Lasagna Roll-Ups 1/2 (1-lb.) box lasagna noodles

1 tbsp. extra virgin olive oil

1/2 large onion, chopped

3 cloves garlic, minced

1/2 tsp. red pepper flakes

10 oz. baby spinach

1 tsp. lemon zest

2 c. ricotta

1 large egg

1 c. grated Parmesan

1 c. marinara

2 c. Mozzarella

1. Preheat oven to 350º. Bring a large pot of salted boiling water to a boil and cook lasagna noodles until al dente. Drain.

2. In a large skillet over medium heat, heat oil. Add onion and garlic and season with salt, pepper, and red pepper flakes. Cook until onions are soft, about 5 minutes. Add spinach and cook until wilted. Stir in lemon zest and remove from heat.

3. In a large bowl, stir ricotta, egg, and 1/2 cup Parmesan until combined then season with salt and pepper.

4. Spread ricotta mixture onto one side of each lasagna noodle. Top with marinara and cooked spinach, then sprinkle with mozzarella and roll up tightly.

5. In a large deep baking dish, spoon a layer of marinara on bottom of dish. Add the roll-ups and spoon more sauce onto each roll-up. Sprinkle more mozzarella and Parmesan over each roll up. Bake until bubbly and melted, about 20 minutes. Garnish with parsley before serving.

Christmas Blondies 3/4 c. (1 1/2 sticks) butter

1 c. granulated sugar

1/2 c. packed brown sugar

2 large eggs

2 tsp. pure vanilla extract

2 c. all-purpose flour

3/4 tsp. baking powder

1/2 tsp. kosher salt

8 Oreos crushed

1/2 c. Christmas M&M's

1/2 c. semisweet chocolate chips

1. Preheat oven to 350° and grease a 9”-x-9” pan with cooking spray. In a large bowl using a hand mixer, beat softened butter and both sugars until light and fluffy. Add eggs and vanilla and beat until combined.

2. In another bowl, whisk together flour, baking powder, and salt. Add dry ingredients to wet ingredients and beat until just combined. Fold in Oreos, M&M’S, and chocolate chips.

3. Press batter into prepared pan and bake until golden and still slightly soft in the middle, 25 to 30 minutes.

4. Let cool completely before slicing into squares

1. Preheat oven to 375°. In a large ovenproof skillet, toss apples with 2 ta-blespoons sugar, lemon juice, water, and cinnamon. Place skillet on a large rimmed baking dish. In another bowl, whisk together flour, baking pow-der, and salt. Add dry ingredients to wet ingredients and beat until just combined. Fold in Oreos, M&M’S, and chocolate chips.

2. In a large bowl, whisk together flour, brown sugar, remaining 1/4 cup sugar, and salt. Using a pastry cutter (or your hands), incorporate butter into flour mixture until it resembles coarse crumbs. Add oats and squeeze mixture with your hands until big, moist clumps form.

3. Scatter oat mixture on top of apples and bake until apples are bubbling and topping is golden, about 45 minutes. Let cool 10 minutes before serving with Breyer’s Natural Vanilla Ice Cream.
