OUR HOME
The Adelaide Hills ´
HISTORY
Mount Lofty – the highest point in the Adelaide Hills – was named by Matthew Flinders when he circumnavigated the coastline of Australia in 1802. Settlers to the area soon followed from England, Scotland, Wales, Ireland and Germany and many established villages such as Stirling, Crafers and
Bridgewater. The cool, green park-like environment of the hills reminded them of home.
Arthur Hardy later planted the first vineyards in the Adelaide Hills right here at Mount Lofty House with Red Madeira. From there the Adelaide Hills Wine Region was born.
Jump forward to the 1970s and 1980s and enter a new group of pioneers including Brian Croser (Petaluma), Stephen George (Ashton Hills), Michael Hill Smith, Martin Shaw (Shaw & Smith) and
Geoff Weaver. Over the next 30 years the region became known for its premium, cool-climate wines.
More recently, it has become a mecca for small artisan winemakers keen to produce elegant, long lasting European style wines and push the boundaries to new heights. The Basket Range kinfolk certainly pushes these frontiers with a range of styles offering elegant, fresh wines from organic
provenance made with native yeasts and minimum sulphites. These are wines of terroir reflecting the natural site of the vineyard and capturing the essence of the Hills.
Head south to Gumeracha, Ashton and into Piccadilly Valley and you’ll meet Chardonnay fanatics and pinot-philes alike. Nebbiolo from Gumeracha is not to be dismissed either, but leap to the
opposite end at Macclesfield and you’ll not only discover this grape in abundance surrounded by brilliant Shiraz. Last but not least, Méthode Traditionelle Sparkling and Pétillant Naturel (Petnat)are
truly alive and well throughout these hills.
Quite simply, our wine-folk are a passionate breed that hone their skills to achieve the very best that the Adelaide Hills has to offer, and we are proud to call this place home.
PHILOSOPHY
The natural cellar underneath our restaurant is home to some cult wines from the great vintages of South Australia, Australia and the European classics. We also have an extensive selection of some
of the most interesting alternate varieties. Even if we live and breathe local, when it comes to wine, we strongly believe in diversity, therefore
we curate our list to support our growers, winemakers and suppliers from across Australia who work tirelessly to provide sommeliers with wines that are a narrative to the global landscape in which we
are evolving.
A winelist is, foremost, a story telling of all the various geographic viticultural regions; it reflects the Head Sommelier’s vision to capture the essence of her passion for the industry and an essential tool
to pair with the fine South Australian cuisine thoughtfully crafted by our Executive Head Chef, Jin Choi. It is home to a growing representation of some cellared and museum wines that we want to
see age beautifully over the years. The list is a book in progress of human stories, travels and experiences. We invite you to embark on a journey that will
inspire you to taste and travel.

Our house sparkling, a Méthode Traditionelle Sparkling Wine by Taras Ochota made exclusively from Pinot Noir & Chardonnay grown here on the Estate. Named after the magnificent Californian Redwood trees planted here by the Hardy Family in the 1850s.
2019 The Other Right Bright Young Pink Pétillant Naturel Pinot Noir, Adelaide Hills SA 19
If you haven’t experienced a Petnat yet (short for Pétillant Naturel), then this is your chance as The Other Right is, by far, one of the best in the country. Rightly said, this fizzy pink is off dry but still carries tart acidity. Think of it like eating crunchy strawberries in season. Think of it like a red berry sorbet; it is super chilled, it is sweet-ish and you will want to drink plenty of it.

Brave New Wine is a brave new way of crafting wines in a brave new world. The reason we want to showcase a Riesling other than Clare Valley is because we believe, there are other regions making astonishingly complex Rieslings in Australia. There is no reason to keep speaking the same discourse. Let’s be brave Adelaide and drink a Rizza from Western Australia. Expect super-charged acidity but textures that envelop and crack in the palate like a lemon meringue.

FRIDA 22 Painter, Frida Kahlo, was a Mexican self-portrait artist who was married to Diego Rivera and is still admired as a feminist icon. Two paintings emerged in 1939 'The Suicide of Dorothy Hale' and 'The Two Fridas'. This cocktail is believed to represent “unloved” and “loved” versions of Kahlo. Pisco, fresh lime, pomegranate syrup, and orange bitters.

