The number of fire smiths is decreasing very much and getting old. We are concerned about that these knives will be lost from Japan in the near future. Actually these knives would rust easily and the finish might be rough.On the other hand, they do cut very well, and remind us “Good old days of Japan”.

Even if your knives were very high quality ones, they do not always ensure their real sharpness unless you maintain them each use properly. In order to exert their best performance, sharpening is very important and indispensable.

As you familiarize yourself with sharpening, you may begin to change the bevel based on your needs. Edge angle will be different from knife types. The edge angle will be decided depending on your purpose. If the edge is sharpened too flat, it becomes fragile and will not cut smoothly. A curve edge is desirable.

Whetstone Grit Purpose

#120 - #220 Rough Sharpening

#600 - #1500 Middle Sharpening

#2000 - #5000 Finishing Sharpening

(1)First step, using the rough whetstone to adjust the overall balance of your kitchen knives. Sharpen the edge on both side at same angle.(IMAGE-2 & 3) During sharpening, burrs will be appeared on the edge.(2)Next, when the burrs are appeared on the edge, the rough whetstone should be changed to Mid-sharpening whetstone to remove the burrs and finish out. (3)Repeat the same action as you did at the first step. When the burrs are taken off from the edge gradually, stand the blade a little bit, and releasepressing force a little. Keep same movement which is sharpening until the burrs are eliminated completely on both side.

If you need finer edge, use more detail whetstone such as #2000~#5000.

Angle the knife to establish the cutting edge. A 10º-20º angle is suggested. A smaller angle will make a sharper, but weaker cutting edge.

Double Beveled Edge

There are two kinds of whetstone regarding to soaking in water or not before use. One of them is needed to be soaked for a while before use. (KC-651 & KC-652)The other one requires only a little water when you use. (KC-656, KC-657 & KC-658)Please refer to appropriate caution for your whetstone before use.

Put the whetstone on a wet cloth or a base (stone holder)to stabilize during sharpening.(IMAGE-1)Whetstones can be fragile and should never be over-soaked. Over-soaking will decrease the stone’s quality and make sharpening more difficult. After sharpening, wipe clean and dry out. It is preferable to store stones in a dry towel to avoid cracking or separation.

“NIDANBA”  二段刃 A special knife called “Nidanba” is made for cutting eels or loaches. Its tip is designed with a deep angle, although some may have a slight variance, the most standard angle is 45 degrees. (IMAGE-7)Holding the “Nidanba” knives with the right hand is the same as with regular knives, but holding it with the left hand is different.

Place the left thumb on the inner side of the blade. Then firmly place the index finger, middle finger, and ring finger firmly on the top of the blade, making sure not to bend your finger tips. (IMAGE-8) If the edge of the blade is thick, its sharpness easily becomes dull, so grinding off the body of the edge is crucial.

How to hold the handle of your kitchen knife looks simple, but if you do it incorrectly it will not sharpen well. HOW TO HOLD YOUR KNIFE WITH YOUR RIGHT HANDPosition your index finger on the top of the blade and your thumb on the surface of the blade. When sharpening the heel of the blade, maintain the same position while sliding the blade back toward the handle. To sharpen the reverse side of the blade, place your index finger on the surface of the blade and your thumb on the top of the blade. (IMAGE-4-5) HOW TO HOLD YOUR KNIFE WITH YOUR LEFT HANDPay attention to the position change of the right index finger when you sharpen the heel of the blade or smaller objects.Make sure that your finger tips are lined up and straight.How to hold your knife with your left hand is extremely important. Line up your index finger, middle finger, and ring finger placing them on the side of the blade so they are fixed in the middle of the whetstone. The edge of the blade slides back and forth while your left hand maintains the same position. (IMAGE-4-5)

SHARPENING(1)First step, using the rough whetstone to adjust the total shape of the Blade. Sharpen the section between SHINOGI and HASAKI (edge) on the front of the blade evenly. (IMAGE-4) (2)Sharpen the back of the blade as well. (IMAGE-5)For the back side, use a flat whetstone and sharpen the tip about 1 mm like the drawing. (IMAGE-6) (3)Next, when the burrs are appeared on the edge, the rough whetstone should be changed to Mid-sharpening whetstone. When the roughness on the blade lessens, stand the blade a little bit gradually, and release pressing force a little to take off the burrs from the edge. (4)Keep sharpening until smooth. If you need finer (more detailed) edge, use the whetstone for finishing.

Yanagiba, Takobiki, Deba, Ai-Deba, Usuba, Kamagata-Usuba, Mukimono, Unagi-Saki and so on

Single-side blade Japanese knives are slightly bowed on the back for easy sharpening, called “Ura-Suki”. Make sure to sharpen remaining this shape. Sharpening too much on back will remove the shape. The range that should be sharpened on the back needs to increase up to 2 mm for knife using to slice tougher products.
