• 4 slices bacon• 1 1/2 pounds beef stew meat• 1 onion, chopped• 2 cups frozen mixed

vegetables• 1 jar Heinz HomeStyle Beef

Gravy (12 ounces)• 1 cup lower sodium beef

broth• 1 packet brown gravy mix

(1.6 ounces)• 1/4 cup sour cream• 1 tablespoon prepared

horseradish• 1 teaspoon Lea & Perrins

Worcestershire sauce

PREPARATION:1. Preheat oven to 350°F.

Lightly spray a shallow 9 x 13-inch baking dish with cooking spray; set aside.

2. Fry bacon in a large skillet over medium heat until browned, but not crispy. Remove bacon with slotted spoon to plate lined with paper towels. Drain all but 2 tablespoons of fat from pan. Add stew meat and brown on all sides. Add onions and sauté for 2 minutes more. Stir in vegetables, cooked bacon, gravy, broth and gravy mix. Bring to a boil and reduce to simmer for 1 minute. Transfer to prepared baking dish and set aside.

3. Prepare mashed potatoes according to package directions. Stir remaining ingredients into prepared mashed potatoes and distribute evenly over stew mixture. Bake in preheated oven for 30 to 40 minutes or until hot and bubbly.

4. Serve hot.

Located in the beautiful Caswell Park area, the O’Connor Senior Center (Center) is the focal point for senior adults in Knox County. The extensive calendar of programs and special activities has something for everyone whether it is attending a health and fitness program, a structured recreation program, continued learning lecture, or renewing friendships while making new friends.

The Center is a component of the Knoxville-Knox County Community Action Committee’s Office on Aging and serves all Knox County residents’ ages 50 years and over. Center staff invites you to visit the Center and become involved as a participant or as a volunteer. The current calendar and newsletter can be viewed on-line at www.knoxseniors.org.

• Put on your dancing shoes for special evenings of ballroom dances. Dances are held on Friday nights except for the second Saturday of the month when the dance is on Saturday. Dances feature a live band and the Saturday Night Dance is a theme dance with refreshments.

• Love to hike? Join the O’Connor Happy Hikers for planned hikes throughout the area. Hikers leave from the center or meet at the trailhead and information about the hikes is available at the Center.