Tōji Sake
Melbourne based founders Yuta and Shar Kobayashi, Tōji Sake is the embodiment and love of all things Japanese. Born in Japan, Yuta fondly recalls time with his Ojiichan (grandfather) in Ibaraki. With his daily ritual of enjoying an afternoon glass of sake, Yuta’s grandfather passed on an appreciation for the timeless virtues of sake, born of tradition and refined over centuries. As a symbol synonymous with Japan, the brewing of sake is held to exacting standards to protect its quality and integrity. Every drop of Tōji Sake has been handcrafted using traditional techniques, with their Tōji (Brewmaster) bringing over 40 years of experience. Tōji selects only the finest ingredients and brewed in the Niigata Prefecture – an area of Japan synonymous with high quality sake. The pristine waters of the Asahi mountain range, coupled with premium rice combine in perfect harmony to create a crisp, well-balanced sake. This is the proper Lambrusco! Not a sparkling sweet red at all, but a dry and delicious, vibrant wine that opens with enticing scents of wild red berry, yellow stone fruit, citrus blossom and a yeasty, comforting whiff of pastry dough. Made by carrying out the secondary fermentation in the bottle, the dry, delicious palate delivers pink grapefruit, crushed strawberry and tangerine alongside crisp acidity and a saline note.

SPARKLING CHAMPAGNE France’s most celebrated and celebratory wine region - whose very name is a synonym for the good life is undergoing a renaissance. Once completely dominated by large houses - the Grandes Marques - it is enjoying an explosion in the number of independent grower producers who are challenging the status quo and re-defining what Champagne is. Rather than sell their fruit to the Grand Marques, they are electing to make their own distinctive and regionally expressive Champagne. Grower Champagne. A now established and flourishing idiom for the Old World – slick new labels and progressive minds. Pierre Paillard works with regenerative farming in some grands crus sites in Bouzy, and his signature is also a very low dosage to capture the essence of the place. Les Parcelles is from base vintage 2014, composed of 60% Pinot Noir and 40% Chardonnay from 22 different vineyards with 1/3 reserve wine, it has a youthful demeanour at this stage, so if you like a bright and lively sparkling, you are set to enjoy Les Parcelles thoroughly. The richness is well balanced by tart nectarines, quince and a lick of white chocolate. With an inviting nose of granny smith apple and white flowers, this energetic wine will tempt you with a fine mousse of beads that are woven tightly and charming nuances of citrussy freshness, wet rocks and honeyed waxy textures.

One of the original grand marques, Ayala was founded in 1860 by Spanish aristocrat Edmond d’Ayala. Ayala is often described as ‘feminine’ in style. This is due to a higher percentage of Chardonnay in the blends; the purity that low dosage brings and fermentation in stainless steel tanks to retain freshness and pristine characters. Ayala has an enviable supply of Grand and Premier Cru fruit with an extremely high rating on the echelle de crus. Interestingly, Ayala’s haute couture dry blends are crafted by one of the few female cellar masters in Champagne, Caroline Latrive.

LOIRE VALLEY CHENIN BLANC Our Obsession
There is no other white grape variety that gives us as much excitement as Chenin Blanc does. The greatness of this grape comes from its versatility, its purity and its ability to express different terroirs with incisive precision. It is also one of the most age worthy whites, with a flavour profile that will grow in complexity with time. Some of the most striking elements of this godsend grape is its natural acidity and intense minerality. We often think of Chablis or Riesling from the Mosel when we talk of minerality, and Chenin Blanc sits amongst the same royalty when it is
grown in some of the greatest terroirs. When Chenin Blanc is grown on chalky and steep rocky soils such as silex, it makes a flinty wine with more vertical
and mineral depth. The energy and purity of these wines are undoubtedly some of their most unique qualities. When it grows on clay and limestone, the wine tends to have a more rounder fruit driven appeal with some acaçia and
ripe orchard fruits, giving it more richness and mouthfeel. Between the two expressions, there are 50 shades of minerality, fruit intensity and power combined, and together with

DOMAINE DE BELLIVIERE Touraine
We were lucky to visit this domaine in June 2019. Meeting Eric and Christine Nicolas and tasting through the whites and reds was a moment to cherish. They are both incredibly humble, yet highly intellectual and very intricate with the
work they carry in the vineyards. Domaine de Bellivière works with two appellations in the Touraine sub-region of the Loire Valley in the most northern parts viticultural areas in Western France. Both appellations have clay/limestone soils, with Jasnières having a warmer
more humid climate, hence making wines that are softer than Coteaux du Loir. Every year, the wines change and reflect the vintage. Some cuvées might have more residual sugar or higher acidity
than previous years. Do not be scared by the RS (residual sugar) as the acidity in these wines are huge and balances out the sugars.

