Once a year, the cricket team of Eton (a very posh English school) plays against another very posh English school : Harrow. After the match, the usual dessert is Eton Mess. Yes, my dear!. The presentation looks like a mess but it’s super yummy!

You will need:

Raspberries (125 g) Cream (60cl) Strawberries (500 g)

Meringue (150 g) Icing sugar (2 tablespoons) Sugar (2 tablespoons)

Wash the strawberries and the raspberries.

Dice the strawberries

Add 2 tablespoons of sugar on the diced fruit, mix and reserve the time to prepare the rest

Crush the meringue into pieces

Whisk the cream. When it starts to rise, add the icing sugar and finish to beat until the cream is whipped.

You can also use a siphon to do the whipped cream

Divide this preparation into glasses or small bowls.
