SCHOOLS COMPETITION & EXHIBIT

Collection of Exhibits: Monday 21st & Tuesday 22nd October In 2013 the Lismore Show Society is introducing a new initiative to celebrate Local Life with competition’s based on the local area, sustainability and farming with an opportunity for students to showcase their knowledge of the Northern Rivers Region. What is the Schools Exhibit? A competition devoted to School Students throughout the Northern Rivers designed to encourage students to compete in their local Show to showcase their school and knowledge. How do you enter?

1. Each school or class submits an Entry Form and payment for the entry fees. Mailed to: North Coast National A&I Society Inc

2. Each entrant will receive a letter and adhesive labels for submission of entries by the closing date.

Please attach the labels to the front of each exhibit.

3. Each school submits the labelled students’ exhibits with the completed form.

The entry fee is $10 per school. This fee covers any number of entries in any of the Schools Exhibits category

Entry fees are payable by cheque to North Coast National A&I Society Inc All entry fees include GST and NCN will issue a Tax Invoice/Receipt for all payments

How is the work judged and exhibited?

Suitably qualified experts judge all exhibits before the commencement of the North Coast National Exhibition

Results will be displayed for the duration of the Exhibition All judging decisions are final and are not subject to appeal or protest

How do you deliver and collect exhibits?

Exhibits may be delivered to the Secretary’s Office at the Lismore Showgrounds, Alexandra Parade North Lismore between 8am to 6pm Wednesday 9th & Thursday 10th October

Exhibits may be collected from the Secretary’s Office on Monday 21st & Tuesday 22nd October between 9am to 4.30pm