"Autrement" means ‘the other way’ and it is Fabrice Dodane's modern take on Savagnin. The wine is made ouillée or "topped-up" for a less oxidative (traditional) expression of the variety. The style may be considered modern, but the aromas are classic Jura: crushed seashells and toasted walnuts give way to bright notes of freshly cut apple and lemon peel on the nose. The palate is laser-like yet dense with tightly woven mineral acidity that cuts through the rich flavors of walnut oil and lemon curd. The finish is persistent and deliciously salty.

Since we first explored the wines of the Savoie, we were transported immediately to the freshness of the alps, the mountain air. The purity expressed in the wines is striking and will seduce you without a doubt.
Domaine des Ardoisières is the reference when it comes to Savoie. Since founded in 1998, these wines have reached cult status. Terroir driven, these wines aren’t masked by new oak, they are a true expression of the place, the soils and the variety. The vines sit on impossibly steep, terraced slopes from incredibly remote vineyards at the foot of the Mont
Blanc and the conditions in which they are grown and harvested are pretty extreme, hence giving birth to extraordinary wines.
For the first time this year, Domaine des Ardoisièreshasarrived on the Australian shore, and we are one of the few lucky ones to have an allocation. This is an exceptional producer out of a burgeoning region. I think it sits between
Grand Cru Chablis and Hermitage Blanc.

Not only are the grapes ripe but they are also affected by Botrytis. Botrytis is a noble rot that is desirable to make the great sweet wines of Sauternes, and the sweeter Rieslings of Mosel.
It is a risky business letting your grapes be affected by Noble Rot in this area as there is also a high risk of Grey Rot (not good), but Sebastien’s arduous work in the vineyards to promote health of soils and diversity helps keep the Grey Rot at bay. He then ferments the Botrytis affected must into a dry wine.
Inspite of the richness and complexities from the Botrytis, the wines have remarkable acid and is balanced by chalkiness. The balance is incredible and only a master can achieve such precision. The Auksnis Macération is by far one of my favourite amber wines. There are plenty of dried orchard fruits, floral honeycomb and nutty creaminess.

Did you know that you if you like a light red, chances are you can also enjoy varieties like Shiraz? How? Well, style of winemaking plays a vital role and varietal qualities can be expressed within a multitude of flavour profiles. The producer can choose to pick the grapes early, macerate a thick-skinned grape like Cabernet for instance, for a much shorter time than conventional examples, and choose not to age in new oak barrels, but use carbonic maceration instead to really bring out the pretty fruit flavours. Basically, any grape varieties can make a light wine. This is why the weight and expression of a wine should not be measured by its grape variety alone, but also by the technique of winemaking and provenance. Some Chardonnays are lean and mean, others are buttery and oaky.

Fer Servadou is very unique in its expression of blood orange and iron on the nose with uplifting notes of peppercorn and tomato leaf and tannins reminiscent of cranberry tea. It has a botanical twist to it, fern like notes with some smoke, earth and spice. An exotic wine, quite captivating indeed.

Applejack Vineyard is located in the Upper Yarra Valley, to the south-east of the traditional valley floor. The vineyard is located on a dramatic, north-east facing slope with closely planted vines. The wine is acid-driven, light and fragrant in style and has a sense of sleekness from fine pinot tannins.

CABERNET SAUVIGNON & BLENDS FRANCE – THE GREAT BORDEAUX REDS Emperor Napoleon III requested a classification system for France's best Bordeaux wines in 1855 to be on display for visitors from around the world. The result was the Bordeaux Wine Official Classification of 1855 when Brokers from the wine industry ranked the wines according to a château's reputation and trading price, which at that time was directly related to quality. Today producers are still ranked in importance from first to fifth growths (crus).
