Nettles
Collect just the tips of nettles in spring and early summer before they go to seed. Good for adding to soups, stews and making
pesto. The sting goes away once cooked
Cleavers (Sticky weed)
Collect the tips before they grow too big and woods.
Strange texture but subtle taste. Eat raw finely chopped in salads or
cooked.
Hedge garlic (Jack in the hedge)
Fast growing alternative to wild garlic. Grows
anywhere and spreads well. Leaves have a garlic/ mustard taste and can be quite strong. Eat raw in
salads or cooked.
Chickweed
Quick growing weed, eat the shoots young in
spring or early summer. Packed with vitamins. Best eaten
raw or lightly cooked.
